This hot wing recipe has an element of surprise. At first, you won't think they are all that spicy... but give them a minute as the heat creeps up to a low inferno in your mouth. If you love crispy hot wings, this is your recipe.

28 Wings, Drums & Flats
1/4 cup Olive Oil
2 tbsp Butter, Unsalted
1 clove Garlic, Minced
1/4 cup Chipotle Hot Sauce
1/4 tsp Cayenne Powder, To taste- more for super spice!
1/4 tsp Ground Cumin
1 pinch Kosher Salt
1 pinch Black Pepper
1/4 tsp Arrowroot Powder

Steps:

  • Melt the butter in a small pan over medium-high heat. Add the garlic and a pinch of salt. Cook, stirring consistently, for 1-2 minutes or until the garlic is very fragrant.
  • Pour the garlic and butter into a large sized mixing bowl. Add the remaining ingredients and whisk together well. Set aside until the wings are cooked.
  • In a large, heavy bottom saute pan, add the olive oil over high heat. When the oil shimmers, add in 1/2 of the wings. You don't want to crowd the pan. Let the wings cook for 1-2 minutes to get nice and crispy. Turn to brown on all sides. Remove from the pan and repeat with the other wings.
  • Once all the wings have been browned, add them all back into the pan over medium-high heat. Continue to cook for 10-12 minutes or until cooked through. The drums will take longer than the flats.
  • When the wings are cooked, add them to the large mixing bowl with the hot sauce. Using tongs, toss them lightly in the sauce to coat. Serve hot and happy eating!

This is a North Carolina-style BBQ sauce that I have used for years. It's great on any meat. Lots of vinegar - that's the North Carolina way! Be careful though, this one's spicy.

10 tablespoons ketchup
½ teaspoon cayenne pepper, or to taste
1 pinch red pepper flakes
1 tablespoon white sugar
½ cup water
1 pinch salt and black pepper to taste

Steps:

  • In a small saucepan over medium heat, stir together the vinegar, ketchup, cayenne pepper, red pepper flakes, sugar, and water.
  • Simmer for 15 minutes, or until all the sugar dissolves. Season to taste with salt and pepper. Remove from heat, and let cool. Use to baste your favorite meat while grilling.

1 1/2 cups butter (softened)
1/2 cup Tabasco sauce, plus
2 tablespoons Tabasco sauce
3 tablespoons brown sugar
3/4 teaspoon paprika

1 tablespoon balsamic vinegar
3/8 teaspoon cayenne pepper
2 tablespoons chili sauce
4 1/2-5 lbs chicken wings (cut into drumettes and flappers)
2 cups whole wheat flour
1 cup all-purpose flour
2 1/2 teaspoons salt
1 teaspoon paprika
1/4 teaspoon cayenne pepper

Steps:

  • For breading & frying.
  • In large mixing bowl mix flours, salt, paprika and cayenne pepper together, blend well. Cut chicken wings into drumettes and flappers. Wash and drain chicken. Coat chicken in flour mixture, refrigerate chicken wings for 90 minutes.
  • When ready to deep fry chicken wings heat oil to 375. Place chicken pieces in hot oil, do not crowd. Fry chicken wings until golden brown, remove from oil and drain. When all wings have been fried, place in a large bowl. Add Hot Sauce mixture and mix completely. Use a fork or tongs to place chicken pieces on a serving platter. Serve immediately and with lots of paper towels.
  • For sauce.
  • Melt butter over low, stir in the rest of the ingredients until dissolved. Pour in bowl over cooked chicken.

Make your own "fresher" version of wing sauce using simple ingredients. This recipe is customizable to suit individual tastes. You can make it mild or hot. You will arrive at a perfect balance - for you - and will really love the results! The quantities of ingredients listed are a guide and not an absolute. Vary amounts according to taste for each step, But start with the butter first!

6 -16 ounces Frank's red hot sauce (any vinegar-based Louisiana style red pepper sauce will work)
8 ounces butter (unsalted preferred, because you may want less salt in the mix)
1 tablespoon sugar
1 tablespoon salt
1/2 tablespoon garlic powder (not garlic salt)
1 dash Worcestershire sauce

Steps:

  • 1. Melt the butter in a 1 quart sauce pan. For 2 people, I generally use 2 sticks butter (8 oz) - melt the butter before adding anything else. This makes enough so you can coat the chicken while cooking and have some left over to dip with while eating.
  • 2. Now add your hot sauce. Try to use fresh sauce as old sauce might not result in a smooth mix. How much? I recommend starting with 40% of your butter amount. That would be "very mild". Stir it in well. Taste it. Is it not "hot" enough? Add some more until it's warm enough for you. If you make it too hot, then you'll be adding more butter.
  • 3. Add maybe 1 Tbsp sugar. This is only to offset the vinegar taste of the pepper sauce. If you can taste "sweet" then you added too much. All you are doing here is taking the edge off the vinegar. If you like the vinegar then don't add sugar. Remember, this is your custom made sauce.
  • 4. Now, add just enough salt to bring up the flavors of the pepper sauce. If you taste "salt" then you added too much. All you are doing is bringing up the flavors and are not wanting to make it taste salty.
  • 5. Lastly, add about 1/2 Tbsp garlic powder. Stir it all well. Taste it. Does it need a little more? You decide.
  • 6. add a dash - 4-6 drops Worcestershire sauce without concerning yourself on how to pronounce it.
  • You can now build you own "Buffalo style" sauce and use it on legs, wings etc. You can use Frank's, Texas Pete, or whatever. Your flavors and proportions will vary with which pepper sauce you use at the time. If you use a pre-made "wing" sauce, realize you will be using much less butter and will really be losing some cost and originality advantage.

2 cups melted butter
1/2 cup mango habanero sauce
8 tablespoons brown sugar
4 teaspoons chili powder
4 teaspoons garlic powder
4 teaspoons onion powder
4 teaspoons black pepper
4 teaspoons cayenne pepper
4 teaspoons seasoning salt
Canola oil, for frying
1 pound chicken wings
1 1/2 tablespoons seasoning salt

Steps:

  • For the wing sauce: Mix the hot sauce, butter, mango habanero sauce, brown sugar, chili powder, garlic powder, onion powder, black pepper, cayenne pepper and seasoning salt in a bowl. Stir vigorously until completely combined.
  • For the wings: Heat canola oil in a deep-fryer to 350 degrees F. Sprinkle the chicken wings with the seasoning salt. Fry the chicken wings in the heated oil until crispy, about 15 minutes.
  • Mix the wings in 1 cup of the wing sauce until well coated and serve.

1 1/2 tablespoons cajun seasoning
1/2 tablespoon cayenne pepper
3/4 tablespoon garlic powder
3 lbs chicken wings
peanut oil, for frying
1/2 cup salted butter, softened
1/2 cup hot sauce
1 cup sweet Asian chili sauce
1 tablespoon soy sauce

Steps:

  • Prepare the wings: Combine the hot sauce, Cajun seasoning, cayenne and garlic powder in a large bowl and mix well. Add the wings and toss. Cover and refrigerate 24 hours.
  • Heat about 2 inches of oil in a deep fryer or deep-sided pot until a deep-fry thermometer registers 350°. Remove the wings from the marinade and drain off excess moisture. Carefully add the wings to the hot oil in batches the oil may splatter) and cook until crisp, about 10 minutes.
  • Make the sauces: Whisk the butter and hot sauce in a bowl. Mix the chili sauce and soy sauce in another bowl. Serve with the wings.

2 garlic cloves (minced)
1 tablespoon flour
1 cup Frank's red hot sauce (Only use this!)
2 tablespoons red wine vinegar
1 -3 tablespoon crushed red pepper flakes (optional depending on how hot you like it!) (optional)

Steps:

  • Melt the butter in the pan.
  • Add the garlic and sauté for 3 to 4 minutes.
  • Add the flour and whisk until smooth, cook for 1 more minute.
  • Add the Franks and the vinegar, bring to a boil.
  • If desired add the pepper flakes and simmer for 2 or 3 minutes.
  • Pour over the food of your choice and enjoy.

HOOTER'S HOT WING SAUCE

This is supposed to be a copycat of the sauce served on Hooter's Hotwings. I've never been in a Hooter's (and won't ever be)so I don't know how authentic the taste is, but these are quite tasty on hot wings, deep fried plain or breaded either one works nicely with this sauce.

  • Serve with ranch or bleu cheese dressing, or whatever you prefer.
