1 pint Cream
¼ cup Flour
¼ pounds Butter; divided
6 Fresh mushrooms
1 bunch Green onions; chopped
Parmesan cheese; grated or
½ cup Cheddar cheese; grated
3 slices Crisp bacon per person; or
3 slices Ham; thin per person
3 slices Chicken or turkey per person cooked
Salt and pepper
2 slices Toast per person

Steps:

  • Melt 4 tb butter and add the flour, stirring and cook without letting it brown for a few minutes. Stir in the cream gradually and simmer for 2 or 3 minutes. Cook the mushrooms and the onions in the rest of the butter until transparent and not browned. Add to cream mixture.
  • Correct seasonings. On individual or one large platter, place the toast; top with the bacon or ham, then the sliced chicken or turkey.
  • Cover entirely with the cream sauce. Sprinkle with grated cheese.

8 slices bread, toasted and buttered
leftover turkey, enough to cover the bread
6 slices bacon, fried crisp and crumbled
5 tablespoons butter
6 green onions, finely chopped
4 tablespoons flour
3 cups milk
1 cup grated cheddar cheese
1/4 cup grated parmesan cheese
salt and pepper
1 dash Tabasco sauce
1/2 teaspoon paprika

Steps:

  • Place 2 slices each of the toasted bread on 4 plates.
  • Top bread with the turkey meat and sprinkle the crumbled bacon over the turkey.
  • For the sauce:.
  • Melt the butter in a skillet and sauté the green onions for about 5 minutes.
  • Over low heat, add the flour, stir, and cook for about 3 minutes
  • Slowly add the milk, continuing to stir and bring the mixture to a simmer.
  • As the sauce thickens add 1/2 cup of the cheddar cheese, all of the Parmesan, and salt, pepper, and Tabasco to taste.
  • Simmer and continue to stir until the cheeses are melted. Pour the sauce over the turkey and bacon.
  • Sprinkle the rest of the cheese over the tops, then sprinkle on the paprika. Broil until the cheese melts and serve.
