Crustless Turkey Sausage, Cheese & Mushroom Quiche image

6 eggs, beaten
1 c turkey sausage, cooked and crumbled
1/2 c sliced mushrooms, sautéed in extra-virgin olive oil with a pinch of sea salt and black pepper
3 c shredded mild cheddar or sharp cheddar cheese
1/8 tsp cheyenne pepper, optional
sea salt, to taste
black pepper, to taste

Steps:

  • 1. Preheat oven to 350°. Grease a 9-inch deep-dish pie pan with non-stick cooking spray, set aside. In a large bowl, add eggs and beat, add turkey sausage, mushrooms, cheese, peppers and salt, stir until ingredients are well incorporated. Pour mixture into prepared pie pan. Bake for 30 - 40 minutes, or until eggs are cooked and set. Let cool 5 minutes before slicing and serving. Note: You can use a variety of veggies in place of the mushrooms such as; asparagus, spinach, zucchini etc. You can use cooked, crumbled turkey bacon in place of the turkey sausage, you can also layer thinly sliced tomatoes, or chopped sun-dried tomatoes on top of the quiche before baking.

Filling:
1 pkg. Knorr leek soup mix
1 pound hot turkey sausage
10 oz. pkg. frozen chopped spinach, thawed well, thoroughly drained and pressed dry**
1 1/2 cups grated cheddar cheese
1/2 teaspoon dried basil
1/8 teaspoon pepper
3 eggs
1 1/2 cups Half & Half
Crust:
2 refrigerated pie crusts, room temperature
1 teaspoon flour

Steps:

  • 1. Preheat oven to 375°F. 2. Let pie crusts stand at room temperature for 15 minutes. 3. Meanwhile, remove casings from turkey sausage and brown in skillet until fully cooked. 4. Unfold pie crusts and smooth out lines. Brush 1 crust with 1 teaspoon flour. Place crust, floured side down into 11-inch diameter pie or quiche pan. Use remaining crust to form a thicker rim along the outer edge. 3. In large bowl, combine leek soup mix, cooked turkey sausage, drained spinach, cheese, basil, and pepper. Mix well and spread into pie crust. 4. In medium bowl, beat eggs and half & half until well blended. Pour over sausage mixture. 5. Bake at 375°F for 45 minutes. 6. Let stand for 10 minutes before serving. **Note: make sure to drain the spinach well or the quiche will be soggy. Firmly press the (defrosted) spinach into a small gauge strainer using a large spoon until it is as dry as possible.

8 low-calorie bread, thinly sliced
8 ounces turkey sausage, crumbled (or use leftover turkey)
4 ounces cheese, grated
2 eggs
1 cup nonfat milk
1/2 teaspoon mustard
1/2 teaspoon Worcestershire sauce
1 tablespoon dry onion flakes
1 tablespoon parsley
4 teaspoons parmesan cheese
to taste sage (optional)

Steps:

  • Spray 9 x 13-inch dish with Pam.
  • Trim crust from bread.
  • Place crusts in blender and blend until crumbled.
  • Place bread over bottom of dish.
  • Brown sausage and drain.
  • Layer over bread.
  • Mix bread crumbs with remaining ingredients and pour over bread and sausage. Bake at 350 degrees for 25 to 30 minutes, or until puffed and firm.

1/4 cup butter or margarine, softened
2 tablespoons boiling water
1 cup shredded Italian-style cheese blend (4 oz)
1 cup cooked turkey sausage
4 medium green onions, sliced (1/4 cup)
1 1/2 cups half-and-half
3 eggs
1 teaspoon chopped fresh basil leaves
1/4 teaspoon ground red pepper (cayenne)

Steps:

  • Heat oven to 400°F. Spray 9-inch glass pie plate with cooking spray. In small bowl, stir Bisquick mix and butter until blended. Add boiling water; stir vigorously until soft dough forms. Press dough on bottom and up side of pie plate, forming edge on rim of pie plate.
  • Sprinkle cheese, sausage and onions over crust. In small bowl, beat half-and-half and eggs with fork or wire whisk; stir in basil and red pepper. Pour into crust.
  • Bake 30 to 35 minutes or until knife inserted in center comes out clean. Let stand 10 minutes before serving.

1 deep dish 8 or 9-inch pie crust
6 eggs
1 cup shredded cheddar cheese
1 pound turkey sausage, cooked and crumbled
1/2 teaspoon thyme
1/2 teaspoon ground black pepper
1/2 teaspoon salt
1/4 teaspoon dried rosemary
8 to 10 baby asparagus spears, cut into 2-inch lengths
3 tablespoon chopped green onions

Steps:

  • Heat a large skillet to medium-high and cook sausage.
  • Meanwhile, blind back the pie crust. Simply prick the bottom with a fork a couple of times then bake for 10 minutes at 350 degrees.
  • When sausage is cooked, drain on paper towels.
  • Layer sausage then asparagus and green onions in pie crust.
  • In a bowl, whisk eggs, thyme, pepper, salt, and rosemary together.
  • Slowly pour egg mixture over sausage into pie crust.
  • Top with cheese.
  • Bake at 350 25 to 27 minutes or until center is set.
  • Allow to cool 2 to 3 minutes before slicing.
  • Serve hot.
