A true German/Polish dish that is simply 'Delish'! I sometimes use Swiss cheese in place of the Cheddar, which is a good switch as well! This is a casserole that is very inexpensive, simple and quick to make - and not to mention leftovers are the best the next day as well!!

1 (12 ounce) package kluski (egg) noodles
⅓ cup butter
⅓ cup all-purpose flour
½ teaspoon dry mustard powder
¼ teaspoon ground black pepper
3 cups milk
¾ cup shredded Cheddar cheese
2 cups sauerkraut, drained
1 (16 ounce) package kielbasa sausage, cubed
½ cup dry bread crumbs
¼ cup shredded Cheddar cheese

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • Bring a large pot of lightly salted water to a boil. Cook kluski noodles in the boiling water, stirring occasionally until cooked through but firm to the bite, about 8 minutes. Drain and set aside.
  • Melt butter in a large pot over medium heat. Whisk in flour, dry mustard, and black pepper; cook until smooth, about 2 minutes. Whisk in milk, a little at a time, and bring white sauce to a boil. Cook for 1 minute, whisking constantly, to make a smooth, thick sauce. Whisk 3/4 cup Cheddar cheese into sauce until melted.
  • Stir kluski noodles, sauerkraut, and kielbasa sausage into the sauce and transfer to a 3-quart casserole dish. Mix bread crumbs with 1/4 cup Cheddar cheese in a bowl and sprinkle over the casserole.
  • Bake in the preheated oven until casserole is heated through, about 20 minutes.

This was named by my two kids as it sounded to them like "yummy German casserole" - I have no idea what it means - but it is amazing! I'm posting it here because I keep loosing the recipe - easy-peezy and so good - real comfort food!

12 ounces egg noodles, cooked
1/3 cup flour
1/3 cup butter, melted
1/4 teaspoon pepper
1/2 teaspoon dry mustard
3 cups milk
1 cup cheddar cheese, shredded
2 cups sauerkraut, drained
16 ounces kielbasa, ring
1/2 cup breadcrumbs

Steps:

  • Cook egg noodles as per directions on package. I really like the Pennsylvania Dutch Kluski noodles as they add great texture to this dish, but I'm sure any thick egg noodle will work. Set aside.
  • Slice or cube kielbasa - we cube as we like it spread throughout the casserole more thoroughly.
  • Heat butter in dutch oven until melted, stir in flour and seasonings. When mixture is well combined add milk. Bring to a boil for one minute, stirring constantly.
  • Add 3/4 cup of cheese, stir until melted.
  • When sauce is ready stir in sliced kielbasa, drained sauerkraut and pre-cooked egg noodles.
  • Pour into a 3 quart casserole.
  • Mix remaining cheese with bread crumbs and sprinkle over casserole.
  • Bake at 375° for 20 minutes or until heated through.

I happen to come across this recipe at food.com. HeidiRenee had posted the recipe, but I did tweak the recipe just a bit. I love this casserole, and could eat this at least once a month. It's great comfort food! If you love sauerkraut, then your going to love this dish!!

8 ounces wide noodles
1 (14 oz.) pkg. kielbasa or smoked sausage
1/3 cup butter
1/3 cup flour
1 teasp. garlic powder
1 teasp. onion powder
1/4 teasp. black pepper
1/2 teasp. dry mustard
3 cups milk
1 cup shredded sharp cheddar cheese
1-1/2 cups sauerkraut, drained (*see note)
4 tablesp. plain dried bread crumbs
2 tablesp. melted butter

Steps:

  • 1. Grease the inside of a 2-1/2 to 3-quart casserole baking dish; set baking dish aside.
  • 2. Cook egg noodles as per directions on package; set aside.
  • 3. Cut Kielbasa or smoked sausage into chunks, then cut each chunk in half; set aside.
  • 4. Melt the 1/3 cup of butter in a large saucepan. (I used a 3-quart saucepan).
  • 5. Stir in the flour, garlic power, onion powder, pepper, and mustard.
  • 6. When mixture is well combined, gradually add the milk. Bring mixture to a boil for 1 minute; stirring constantly until the sauce has thicken. (Mine started to thicken in less than a minute.)
  • 7. Add the cup of cheese to the pan, stir until melted.
  • 8. Add the Kielbasa or smoked sausage, plus the drained sauerkraut to the pan, and stir.
  • 9. Pour mixture into the greased baking dish, then stir in the precooked noodles.
  • 10. Top the casserole with a mixture of 4 tablespoons of bread crumbs mixed with 2 tablespoons of melted butter.
  • 11. Bake casserole (uncovered) for 25 minutes in a 375º oven.
  • 12. Note: When preparing this casserole, you can use a Bavarian Sauerkraut in place of regular sauerkraut. Plus the original recipe states to use 2 cups of the kraut, but I just use 1-1/2 cups. Also, you can use smoked sausage in place of the Kielbasa. I used smoked sausage, and the brand of sausage I used was, Eckrich.
