1 pound lean ground turkey
1/2 teaspoon garlic powder
½ teaspoon onion powder
1 1/2 Tablespoons ketchup
1 Tablespoon Dijon mustard
1 teaspoon Worcestershire sauce
¾ teaspoon salt
½ teaspoon freshly ground pepper
1/3 cup bread crumbs
1 egg
4 buns
1 tablespoon canola oil (, or use pan spray)
Condiments: ketchup, mustard, mayonnaise, BBQ sauce
Toppings: lettuce, tomato, onion, pickles, avocado

Steps:

  • Mix together: To a mixing bowl add turkey, garlic powder, onion powder, ketchup, mustard, Worcestershire sauce, salt and pepper, egg and breadcrumbs. Using a fork, mix together-try not to mix it too much.
  • Shape into 4 patties about ½ inch thick- they will be really moist.
  • Use your thumb to make a depression in the center of each patty. If grilling, place the patties on a parchment lined plate and freeze for 20 minutes.

Blended Beef, White Bean and Squash Burgers image

This smoky, juicy burger is a three-in-one combination of a classic beef burger, a veggie burger and a bean burger. It's a delicious and easy way to cut down on meat while still getting lots of satisfying flavor. After you've tried this version, put your own spin on it by subbing in your favorite spice blend instead of the paprika, garlic and onion powder used here.

3/4 cup canned (drained and rinsed) white navy beans
1 teaspoon smoked paprika
1 1/4 teaspoons garlic powder
1 1/4 teaspoons onion powder
8 ounces peeled butternut squash, cut into 1/2-inch dice (about 2 cups)
1 tablespoon extra-virgin olive oil
Kosher salt and freshly ground black pepper
12 ounces 92 percent lean ground beef
2 tablespoons canola oil
4 slices sharp Cheddar, each slice cut in half
4 large sesame seed hamburger buns, lightly toasted
4 leaves green leaf lettuce
4 thick slices beefsteak tomato
Ketchup, Dijon mustard and mayonnaise, for serving

Steps:

  • Position a rack in the center of the oven and preheat to 425 degrees F.
  • Add the beans, smoked paprika, garlic powder and onion powder to a large bowl. Stir to combine, then set aside.
  • Combine the butternut squash, olive oil, a large pinch salt and a couple grinds black pepper on a small baking sheet. Toss to coat and spread in an even layer. Roast in the oven until the squash is tender and deeply browned in spots, about 25 minutes, rotating the baking sheet once halfway through the cooking time.
  • Add the squash to the bean mixture and stir to combine. Allow to cool completely.
  • Once cooled, use a fork to roughly mash the squash and beans. It should be mostly smooth but with small chunks of squash and beans throughout. Add the beef and 1/2 teaspoon salt and use your hands to mix until combined. Divide into 4 portions and form each into a patty about 4 inches in diameter and a little more than 1/2 inch thick.
  • Heat a large cast-iron skillet over medium-high heat. Once the pan is hot, add the canola oil and swirl to coat. Season the patties liberally on both sides with salt and pepper and add to the pan. Cook until deeply browned and a crust is formed on the first side, 3 to 4 minutes. Flip carefully and cook until the second side is also browned, 2 to 3 minutes. Layer 2 pieces of the cheese (1 slice total) on top of each patty, then cover the pan and cook until cheese is just melted, about 1 minute.
  • Layer the patties, lettuce and tomato on the toasted hamburger buns and serve ketchup, mustard and mayonnaise alongside.

1/3 cup finely chopped onion
1/3 cup finely chopped green pepper
1/4 teaspoon salt

1 can (10 ounces) diced tomatoes and green chilies, undrained
2 tablespoons chopped fresh cilantro

Steps:

  • In a large bowl, combine first 5 ingredients. Add turkey; mix lightly but thoroughly. Shape into four 1/2-in.-thick oval patties., In a small saucepan, heat beans and tomatoes over medium heat, 8-10 minutes, stirring occasionally. Remove from heat; stir in cilantro. Keep warm., Grill patties, covered, over medium heat or broil 4-5 in. from heat until a thermometer reads 165°, 4-5 minutes per side. Serve with rice and bean mixture. Freeze option: Place patties on a plastic wrap-lined baking sheet; wrap and freeze until firm. Remove from pan and transfer to a large resealable plastic bag; return to freezer. To use, grill or broil frozen patties as directed, increasing time as necessary for a thermometer to read 165°.

¾ cup grated Parmesan cheese

Turkey burgers are much leaner than hamburgers, but they can be dry and dull. Moisten them by adding ketchup and a bit of grated onion to the ground turkey - or mayonnaise and a bit of mustard. The idea is to emphasize condiments, and keep the turkey moist.

1/2 medium onion
1 pound lean ground turkey
1 tablespoon Worcestershire sauce
2 tablespoons ketchup
3/4 teaspoon salt
Freshly ground pepper to taste
4 hamburger buns, preferably whole wheat
1 tablespoon canola oil, or use pan spray
Sliced tomato
Sliced onion
Iceberg lettuce
Pickles
Sliced red pepper
Ketchup and mustard

Steps:

  • Grate the onion on the fine holes of a grater. You should have about two tablespoons of grated onion (and a lot of juice, which you can discard). Place in a bowl with the ground turkey, Worcestershire sauce, ketchup, salt and pepper. Using a fork, mix together well. Shape into four patties - the mixture will be quite moist - and press the patties into ½-inch thick rounds.
  • Heat the canola oil in a nonstick griddle or large nonstick frying pan over medium-high heat. (Alternately, spray the griddle or pan with pan spray.) When you can feel the heat while holding your hand just above griddle or pan, cook the patties for five minutes on each side. Serve on buns, with the condiments of your choice.

1/3 cup cheddar cheese, diced
12 oz lean ground turkey
1/4 tsp salt
1 cup kidney beans, drained and rinsed
1/3 cup breadcrumbs
2/3 cup chopped onion
1/3 cup chopped fresh cilantro
2/3 cup salsa (plus more for topping)
1 tbsp canola oil
1 cup green-leaf lettuce (about 4 large leaves)
4 English muffins, split and toasted

Steps:

  • In a large bowl, combine egg white, cheese, turkey, salt, kidney beans, breadcrumbs, onion, cilantro, and salsa and mix thoroughly. Divide the mixture and form into 4 patties. Tuck any pieces of cheese into the burgers with your fingertip to prevent scorching. Heat oil in a large nonstick pan over medium heat. Add burgers and cook 6 to 7 minutes per side or until cooked through. Serve on English muffins, accompanied by lettuce and extra salsa (to use as a topping).

WHITE BEAN BURGERS

These have a delicate texture and a wonderful savory taste. They're a little tricky to turn, as they can fall apart. Don't make them too thick and use an offset spatula, and it will be easier for you. They should be cooked on a flat griddle or pan; don't try to grill them on a barbecue.

2 cans white beans, drained and rinsed
2 tablespoons extra virgin olive oil
1 small onion, finely chopped
Salt to taste
2 to 3 large garlic cloves (to taste), green shoots removed, minced
2/3 cup finely grated carrot
3 tablespoons freshly squeezed lemon juice
1/4 cup finely chopped parsley
2 teaspoons minced fresh sage or thyme
1/2 cup fresh bread crumbs
1 egg, beaten
Freshly ground pepper to taste
Whole grain hamburger buns and the condiments of your choice

Steps:

  • Heat 1 tablespoon of the olive oil in a medium-size skillet and add the onion. Cook, stirring, until tender, about 5 minutes. Add a pinch of salt, the garlic and the grated carrot, and continue to cook for another minute or two, until fragrant and the carrot has softened slightly. Remove from the heat.
  • In a food processor fitted with the steel blade, puree the beans with the lemon juice. Transfer to a bowl and stir in the onion mixture, the parsley, sage or thyme, the bread crumbs and the egg. Season to taste. Shape into patties, ½- to ¾-inch thick. Set on a parchment-covered baking sheet and cover with plastic wrap. Refrigerate for 1 to 2 hours.
  • Heat the remaining oil in a large, heavy skillet or on a griddle over medium heat and brown the patties for 4 minutes on each side, being very careful when you turn them over. An offset spatula works well for this. Serve on whole grain buns, with the condiments of your choice.

1/2 cup canned small white beans, rinsed and drained
3 tablespoons olive oil
1/2 clove garlic, minced
2 tablespoons finely diced red bell pepper
3 tablespoons plain dried breadcrumbs
1 1/2 teaspoon Worcestershire sauce
1 large egg
1 tablespoon thinly sliced chives
1/2 pound ground turkey
Kosher salt and freshly ground black pepper, to taste
8 slices (1/2 inch thick) good country bread (like ciabatta), toasted

Steps:

  • Combine the white beans, 1 tablespoon of the olive oil, and the garlic in a large bowl. Using a fork, lightly smash the beans and mix with the oil and garlic until blended. Add the red pepper, breadcrumbs, Worcestershire sauce, egg, and chives. Mix until blended. Crumble the ground turkey and add it to the bowl, along with 1/2 tsp. salt and a generous sprinkling of pepper. Gently mix with a fork or your hands until just blended; don't overmix or the burgers will be tough. Fill a medium bowl with water, moisten your hands, and shape the meat into four patties about 3 inches in diameter and 3/4 inch thick. Heat the remaining 2 tablespoons olive oil in a large nonstick skillet over medium heat. Cook the burgers until the bottoms are browned, 4 to 5 minutes. Flip the burgers and continue cooking until they're firm to the touch and register 165°F on an instant-read thermometer, another 5 to 8 minutes. Serve immediately on the toasted bread.
