"Our minister's wife served this and was kind enough to share the recipe," recalls Helen Phillips of Greensburg, Indiana. "It's very good." TIP: Feel free to replace the stuffing croutons with crushed stuffing mix.

3 cups frozen chopped broccoli
1/4 cup chopped onion
4 tablespoons butter, divided
2 tablespoons all-purpose flour
2-1/4 cups milk
1/2 cup shredded cheddar cheese
2 cups cubed fully cooked ham
1-1/2 cups seasoned stuffing cubes, divided

Steps:

  • Cook broccoli according to package directions. Meanwhile, in a large saucepan, saute onion in 3 tablespoons butter until tender. Stir in flour until blended; gradually add milk. Bring to a boil; cook and stir for 2 minutes or until thickened. Reduce heat; stir in cheese until melted. , Drain the broccoli. Add broccoli, ham and 1 cup stuffing mix to cheese sauce. Transfer to a greased 2-qt. baking dish. Melt remaining butter; toss with remaining stuffing mix. Sprinkle around edge of casserole. Bake, uncovered, at 350° for 25-30 minutes or until golden brown.

12 to 16 ounces broccoli florets (frozen or fresh)
3 tablespoons butter
3 tablespoons flour
1 teaspoon dry mustard
1/2 teaspoon salt
Dash of pepper
1 1/2 cups milk
3/4 cup cheddar cheese (shredded)
4 slices ham (cooked)
2 tablespoons butter (melted)
1/2 cup panko breadcrumbs
Optional: 1 tablespoon onion (finely minced)

Steps:

  • Preheat the oven to 375 F.
  • Butter a 1 1/2-quart casserole dish.
  • Place the broccoli in a saucepan. Add about 1 inch of water and bring to a boil over medium-high heat. Cover the pan and reduce the heat to low. Cook until just barely tender, or about 3 to 4 minutes.
  • Meanwhile, in a saucepan over medium heat, melt the 3 tablespoons of butter. Add the flour and cook, stirring, for 1 to 2 minutes. Add the dry mustard, salt, and pepper. Gradually add the milk and minced onion, if using. Continue to cook until thickened, stirring constantly.
  • Add the cheese to the sauce mixture and stir until it has melted. Remove the sauce from the heat.
  • Drain the broccoli and put it in the prepared casserole dish.
  • Add the ham to the casserole dish and then pour the sauce over the ham and broccoli mix.
  • Combine the 2 tablespoons of melted butter and panko breadcrumbs. Stir to coat the crumbs and then sprinkle over the casserole.
  • Bake the casserole in the preheated oven for 20 to 25 minutes.

14 ounces whole wheat rotini pasta
1 (10 ounce) package frozen broccoli
1 tablespoon olive oil
2 cups diced fully cooked ham
1 (15 ounce) jar Alfredo sauce
½ cup 2% milk
ground black pepper to taste
1 cup shredded Colby-Monterey Jack cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking dish.
  • Bring a large pot of lightly salted water to a boil; cook the pasta in the boiling water, stirring occasionally, until tender but not mushy, about 10 minutes. Drain.
  • Thaw the broccoli in a microwave oven until you can break it apart into small pieces.
  • Heat the olive oil in a large skillet over medium heat; cook and stir the diced ham in the hot oil until the edges start to brown, about 10 minutes. Stir in the broccoli and cook and stir until any excess water has cooked away and the ham and broccoli are hot. Pour in the jar of Alfredo sauce and the milk; stir to blend, sprinkle with pepper, and add the cooked pasta. Stir everything together to coat the pasta with sauce and bring to a simmer.
  • Spread the bubbling pasta mixture into the prepared baking dish, top with shredded Colby-Monterey jack cheese, and bake in the preheated oven until the casserole is hot and the cheese is melted and starting to brown, about 30 minutes.

When wondering what to make with leftover turkey, give this broccoli casserole a try. It's savory, creamy, cheesy and really easy to make. The Swiss cheese and butter cracker crumbs on top are a nice finish to the dish. This is a filling casserole and a great way to use Thanksgiving leftovers.

1 c long grain rice, uncooked
3 c leftover turkey, chopped
2 c broccoli, chopped and cooked (can use 2 10 oz frozen)
1 can(s) cream of mushroom soup (10 oz)
1 1/2 c milk, whole
1/2 c turkey broth
1/2 c mayonnaise, (I use Best Foods or hellmans)
2 stalks of celery, chopped
1/2 medium onion, chopped
8 oz Swiss cheese, shredded and divided (save 4 oz)
TOPPING:
handful of Ritz crackers, crushed
4 oz Swiss cheese, saved

Steps:

  • 1. Heat oven to 350. Grease 9x13" baking dish.
  • 2. Put in a large bowl all ingredients EXCEPT cheese; stir.
  • 3. Add 4 oz cheese and stir again.
  • 4. Pour into greased 9x13" pan.
  • 5. Cover with aluminum foil. Bake for 45-50 minutes until rice is done.
  • 6. Uncover and top with crushed crackers and 4 oz of cheese.
  • 7. Bake another 10 minutes until cheese is melted and browned.

2 -2 1/2 cups ham, cooked and diced
1 lb broccoli, chopped (if using frozen rinse under hot water and drain VERY well)
1/2 cup onion, peeled and chopped
1/4 cup red bell pepper, seeded and chopped (can use jarred pimientos instead)
1 cup sharp cheddar cheese, shredded
1 cup swiss cheese, shredded
1/2 teaspoon mustard powder
3 cups low-fat milk
4 eggs, lightly beaten
1 cup Bisquick baking mix

Steps:

  • Preheat oven to 350°F
  • Lightly grease/spray a 13 x 9 baking dish.
  • In a large bowl, toss together the ham, broccoli, onions, red pepper, cheeses and dry mustard powder.
  • Mix very well and pour into the prepared baking dish.
  • In a separate bowl, whisk together the milk, eggs, and Bisquick.
  • Pour over the top of the other ingredients and bake.

1/4 cup chopped onion
1/4 cup chopped celery
1/4 cup butter, cubed
4 cups cubed cooked turkey breast
1 package (16 ounces) frozen broccoli florets, thawed
1 can (10-3/4 ounces) condensed cream of mushroom soup, undiluted
1 can (10-3/4 ounces) condensed cream of chicken soup, undiluted
1 cup cooked rice
1/2 cup shredded part-skim mozzarella cheese
1 can (2.8 ounces) French-fried onions

Steps:

  • In a large skillet, saute onion and celery in butter until tender. Stir in the turkey, broccoli, soups and rice; transfer to a greased shallow 2-1/2 qt. baking dish., Bake, uncovered, at 350° for 25-30 minutes or until bubbly. Sprinkle with cheese and French-fried onions; bake 5 minutes longer or until cheese is melted. Freeze option: Sprinkle cheese and French-fried onions over unbaked casserole. Cover and freeze. To use, partially thaw in refrigerator overnight. Remove from refrigerator 30 minutes before baking. Preheat oven to 350°. Bake casserole as directed, increasing time as necessary to heat through and for a thermometer inserted in center to read 165°.
