RED-NECK TURTLE BURGERS

This is a GREAT kids' favorite, whether BBQ, frying or oven prepared. This recipe fits for all flavors of hot dogs and hamburger meat. If you make smaller hamburger patties, you can put them in hamburger buns to eat. BBQ grilling works also.

2 pounds ground beef round
2 teaspoons minced fresh chives
½ teaspoon salt
¼ teaspoon Worcestershire sauce
¼ teaspoon dry mustard
4 slices sharp Cheddar cheese
½ cup chopped sweet onion (such as Maui)
12 regular-sized hot dogs, halved crosswise
12 slices bacon, cut in half crosswise

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • Mix ground beef, chives, salt, Worcestershire sauce, and ground mustard thoroughly in a bowl; divide in fourths and make 4 thick oval-shaped burgers. Top each burger with a slice of sharp Cheddar cheese and about 2 tablespoons of chopped sweet onion.
  • Poke 2 holes in the long ends of each burger with your fingers for the heads and tails. Insert half a hot dog into the head and tail holes, letting the rounded ends of the hot dogs poke out about 1 1/2 inches. Press to secure. Poke 2 more holes on each side of the burger and insert 2 more hot dog halves on each side for legs. Cut 2 small slits, about 3/4 inch long, into the ends of the legs to make toes. Repeat with remaining ground beef, hot dogs, cheese slices, and onion to make 4 turtle burgers topped with cheese and onion. If desired, cut tails to small sharp points for more realism.
  • Place 3 halved bacon slices onto a work surface, sides touching. Weave 3 more bacon slices into the first ones, facing 90 degrees to the first slices, to make a woven bacon piece; lay the woven bacon onto a burger, arranging bacon between heads, legs, and tails. Secure with toothpicks. Repeat with remaining bacon to make 3 more woven bacon pieces and cover remaining burgers with bacon.
  • Place a baking rack into a large roasting pan; lay the bacon-wrapped turtle burgers onto the rack and cover lightly with foil.
  • Bake in the preheated oven until the burgers are no longer pink in the middle and hot dog ends are browned, 20 to 30 minutes. An instant-read meat thermometer inserted into the thickest part of a burger should read at least 160 degrees F (70 degrees C).

I have no claim on this, other than to say that I received it in an email from my father-in-law, and thought it was cute as all get-out, and wanted to share. I don't even know to whom the credit for the recipe should be given ... whoever you are, it's adorable! And...

1 lb lean ground beef
12 all-beef wieners, each divided in-half (total of 24 halves)
4 slice sharp cheddar cheese
1 lb bacon
aluminum foil
4 hamburger buns
condiments for burgers

Steps:

  • 1. Pre-heat oven to 400 degrees.
  • 2. Make four good-sized hamburger patties, nice and round and thick. Top w/ single slice of sharp cheddar cheese (this is optional, if you don't want cheese).
  • 3. Wrap each beef pattie in bacon strips, making a basket weave as you go. Cover entire pattie.
  • 4. Next, take the hot dog halves and make turtles' legs, head and tail. Cut the one for the tail at a diagonal on the end, so the tail looks "pointed". In the legs, put a few tiny 'slits' in the ends, so they will look like feet w/ claws after they bake.
  • 5. Line a baking sheet (with sides on it!) with foil, and place a baking rack over the foil. Arrange your "turtles" on the baking rack.
  • 6. Cook for 30 - 40 mins., in your pre-heated oven. A little crispy, not too crunchy ... just the way a turtle ought to be, right?

ok here is the recipe
The Meat;
First of all, send all your vegan freinds home!
2 packages of bacon
2 lbs of ground beef
1 6 0z tub of crumbled blue cheese(Saga blue cheese is preferable)I am american,I spell blue,not,bleu.
1/4 cup of finely chopped mushrooms
1/4 cup of finely chopped onions
2 small eggs..or 1 large
2 or 12 tbls of worchestershire (What ever ya like)
1/2 cup of panko bread crumbs(panko is important)
1/4 tsp of accent (YES MSG...GET OVER IT)
1 tbls of finely chopped garlic(or for the lazy ones, 2 tsp of garlic powder)
salt and pepper to taste (deal with I don't know your tastes)
mix all together...*Note...dont wipe your ass or pick a booger just before that
OH CRAP!!! A 12 pack of beer
Pop a beer
Toppings;(optional..you know waht ya like...use it!)
Sharp chedder cheese or pepperjack
Lettuce
Tomato
Onion, thinly sliced (preferably white onion,yes,they are the sweetest)

Steps:

  • Preheat oven to 350 degrees Mix all ingredients together except the bacon Wash your hands after mixin that mess together(ya don't want meat juice on the beer tab) Sit back and contimplate life ( Ok...this is how I roll) Stare at the meat mixture until it looks perfect..(I usaully wait 2 or 3 beers)Optional ok ..now the hard part..(drink at least 2 more beers)Optional Pat out the burgers as big as ya want Pop another brewsky Wash your hands...Ya don't wanna screw up your huggy with meat juice Cut open smokie joes...If you are a real man you will reach in your pocket and pull out your Swiss Army knife. Kinda look at them ...some are more suited for feet and and some for heads Pick out 4 legs and 2 for the head and tail Use kitchen shears or a knife and cut 3 slices in the feet and 1 slice horizontal for the head and cut a "V" out of the tail Use your untainted pinky and poke starter holes for all..(for those that can't think...4 legs,a head and a tail..(I refuse to tell ya where) Cut the bacon strips in half and lay three on top of the budding turtle..ok more if your are makin them huge..(See ya in the emergency room) Take 3 more slices and weave them into those.(those that use more probably are on a first name basis with the nurses at the ER) Pick up the heart attack..Oops I mean burger...and wrap the bacon around the sides...exposing legs, head. and tail...and for sick f$%^s..the dick You will need a grate over a cookie sheet narrow enough to not allow the smokie joes to fall threw..I used my grate off my smoker and it worked great.Real men improvise.Cook for 25 to 30 minutes, or untill bacon is done.That is completely your call.Pop beer and let the burgers rest, for 5 minutes.Assemble burgers. The rest you should have enough sence to handle on your own.

WOW! Only in Louisiana! If you can't cook or can't make these yourself, ask someone who can and beg! These are cute when served on a plate of dirty rice and surrounded by a bed of leafy greens or lettuce. This is also a fun project to get kids into the kitchen. Prepping and eating!

2 lb ground beef, ***do not use lean
1 lb thin sliced bacon, uncooked
2-6 tsp tony chachere's original creole seasoning
4 slice sharp cheddar cheese slices
2 pkg hot dogs/wieners
1 box wooden toothpicks

Steps:

  • 1. *PRE HEAT OVEN TO 400 DEGREES. Season 2 pounds of ground beef with Tony Chachere's Creole Seasoning. You could also use the lower salt or salt free versions. The spice is what is needed. About 1-3 teaspoons per pound, but adjust according to your family's taste and salt requirements or restrictions.
  • 2. After seasoning, pat out by hand, the ground beef patties, about 8 ounces each, and form into oval turtle shell shapes.
  • 3. Slice each hotdog in half lengthwise. Then cut each hotdog in half. Use 1/2 a hotdog for each head, tail, and leg, cutting slits into the ends of the "legs" to make the turtle "toes" and insert them into the turtle body patty. Use the wooden toothpicks to hold the head, legs, and tail in place.
  • 4. Top each one with one slice of sharp cheddar cheese. Place flat on platter and chill in refrigerator for at least 30 minutes.
  • 5. Remove from refrigerator and wrap and weave each patty with bacon strips to enclose the cheese slice and form the shell. Use toothpicks to hold the strips of bacon if needed. The wood toothpicks should hold the head, legs, and tail in place.
  • 6. Place on a rack in a 2" deep baking pan/dish which has been lined with foil. *It's better if you place them on a rack, so that the excess grease drains off while the turtle-burgers bake. It also makes the turtle shells crunchy.
  • 7. Bake at 400 degrees for 35-40 minutes, depending on the size and thickness of the patties.
  • 8. Remove from oven and let rest on a platter for 10 minutes prior to serving.
  • 9. These a cute when served on a plate of dirty rice and surrounded by a bed of leafy green lettuce.
  • 10. A little crispy-crunchy... kind of spicy... just how a good turtle-burger should be! I'm talkin' bout good, yeah!!!

6 ounces ground beef, shaped into a patty
4 slices bacon
3 hot dogs
2 slices American cheese
1/2 teaspoon garlic salt
1 teaspoon Worcestershire sauce
1 teaspoon virgin olive oil

Steps:

  • add Garlic salt, worchestire and oil to burger.
  • cut hot dogs in half - make 3 slits in the ends of 4 of them for feet.
  • criss cross bacon slices - 1 under, 1 over - 1 over, 1 under, etc. (weave).
  • place burger patty over bacon.
  • press hot dogs into burger at proper places for legs and head.
  • place american cheese on top.
  • stretch bacon strips over the burger and around the hot dogs to secure.
  • Bake in oven on cookie pan for 30 minutes at 350f.
  • finish on grill or frying pan until bacon is crispy.
  • Serve on bun with top bun uncovered and all your favorite trimmings.
  • (NOTE: toothpick bacon if necessary to stay in place).
