GZ'S ULTIMATE BLT

Number Of Ingredients 12

Eight 3/4-inch-thick slices heirloom tomato
1 teaspoon fleur de sel sea salt, plus more for seasoning
1 teaspoon freshly ground black pepper, plus more for seasoning
2 tablespoons red wine vinegar
2 tablespoons extra-virgin olive oil
12 slices Applewood smoked bacon, cut 1/4-inch thick from slab bacon
1/2 cup julienne strips red onion
2 tablespoons mayonnaise
Four 1/2-inch-thick slices country bread, toasted
1 avocado, cut into 1/4-inch-thick slices
2 cups butter lettuce leaves
2 tablespoons tarragon leaves

Steps:

  • Preheat the oven to 375 degrees F.
  • Place the tomato slices on a tray or large plate. Sprinkle with fleur de sel and black pepper. Drizzle the vinegar and oil over the tomatoes. Allow to sit for 15 minutes.
  • Lay the bacon on a baking sheet, and season with a generous amount of black pepper. Brush some of the juices from the seasoned tomatoes onto the bacon and top with the red onions. Roast the bacon until it is golden brown and the fat has rendered, about 20 minutes.
  • Spread 1 1/2 teaspoons mayonnaise on each slice of country toast. Top each with 3 slices of bacon and the onions. Reserve the bacon drippings. Season the avocado with salt and pepper, and place on top of the bacon. Follow with 2 marinated tomato slices on each sandwich.
  • In a separate bowl, lightly toss the lettuce and tarragon with a small amount of the drippings from the bacon and season as needed with salt and pepper. Top the sandwiches with the salad and serve warm.

18 slices thick cut applewood smoked bacon, divided
2 1/2 tablespoons honey
2 teaspoons molasses
2 teaspoons sherry vinegar
Pinch ground cayenne
4 leaves radicchio
2 tablespoons extra-virgin olive oil
1/2 tablespoon sherry vinegar
1/2 tablespoon Dijon mustard
1 large ripe tomato
1/2 teaspoon smoked paprika
1 clove garlic
3/4 cup mayonnaise
Kosher salt and freshly ground black pepper
2 pounds ground chuck
1/4 teaspoon finely chopped fresh tarragon leaves
2 teaspoons kosher salt
1/8 teaspoon freshly ground black pepper
Vegetable oil, for grill pan
6 ounces Comte, shredded (can substitute Gruyere)
6 classic white bakery buns, split

Steps:

  • Preheat a nonstick grill pan over medium-high heat.
  • Roughly chop 6 of the bacon slices, and add to the grill pan. Cook, stirring occasionally, until the bacon just barely begins to turn crispy, about for 3 to 4 minutes. Add the cooked bacon to a food processor and process for 4 to 5 seconds. Set aside for later use, (in the patties).
  • Honey Molasses-Glazed Bacon:
  • In a small mixing bowl combine the honey, molasses, vinegar, and cayenne and mix until well combined. Brush the remaining 12 bacon slices on both sides with the honey mixture. Heat a large fireproof nonstick skillet on the grill. Add 1/2 the bacon and cook over medium-high heat until crispy, about 5 minutes, flipping once. Drain on paper towels. Repeat with remaining bacon.
  • To make Grilled Lettuce: Soak the radicchio leaves, for about 10 minutes, in an ice bath to lessen the amount of bitterness. Remove the leaves from the ice bath and pat dry with paper towels. Brush the leaves with 1 tablespoon oil. Put on the grill and cook briefly on each side. Transfer to a cutting board and cut into 1-inch wide strips. In a large mixing bowl, whisk together the remaining 1 tablespoon of oil, the sherry vinegar, and Dijon mustard. Add the radicchio and toss to coat.
  • Smoky Tomato Mayo: Put the tomato on the grill and cook for 6 to 8 minutes, turning occasionally, until most of the skin has blackened. Transfer to a small bowl and cover with plastic wrap. After 10 minutes, squeeze the tomato into a strainer to remove the seeds and most of the skin (you can leave a little bit of the burnt skin). Discard the seeds and skin. In the bowl of a food processor, combine the tomato, smoked paprika, garlic, and mayonnaise and puree. Season, to taste, with salt and pepper.
  • Patties: Combine the beef, reserved bacon (that has been chopped in the food processor), tarragon, salt, and pepper in a large bowl. Mix well, handling the meat as little as possible to avoid compacting. Divide the mixture into 6 equal portions and form into patties to fit the size of the buns.
  • Brush the grill pan with vegetable oil. Arrange the patties in the pan and cook, turning once, just until done, about 4 minutes on each side for medium-rare. During the last few minutes of cooking, top with equal amounts of cheese and put the buns, cut side down, on the outer edges of the grill to toast lightly.
  • To assemble the burgers, spread a generous amount of the Smoky Tomato Mayo on the cut side of the buns. Top the bun bottoms with 2 slices of Honey Molasses-Glazed Bacon, a cheese-topped patty, and equal amounts of Grilled Lettuce. Cover with the bun tops and serve.

In anticipation of the beautiful garden tomatoes I'm looking forward to, I want to post this recipe! I found this on myrecipes.com and adapted it to fit our tastes. Yummy! Please note the Basil Aioli makes 1 cup. And cooking time for Aioli is 30 minutes, not included in cook time for sandwich.

2 slices sourdough bread
2 tablespoons basil aioli (see recipe below)
3 pieces applewood-smoked bacon, cooked
1 ripe medium tomatoes, sliced
1/3 cup loosely packed arugula leaf
2 ounces fresh mozzarella cheese, sliced
salt and pepper
2 tablespoons basil aioli (see recipe in directions)

Steps:

  • Sandwich ~.
  • Spread one side of each piece of bread with basil aioli. Stack one piece with bacon, tomato slices, arugula leaves, and fresh mozzarella slices. Sprinkle with salt and pepper. Top with second slice of aioli-laden bread.
  • Basil Aioli:.
  • 1 cup loosely packed basil leaves.
  • 1/2 cup extra-virgin olive oil.
  • 1/2 cup canola oil.
  • 2 egg yolks (can use 1/2 cup pasteurized whole eggs in place of egg yolks).
  • 2 garlic cloves, minced.
  • 1/2 teaspoon dried mustard, lemon juice, salt, and pepper.
  • Bring a large pot of salted water to boil. Dunk basil leaves into the boiling water for 20 seconds. Drain and squeeze out as much excess water as possible.
  • In a blender, whirl blanched basil leaves with olive and canola oils. Empty into a measuring cup or small pitcher and reserve.
  • In a medium bowl, whisk together egg yolks, garlic, mustard, lemon juice, salt, and pepper. Whisk in a drop of the basil oil; continue adding drops of oil, whisking until mixture thickens to a mayonnaise-like consistency. Continuing to whisk, pour in remaining basil oil in a very thin stream. Season with additional salt and pepper to taste.
  • Prep and Cook Time: 30 minutes. Notes: If you are concerned about salmonella or bacteria in raw eggs, use 1/2 cup pasteurized whole eggs (available at some grocery stores) in place of the egg yolks.

This is a combination of 2 different BLT dip recipes that have been given to me by friends. I took certain ingredients from their recipes and made it my own. Appetizers are my favorite thing to make. This is another crowd pleaser when I make it for people.

1 package(s) (8 oz) cream cheese
1/2 cup(s) mayonnaise
1/2 cup(s) sour cream
1/2 cup(s) ranch dressing
1/2 teaspoon(s) granulated garlic
1/2 teaspoon(s) onion powder
1 1/2 teaspoon(s) mixed dried herbs (parsley, chives, dill, italian seasoning))
1/2 cup(s) celery, finely chopped
2 tablespoon(s) sweet onion, finely chopped
1 tablespoon(s) red, yellow, or white onion, finely chopped
1 1/2 cup(s) arugula, chopped
1 pound(s) bacon, cooked and chopped
4 - 5 - roma tomatoes, seeded, drained and chopped

Steps:

  • Before I start with the directions, please note, that you can use light cream cheese, mayo and sour cream. I do this quite often and it is still delicous.
  • Also note, when adding the garlic, onion powder and dried herbs. You can adjust the ingredients to your taste.
  • Soften the cream cheese and mix with the mayonnaise, sour cream and ranch dressing. Then add the garlic, onion powder and dried herbs. Once this is mixed well, add the celery and onion. Chill this mixture for at least an hour to blend the flavors. Proceed with the rest of the ingredient preparation.
  • Cook the bacon, chop and cool. Chop arugula, and tomatoes. Set these 3 ingredients aside in separate dishes until just before you are ready to serve the dip.
  • Just before serving, fold the bacon, arugula and tomatoes into the cream cheese mixture. Serve with assorted crackers, crusty bread, tortilla chips or veggies.
  • You can substitute most any green for arugula, but the closest matches are Belgian endive, escarole, and dandelion greens. Or spinach - Arugula has the best flavor - (it's peppery tasting)

Romaine lettuce
Tomatoes

Steps:

  • Heat a cast-iron skillet over medium heat, add bacon slices and fry, turning once, until lightly crisped and browned. Drain on paper towels. In a broiler pan lightly toast one side of loaf bread until golden. Spread mayonnaise on untoasted sides. Choose tender inner leaves of romaine, stack them on one side of toast and top with a few slices of tomato. Drape bacon over and top with second slice of bread. Serve with ice tea with mint.;

4 slices lightly toasted bread
1 slice Cheddar cheese
2 lettuce leaves
4 slices tomatoes
Sauce for BLT
1/4 cup mayonnaise
1/8 cup chili sauce
1/4 cup sour cream

Steps:

  • Cook the bacon in a large skillet over medium high heat. Cook until the bacon is evenly browned and crisp. Drain the bacon slices on a paper towel. Lightly toast the bread in the toaster. Arrange the bacon, tomato and cheese on one slice of bread. Spread the remaining piece of bread with the special sauce made for the BLT.
