This quick and easy cranberry sauce gets extra flavor from orange zest and fresh grated ginger.

1 ½ cups white sugar
1 large orange, zested and juiced
½ teaspoon grated fresh ginger
4 cups cranberries
½ cup toasted pecans

Steps:

  • Combine the sugar, orange zest and juice, and ginger in a pot over medium heat; cook and stir until the sugar is completely dissolved, about 5 minutes. Add the cranberries to the orange juice mixture; cook until the cranberries pop, about 5 minutes. Stir the pecans through the cranberry mixture; remove from heat and allow to cool completely before serving.

A family favorite during the holidays! I make about 3 batches of this every season because everyone wants it. Enjoy! We serve it on Thanksgiving, as a spread on gobbler sandsiches, to make baked cranberry chicken and as a jam on bagels and toast!

1 bag(s) whole fresh cranberries
16 ounce(s) passion fruit juice
1-1/2 cup(s) sugar
4 tablespoon(s) pomegranate balsamic vinegar

Steps:

  • Rinse the cranberries in a strainer picking out any of the bad ones.
  • Place the cranberries in a medium sauce pan and add the basalmic vinegar and passion fruit juice slowly and STOP before the berries float! Don't put too much juice in or it won't cook down.
  • Add about 1 cup of sugar, adding it slowly just to cover the berries.
  • Cook over a low heat for about an hour until it reduces about 1/2 of what you started with and looks thicker... like cranberry sauce.
