This recipe has been in our family for years. We like turnips with turkey, so my mother used to serve this side dish with our turkey dinner at Christmas. Then I served this dish, and now my daughter, who has taken over preparing Christmas dinner, is carrying on the tradition.

3 medium turnips, peeled and cubed
4 tablespoons butter, divided
2 large eggs
3 tablespoons all-purpose flour
1 tablespoon brown sugar
3 teaspoons baking powder
3/4 teaspoon salt
1/4 teaspoon pepper
Dash ground nutmeg
1/2 cup dry bread crumbs

Steps:

  • Preheat oven to 375°. Place turnips in a small saucepan and cover with water. Bring to a boil. Reduce heat; cover and simmer 10-12 minutes or until tender. Drain. , In a small bowl, combine turnips, 2 tablespoons butter and eggs. Combine flour, brown sugar, baking powder, salt, pepper and nutmeg; add to turnip mixture and mix well. Transfer to a greased 8-in. square baking dish. , Melt remaining butter; toss with bread crumbs. Sprinkle over top. Bake, uncovered, 25-30 minutes or until a knife inserted in the center comes out clean. Serve immediately.

1 large turnip, peeled and cubed
2 tablespoons butter
1 pinch salt and ground black pepper
2 large apples - peeled, cored, and diced
2 tablespoons brown sugar
1 pinch ground cinnamon
¼ cup all-purpose flour
¼ cup brown sugar
2 tablespoons butter, softened

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease an 8-inch casserole dish.
  • Place turnip into a large pot and cover with salted water; bring to a boil. Reduce heat to medium-low and simmer until tender, 15 to 20 minutes. Drain and transfer to a bowl.
  • Mash turnip, 2 tablespoons butter, salt, and pepper together until smooth.
  • Toss apples with 2 tablespoons brown sugar and cinnamon in a bowl.
  • Spread half the turnip mixture into the prepared casserole dish; top with half the apples. Repeat with remaining turnip mixture and apple mixture.
  • Mix flour, 1/4 cup brown sugar, and 2 tablespoons softened butter by hand in a bowl until mixture is an evenly coarse meal-texture; sprinkle over casserole.
  • Bake in the preheated oven until cooked through and bubbling, about 1 hour.

2 large potatoes, peeled and thinly sliced
2 onions, thinly sliced
1 large turnip, thinly sliced
1 cup chicken stock
1 cup natural yoghurt
2 tablespoons Dijon mustard
fresh ground pepper

Steps:

  • Arrange potatoes, onions and turnip in layers in a lightly greased casserole dish.
  • Whisk together the remaining ingredients and pour carefully over the vegetables.
  • Bake, covered, in a moderate oven (180c) for 30 minutes.
  • Remove cover and bake for a further 20 minutes or until the vegetables are tender.

85g butter
6 rashers smoked streaky bacon , chopped
1 tbsp fresh thyme leaf
large onion , finely sliced
1 ½kg turnip , peeled and sliced
100g mature cheddar , grated

Steps:

  • Heat oven to 180C/fan 160C/gas 4. Heat half the butter in an ovenproof frying pan. Add the bacon and cook for a few mins, then add the thyme and onions, season and cook for a further 8-10 mins until the onions are soft and golden. Scoop the onions into a bowl, leaving the buttery juices in the pan.
  • Off the heat, layer the sliced turnips in the pan with a scattering of fried onions, a sprinkling of cheese and some dots of butter between the layers. Season with a little salt and plenty of pepper as you go. Cover the pan with foil and bake for 1-1¼ hrs until the turnips are tender when prodded with the point of a knife. Leave the cake to relax for 5 mins. Turn it upside down onto a plate or board, then cut into wedges and serve.

2 medium yellow turnips or 2 medium rutabagas
2 tablespoons butter
1 cup milk, preferably homogenized or 1 cup half-and-half cream
1/2 cup fine dry breadcrumb
1 tablespoon granulated sugar
1 tablespoon brown sugar
1 teaspoon salt
1/2 teaspoon nutmeg
1/4 teaspoon fresh ground black pepper
2 tablespoons breadcrumbs
1 tablespoon melted butter

Steps:

  • Peel& cube turnip.
  • You should have at least 9 cups.
  • Place in a large saucepan& cover with water.
  • Bring to a boil over high heat.
  • Cover& reduce heat so water gently bubbles.
  • Cook until tender, from 25-30 minutes.
  • Then drain.
  • Using potato masher or electric mixer, mash turnip.
  • Stir in 2 tbsp butter until melted, then mix in milk.
  • Stil 1/2 cup bread crumbs with sugars& seasonings.
  • Stir into turnip.
  • If baking right away, preheat oven to 350 degrees F.
  • BUtter a 9x13" baking dish or coat with cooking spray.
  • Spread turnip evenly in pan and run fork over top to create a rough appearance.
  • Sprinkle with 2 tbsp bread crumbs& drizzle with 1 tbsp melted butter.
  • Bake uncovered in centre of oven until centre is hot& crumbs are golden-tipped- about 45 minutes.
  • Serve right away with roast turkey, chicken, pork or beef.
  • Note: To make ahead, prepare completely.
  • Do not bake.
  • Cover& refrigerate for up to 2 days.
  • A cold casserole may need 55-60 minutes baking time.
  • If frozen, turnip's texture may soften& water out.

1 lb small turnips
2 tbsp white vinegar
2 tsp table salt
3 tbsp butter (divided use)
2 tbsp cream
1 egg
2/3 cup bread crumbs*
Sweetener equal to 2 tsp of sugar
1 tsp sea salt

Steps:

  • Trim and peel turnips. Cut into chunks. Bring a 2 quart pan of water to boil. Add 2 tsp table salt and 2 tbsp white vinegar. Add turnips and boil until soft. Drain water. Mash turnips with 2 tbsp butter, cream and egg. Stir in 1/4 cup of the bread crumbs, sweetener and salt. Spoon into a casserole dish. Dot with remaining butter and sprinkle bread crumbs over the top. 1 lb bacon, cut into 1/4 inch chunks
1 lb leek, white and light green parts only, sliced 1/8-inch thick
2 1/2 lbs potatoes, peeled and halved lengthwise and cut 1/4-inch thick
1 teaspoon salt
1/2 teaspoon pepper
3/4 lb turnip, peeled and halved lengthwise and cut 1/4 inch thick
1 carrot, peeled and grated
1 1/2 teaspoons fennel seeds, crushed
1/2 cup red wine
2 tablespoons parsley, minced

Steps:

  • In a skillet over medium-high heat fry bacon until golden, stirring frequently (10 minutes). Remove with a slotted spoon and drain on paper towels.
  • Pour off bacon fat from skillet and reserve.
  • Heat 1 tablespoon of the bacon drippings in the skillet over medium heat.
  • Add leeks to skillet cooking until softened and starting to brown (8-10 minutes). Transfer to a bowl.
  • Heat another tablespoon of the bacon dripping in the skillet over medium-high heat. Add half of the potatoes and cook until tender and golden brown, tossing and seasoing with 1/4 teaspoon salt and 1/8 teaspoon pepper (15 minutes). Add potatoes to bowl (with leeks).
  • Repeat with remaining potoates.
  • Heat 1 tablespoon bacon drippings in skillet over medium high heat. Add turnips and cook until tender and starting to brown, seaoning with 1/4 teaspoon salt and 1/8 teaspoon pepper (5 minutes). Add to bowl (with potatoes and leeks).
  • Add carrot to skillet, stirring for 2 minutes before adding to bowl.
  • Add remaining salt (1/4 teaspoon) and pepper (1/8 teaspoon) and fennel seeds to bowl and toss.
  • Spread half of the vegetables in a 13 x 9 x 2 inch baking dish. Sprinkle with bacon and cover with remaining vegetables. Chill to room temperature and then cover and chill overnight.
  • Preheat oven to 425-degrees F.
  • Bring vegetables to room temperature. Pour wine over all.
  • Bake until wine has evaporated and top is browned (30 minutes).
  • Sprinkle with parsley.

2 medium turnips, peeled and sliced very thin
1 leek, diced
4 clove garlic, minced
4 Tbsp butter
2 c gruyere cheese, shredded
1/2 c chicken bouillon
1/2 c cream or half and half
black pepper

Steps:

  • 1. Preheat oven to 375 F. This is a layered dish in an oven proof skillet, so you will be creating layers of turnips, leeks, garlic, cheese, bouillon, cream and pepper.
  • 2. Peel turnips. I used a mandolin slicer to make thin slices. Smash garlic cloves and finely dice. Wash leek well and dice.
  • 3. In your skillet dice up 1 tablespoon of butter, cover the bottom with a layer of sliced turnips, a little of the leeks, garlic, and cheese. Drizzle a little of the chicken bouillon and cream over the top of the layer and sprinkle with course-ground pepper. Top with another tablespoon of butter.
  • 4. Repeat this process again and again until the turnip slices are all used. Top the final cheese layer with a little more butter. I actually got 3 layers out of just 2 medium turnips.
  • 5. Bake in preheated oven for 35-45 minutes or until cheese is golden brown and bubbly and turnips test to done.
