¼ cup salted butter
½ (8 ounce) package fresh mushrooms, thinly sliced
½ cup minced onion
3 cloves garlic, minced
1 pound ground turkey
2 tablespoons all-purpose flour
1 teaspoon salt
1 teaspoon ground black pepper
2 tablespoons Worcestershire sauce
1 (10.75 ounce) can condensed cream of mushroom soup with roasted garlic
⅓ cup milk
⅓ cup water
½ cup sour cream

Steps:

  • Fill a large pot with lightly salted water and bring to a rapid boil. Cook egg noodles at a boil until tender yet firm to the bite, 7 to 9 minutes. Drain and keep warm.
  • Meanwhile, heat butter in a large saucepan or deep skillet over medium heat. Saute mushrooms, onion, and garlic until soft, 5 to 7 minutes. Stir in ground turkey and cook until browned and no longer pink, 5 to 7 minutes more. Stir in flour, salt, and pepper; cook for 5 minutes. Mix in Worcestershire sauce.
  • Stir in soup, milk, and water. Bring to a simmer and cook, uncovered, for 10 minutes. Add sour cream and stir until heated through. Serve over egg noodles.

1 tablespoon butter
1/4 cup chopped onion
3 tablespoons all-purpose flour

1 can (4 ounces) sliced mushrooms, drained
1/2 teaspoon dried rosemary, crushed

1 pound lean ground turkey
2 cups sliced fresh mushrooms
1 medium onion, chopped

2 tablespoons Worcestershire sauce
1 tablespoon Montreal steak seasoning

  • Cut squash in half lengthwise; discard seeds. Place squash cut side down on a microwave-safe plate. 2 minced garlic cloves

1 small onion, finely chopped

1 tablespoon Dijon mustard
1/4 cup heavy cream
1/2 cup sour cream

Steps:

  • Heat large non-stick skillet over high heat and sear meatballs on all sides, for about a minute. Remove to a plate.
  • In a clean wide skillet, heat butter. Sweat onions and add mushrooms and sauté over medium heat until deep golden, about 20 minutes.
  • While this is cooking, blend broth, mustard, heavy cream and sour cream together. Lower heat.
  • Add flour and cook stirring for a minute.
  • Whisk in liquids, and any meat juices and simmer, without boiling until sauce thickens, about 5 minutes.
  • Return meatballs to sauce and heat, without boiling until meat is warmed through. Season to taste with salt and pepper.

1 tablespoon butter
2 tablespoons canola oil, divided
1 large white onion, thinly sliced

Even though this is a healthy makeover dish, it is just as good, if not better, than the original! I always pack the meatballs together tightly before placing them in the pan, and turn them over halfway through the cooking time. Also, sometimes I make the gravy sauce in a crockpot and let the cooked meatballs stew in there for a few hours. Just a few suggestions! Enjoy!

1/2 cup rolled oats

¾ cup milk
1 teaspoon Dijon mustard
1 pound egg noodles
2 tablespoons unsalted butter
1 cup sour cream
Kosher salt and freshly ground pepper
Chopped fresh flat-leaf parsley, for garnish
Special Seasoning:
¼ cup all-purpose flour
2½ teaspoons seasoned salt
¼ teaspoon ground white pepper
2 teaspoons garlic powder
1 teaspoon sugar
1 teaspoon dried thyme
½ teaspoon ground nutmeg

Steps:

  • In a large, heavy saucepan, heat the oil over medium heat. Add the onion and mushrooms and cook for about 5 minutes, or until soft. Add the turkey, breaking it up with a spoon, and cook until browned. Add the special seasoning ingredients and stir to thoroughly combine. Stir in the broth, milk and mustard. Bring to a boil over high heat then reduce heat to a simmer and cook, uncovered, for 10 minutes, until nicely thickened. While the sauce is simmering, cook the egg noodles in a large pot of salted boiling water for 8-9 minutes, or until al dente. Drain, return noodles to the pan, and toss with the butter so the noodles won’t stick together. Cover loosely to keep warm. Stir the sour cream into the sauce and heat through. Add salt and pepper to taste. Add to the warm buttered egg noodles and toss to coat. Served garnished with parsley.

2 tablespoons olive oil
1 pound ground turkey
1 medium onion, chopped
2 cups sliced mushrooms
1/3 cup dry white wine
Dash of nutmeg
Salt and pepper
1 cup lowfat cottage cheese
1/2 cup plain lowfat yogurt
1 tablespoon lemon juice
8 ounces fettuccine, freshly cooked
Paprika

Steps:

  • Heat oil in heavy large skillet over medium heat. Add turkey and onion and cook until turkey is brown, stirring occasionally, about 12 minutes. Mix in mushrooms, wine and nutmeg. Season turkey with salt and pepper. Reduce heat. Simmer 15 minutes.
  • Puree cottage cheese, yogurt and lemon juice in blender or processor until smooth. Add to turkey and stir until heated through (do not boil). Place fettuccine on platter. Pour turkey over. Sprinkle with paprika.

1 1/2 pounds lean ground beef or turkey
1 small onion, chopped (about 1/2 cup)
1 clove garlic, finely minced
1 teaspoon salt
1/2 teaspoon pepper
8 ounces sliced white button mushrooms
4 ounces light cream cheese, cubed
2 cups low-sodium beef broth
1/2 cup lowfat milk
3 tablespoons flour
1/2 cup light sour cream
Salt and pepper to taste
Cooked egg noodles or rice for serving

Steps:

  • Directions 1.In a large nonstick skillet, cook the meat, onion, garlic, salt and pepper, on medium-high heat, stirring occasionally to break up the meat into small pieces, until the meat is almost cooked through but still slightly pink, about 5 minutes. Drain excess grease. Add sliced mushrooms and cook until the mushrooms are soft and browned and the meat is cooked through, another 5 minutes or so. 2.Add the cubed cream cheese and let the cream cheese melt over medium heat, about 2-3 minutes, before stirring in. Mix gently until the cream cheese is incorporated throughout the meat mixture. In a large liquid measuring cup, combine the beef broth and milk. Whisk in the flour until the mixture is smooth and there are no lumps of flour remaining. 3.Stir the beef broth/milk mixture into the meat and cook over medium or medium-high heat, stirring occasionally. Let the mixture bubble and simmer until slightly thickened, 3-4 minutes. Stir in the sour cream and add additional salt and pepper to taste. Serve over cooked egg noodles or hot, cooked rice. Sprinkle each serving with fresh parsley, if desired.
