Easy, cheesy, sausage and rice stuffed bell peppers - just five ingredients and ready in 20 minutes for the perfect weeknight meal!

8 bell peppers (tops cut off and seeds and membranes removed)
1 pound mild or spicy ground Italian sausage (for alternative protein options, see notes)
3 cup uncooked Spanish style rice (or white rice, see note)
1 ½ cups water
1 15-ounce can fire roasted diced tomatoes
1 cup shredded Mexican blend cheese
cilantro or green onions for topping (optional)

Steps:

  • Preheat oven to 375 degrees. Grease a large baking dish and arrange bell peppers standing up. (If they want to tip over you can always cut off the very bottom 1/8 of an inch or so to flatten them out and help them stand!) Transfer to preheated oven and allow to cook for 10-15 minutes until tender. (Move ahead with Step 2 while peppers are baking!)
  • In a large pan over medium-high heat, cook sausage for 5-6 minutes, breaking apart with a spatula or spoon as it cooks, until well browned. Use a slotted spoon to transfer sausage to a platter, cover to keep warm, and set aside.
  • Add rice, water, and tomatoes to the pan, give it a good stir, and bring to a boil. Reduce to LOW, cover, and cook for 20 minutes, stirring occasionally.
  • Stir sausage and 1/2 cup of the cheese into the pan. Spoon mixture into the baked peppers and top with remaining cheese.
  • Bake for 5 minutes or until cheese is melted. Top with green onions or cilantro if desired and serve.

Sausage Stuffed Bell Peppers image

4 medium green bell peppers
8 ounces ground pork sausage
1 1/2 cups chopped onions
1/2 cup chopped celery
2 teaspoons minced garlic
1 1/2 cups cooked long-grain rice
1/2 teaspoon salt, plus more for seasoning
1/4 teaspoon freshly ground black pepper, plus more for seasoning
1/2 teaspoon Essence, plus more for seasoning, recipe follows
1/4 cup chopped green onions, green part only
1 tablespoon chopped parsley leaves
2 tablespoons fine dry bread crumbs
2 tablespoons grated Parmesan
4 teaspoons unsalted butter
2 1/2 tablespoons paprika
2 tablespoons salt
2 tablespoons garlic powder
1 tablespoon black pepper
1 tablespoon onion powder
1 tablespoon cayenne pepper
1 tablespoon dried oregano
1 tablespoon dried thyme

Steps:

  • Preheat the oven to 400 degrees F.
  • Cut off the top quarter of each bell pepper and reserve. Scoop the seeds and veins out from the inside of each pepper and discard. Set bell pepper shells aside. Remove and discard the stems from each bell pepper top. Dice enough of the bell pepper tops to make 1/2 cup. Set aside.
  • In a large skillet, over medium-high heat, crumble and brown the sausage until cooked through, about 4 minutes. Add the onions, 1/2 cup diced bell pepper, and the celery. Saute for 4 minutes, or until the vegetables are soft. Add the garlic and cook, stirring, for 1 minute. Add the rice and mix well. Season with salt, pepper and Essence. Cook for about 1 minute. Remove from the heat and stir in the green onions and parsley. Season the insides of the bell pepper shells with salt and pepper, to taste. Spoon the rice mixture into the bell peppers.
  • In a small bowl, combine the bread crumbs and cheese. Season with a pinch of Essence and mix well. Sprinkle the crust over each pepper. Top each crust with 1 teaspoon of butter and place the peppers into an 8-inch baking dish or pan. Add just enough water to cover the bottom, about 1/3 cup. Bake for 25 to 30 minutes, or until the tops are crusty and brown and warmed through. Serve hot.

6 green bell peppers, tops cut away and seeds removed
2 tablespoons vegetable oil
1 cup finely chopped yellow onions
1/2 cup finely chopped green bell peppers
1/2 pound ground beef
1/2 pound ground pork
1 tablespoon minced garlic
1/4 cup finely chopped fresh parsley leaves
3/4 teaspoon salt
1/2 teaspoon ground black pepper
Pinch red pepper flakes
2 cups cooked long or medium-grain white rice
8 ounces tomato sauce
Water

Steps:

  • Preheat the oven to 350 degrees F.
  • In a large pot of boiling water, parboil the peppers until just tender, 2 to 3 minutes. Remove with a slotted spoon and dry on paper towels.
  • In a large saute pan or skillet, heat the oil over medium-high heat. Add the onions and chopped bell peppers and cook, stirring, until soft, about 3 minutes. Add the beef, pork, garlic, parsley, salt, black pepper, and pepper flakes. Cook until the meat is browned, stirring with a heavy wooden spoon to break up the lumps, about 6 minutes. Add the rice and tomato sauce and stir well. Remove from the heat and adjust the seasoning, to taste.
  • Pour enough water into a baking dish to just cover the bottom, about 1/8-inch deep. Stuff the bell peppers with the rice mixture and place in the baking dish. Bake until the peppers are very tender and the filling is heated through, 25 to 30 minutes.
  • Remove from the oven and let rest for 10 minutes before serving.

This excellent recipe took me many experimental tries before I came up with a delicious tasting filling. The preparation and cooking time may be somewhat lengthy but is worth the effort.

6 large sweet red peppers, seeded and cored
1 1/4 cups long grain white rice or 1 1/4 cups brown rice
2 1/4 cups chicken broth
3 tablespoons extra virgin olive oil
1 lb lean ground beef
1/2 cup finely chopped onion
1 large celery rib, finely chopped
3/4 cup sliced fresh mushrooms
2 medium carrots, peeled and grated
3/4 teaspoon granulated garlic powder
1 teaspoon italian seasoning mix
1/2 teaspoon salt
1/2 teaspoon black pepper
1 (16 fluid ounce) can plum tomatoes, crush tomatoes and include liquid
1 1/2 teaspoons dried dill weed
1/2 cup ketchup
1/4 cup water
3/4 cup grated mozzarella cheese

Steps:

  • Carefully cut out the stem portion of the peppers.
  • Remove seeds and membranes carefully and discard.
  • Place peppers (stand upright) in a large saucepan.
  • Add 1/2 cup water, cover and bring to boil and parboil for 5 minutes.
  • Drain well; set aside covered.
  • In a medium saucepan, add rice and chicken broth and bring to boil.
  • Reduce heat and simmer for about 20 minutes or until all liquid is absorbed.
  • In a large frying pan, add olive oil, ground beef and chopped onion and saute' until mixture is lightly browned, about 5 minutes.
  • Add chopped celery, sliced mushrooms, grated carrots, garlic powder, Italian herb seasoning mix, salt, pepper, crushed tomatoes including liquid, cooked rice, dill weed; mix well and bring to boil.
  • Reduce heat to medium-low, cover and cook for about 15 minutes, stirring occasionally.
  • Preheat oven to 350 degrees F.
  • Carefully stuff peppers with mixture.
  • Place stuffed peppers (standing up) in a deep, oven-proof casserole dish.
  • Spoon any remaining mixture over peppers.
  • In a small mixing bowl, mix together ketchup and water.
  • Pour this sauce equally over the stuffing in each pepper.
  • Cover casserole dish with a lid or tightly with aluminum foil.
  • Bake in preheated 350 F oven for 20 minutes.
  • Remove lid or foil, sprinkle grated mozzarella cheese on top of the stuffed peppers.
  • Continue to bake uncovered at 350 F for another 10 minutes or until cheese melts.
  • Serve hot.
  • You may use a combination of red, orange, yellow or green peppers for a colorful presentation and a variety of taste.
