TURKEY PASTRAMI ON PUMPERNICKEL

3 cups water
1/4 cup dark brown sugar
1/4 cup kosher salt
1/4 cup juniper berries, crushed
1/4 cup freshly cracked black peppercorns
8 cloves garlic, smashed
Pinch red pepper flakes
1 (5-pound) fresh bone-in turkey breast
1/2 cup juniper berries
1/4 cup black peppercorns
1/4 cup dark brown sugar
1 teaspoon red pepper flakes
1 cup hickory chips
8 pieces pumpernickel or dark rye bread
2 tablespoons mayonnaise
1/2 red onion, sliced very thin
2 tomatoes, ends trimmed, sliced in 8 (1/4-inch) slices
4 romaine lettuce leaves, trimmed
2 tablespoons stone-ground mustard

Steps:

  • For the brine: In a medium saucepan, bring to a boil all ingredients except the turkey. Simmer until sugar and salt are dissolved. Let cool completely. Double a one gallon re-sealable bag and fill with brine. Add turkey, seal bags and place in a shallow pan in the refrigerator for 5 to 7 days. (Just in case of leaking, check occasionally.) Remove breast from brine and rinse and dry well.
  • For the rub: Pulse all the ingredients in a spice grinder or food processor until it becomes a coarse paste. Rub mixture all over turkey breast. Wrap tightly in plastic wrap and refrigerate resting in a bowl for 24 hours.
  • To cook: Soak the chips submerged in water for 15 minutes. Place oven rack to position 4 inches below broiler. Preheat broiler on high. Drain chips and place in a 2 pound aluminum loaf pan. Broil the chips for 5 minutes, stir broil another 2 minutes. Remove to lower third of oven. Preheat oven to 250 degrees F. Place turkey skin side up in a pan fitted with a roasting rack. Place oven rack used to broil the chips in to the center of oven and roast turkey above smoking chips for one hour.
  • Increase the heat to 325 degrees F if convection, 350 degrees F if standard oven. Carefully turn over and continue to roast until internal temperature reaches 160 degrees F, another 1 hour 20 minutes.
  • Remove turkey from oven. Cover loosely with foil and cool.
  • To make the sandwich: Slice pastrami very thin. Toast bread. Spread mayonnaise on 1 piece, layer pastrami, onions, tomato and lettuce on top. Spread mustard on the other piece of toast. Place on top and cut it in half diagonally. Repeat with remaining ingredients.

1 loaf (1 pound) unsliced pumpernickel bread
1/3 cup Thousand Island salad dressing
6 lettuce leaves
2 medium tomatoes, sliced
3 slices red onion, separated into rings
6 slices Swiss cheese
1 package (12 ounces) thinly sliced deli turkey

Steps:

  • Cut bread in half horizontally; spread salad dressing over cut sides. On the bottom half, layer the lettuce, tomatoes, onion, half of the cheese and half of the turkey. Top with remaining cheese and turkey. Replace bread top. Cut into wedges.

A flavorful variation of the old breakfast buffet standby. Prep time includes overnight refrigeration.

4 slice(s) pumpernickel bread, cut into 1/2-inch cubes
1 cup(s) smoked turkey thigh meat, cubed
4 ounce(s) canned mushrooms, drained
2 ounce(s) jarred pimientos, drained (optional)
1 tablespoon(s) dried onion flakes
1 tablespoon(s) dried chives
1 teaspoon(s) garlic powder
1/2 teaspoon(s) salt
1/4 teaspoon(s) ground black pepper
1 cup(s) grated cheddar cheese
1 1/2 cup(s) milk
4 - eggs, beaten

Steps:

  • Preheat oven to 400F. On 10 x 15 x 2-inch jellyroll pan, arrange bread cubes. Bake 5 to 10 minutes or until cubes are dry. Reserve 1/2 cup of bread cubes for topping.
  • Coat a 8 or 9-inch square baking dish with nonstick cooking spray. Layer bread cubes in bottom of dish.
  • In medium-size bowl combine smoked turkey, mushrooms, pimiento )if using), onion, chives, garlic powder, salt and pepper. Spread turkey mixture over bread cube layer and top with cheese. Sprinkle reserved bread cubes over cheese.
  • In same bowl combine milk and eggs; pour over top of bread layer. Cover dish and refrigerate overnight.
  • Take baking dish out of refrigerator and let sit at room temperature fo 30 minutes. Preheat oven temperature to 325F.
  • Bake strata 50 to 60 minutes or until knife inserted in center of strata comes out clean. Allow strata to stand 10 to 15 minutes before serving.

1 tablespoon butter or margarine
1 cup sliced leeks
8 slices (1/2 inch thick) French bread, cut into 1-inch squares (5 cups)
1 cup chopped cooked turkey or chicken
1 tablespoon chopped fresh or 1 teaspoon dried dill weed
2 cups shredded mozzarella cheese (8 ounces)
4 eggs, beaten
2 cups milk
1/2 teaspoon salt
1/4 teaspoon pepper

Steps:

  • In 1-quart saucepan, melt butter over medium heat. Cook leeks in butter about 3 minutes, stirring frequently, until softened; remove from heat.
  • Mix bread cubes, leeks, turkey and dill weed. Spread bread mixture in ungreased square baking dish, 8x8x2 inches. Sprinkle with cheese. Mix remaining ingredients; pour over cheese. Cover tightly and refrigerate at least 4 hours but no longer than 24 hours.
  • Heat oven to 325°F. Uncover and bake 50 to 55 minutes or until knife inserted in center comes out clean. Let stand 10 minutes before cutting.
