- Place turnips in a large saucepan and cover with water. Bring to a boil. Reduce heat; cover and cook for 15 minutes or until tender and drain. Transfer turnips to a bowl and mash. Add the egg, sugar, butter and salt. , Transfer to a greased 1-qt. baking dish; sprinkle with cinnamon. Cover and bake at 350° for 20-25 minutes or until a thermometer reads 160°.

- Preheat the oven to 375 degrees F (190 degrees C).
- Place turnips into a large pot and cover with salted water; bring to a boil. Reduce heat to medium-low and simmer until tender, about 20 minutes. Drain and return to the pot. Mash turnips; add butter and eggs.
- Combine flour, sugar, baking powder, salt, pepper, and nutmeg in a bowl and stir into turnips. Transfer mixture to a baking dish.
- Combine bread crumbs and melted butter and sprinkle on top of turnip mixture.
- Bake in the preheated oven until light brown on top, about 25 minutes.

Carrots and sugar sweeten the turnip in this side dish. A must for my family's Thanksgiving and Christmas dinners. The recipe is often requested.

- Preheat an oven to 350 degrees F (175 degrees C). Grease a 2 quart casserole dish.
- Place the carrot and turnip cubes into a large pot and cover with salted water. Bring to a boil over high heat, then reduce heat to medium-low, cover, and simmer until tender, about 20 minutes. Drain and allow to steam dry for a minute or two.
- Return the carrots and turnips to the pot, and mash well with the butter, salt, flour and 1/4 cup of sugar. Whisk together the eggs and milk in a bowl, then stir into the mashed carrot mixture until blended. Scrape into the prepared casserole dish. Stir together 2 tablespoons of sugar with the cinnamon in a small bowl, and sprinkle over the top of the carrot mash.
- Bake in the preheated oven until the carrot mash has slightly firmed and the top has begun to turn golden brown, about 45 minutes.

- Preheat oven to 350 degrees F (175 degrees C). Grease a 2-quart casserole.
- Bring a pot of water to a boil and add turnips. Reduce heat to low, and simmer turnips until tender, about 15 minutes. Drain.
- Transfer turnips to a large bowl and mash with applesauce, 6 tablespoons softened butter, brown sugar, eggs, salt, black pepper, and half the bread crumbs. Spoon turnip mixture into the prepared casserole dish, and sprinkle with remaining half of bread crumbs. Drizzle with 2 tablespoons melted butter.
- Bake in the preheated oven until set, about 30 minutes.

- 1. Heat oven to 400 degree's. Thinly slice the cubed rutabaga. Slice thin in a food processor, with a mandolin or knife. Place rutabega (turnip) in to a large kettle.
- 2. Mix the cream, nutmeg, chopped garlic, onion, sugar, flour. Salt, pepper,and Thyme together.
- 3. Pour cream mixture over the turnip. Melt the butter and add to pot. Stir well to combine. Cook until it boils. Reduce heat to medium and cover. Cook until it is softened . About 10 minutes.
- 4. Pour mixture into a casserole dish. Cover and bake until it boils rapidly, thickened and cooked all the way through. Remove cover. continue baking until thickened.
- 5. Mix breadcrumbs Parmesan cheese and melted butter together. Sprinkle over casserole. Place casserole under broiler about 6-8 inches from broiler. Brown the breadcrumbs. Remove from oven and serve.
LANTTULAATIKKO (FINNISH MASHED TURNIP CASSEROLE)

- Boil turnip till tender (15-20 minutes). Remove turnip and allow to cool.
- When cooled, mash turnip with potato masher or ricer in a medium bowl. Mix in all other ingredients.

- 1. Preheat oven to 350. Combine turnips, butter, eggs, salt, sugar and *1 cup bread crumbs.
- 2. Spoon into oiled casserole dish then top with *remaining 1/4 cup of bread crumbs.

- 1. Mix all the wet ingredients together, then pour into a casserole dish. Add as much salt and pepper as you wish. She used a couple of shakes, probably about 1/4 teaspoon of each.
- 2. Top with bread crumbs and cheese.

- 1. In a small casserole dish melt one stick of margarine in a 350* oven. Crumble a layer of cornbread in margarine and layer of turnip greens (DO NOT DRAIN TURNIP GREENS), a layer of onion, and a layer of cream of chicken soup. Repeat the layers ending with cornbread. Bake for 30 to 35 minutes.

- Preheat oven to 350°F Coat a 2 quart casserole dish with nonstick cooking spray.
- Combine carrot and turnip chunks in a large pot. Pour in enough water to cover them. Add salt.

TURNIP-SQUASH VEGETARIAN BUDGET CASSEROLE
I'm currently on a budget casserole roll here. Feel free to sub the cream of potato soup for any other cream soup (my other favorites are mushroom and celery), they're pretty packed with flavor. It's just that not as many use cream of potato like I do! I like Stovetop traditional sage stuffing mix and the turkey one, any kind of boxed stuffing will do. You can used canned french-fried onions like French's or Durkee but I prefer homemade, Recipe #44115 those are sooooo good.

- Steam the squash and turnips with the dried shallots until somewhat tender, about 10-15 minutes.
- In a large mixing bowl, mix the sour cream and cream soup together.
- Add the steamed veggies and mix well.
- Add half of the french fried onions and half the package of stuffing mix.
- Grease a 7x11 casserole dish with cooking spray, and pour the mixture into it.
- Top with the remaining stuffing mix and french-fried onions.
- Bake for 35-40 minutes at 350F or until browned and bubbling.
- Makes a great meal served with a salad and some iced tea!
