TURKEY TEA SANDWICHES



Turkey Tea Sandwiches image

Yield 32 sandwiches; 8 to 10 servings

Number Of Ingredients 7

3/4 pound (12 ounces) cream cheese, room temperature
1/2 cup minced scallions (white and green parts)
Pinch kosher salt
Pinch freshly ground black pepper
1 loaf dense raisin-nut bread, unsliced
8 thin slices fresh or smoked turkey breast
Fresh basil leaves

Steps:

  • For the scallion cream cheese, combine the cream cheese, scallions and the salt and pepper in an electric mixer fitted with a paddle attachment. Do not whip.
  • For the sandwiches, have the store slice the bread lengthwise on a meat slicer into 1/4-inch-thick slices. (If that isn't possible, you can slice it crosswise with a very sharp knife.)
  • Lay out 8 slices of bread and spread them all with a thin layer of scallion cream cheese. Place a single layer of turkey on half the slices, cutting the edges to fit the bread. Place the basil leaves randomly on top of the turkey. Top with the other 4 slices of bread, cream cheese side down. Lay the sandwiches on a baking sheet covered with parchment paper, cover with damp paper towels and wrap the sheet with plastic. Refrigerate until the cream cheese is cold and firm. Place the sandwiches on a cutting board and, with a very sharp knife, cut off the crusts. Cut each large sandwich in half crosswise, and then cut each half diagonally, twice, to make a total of 8 small triangles. (If the bread was cut crosswise, follow the assembly directions, then cut off the crusts and cut diagonally, twice, to make 4 small triangles.) Serve chilled.

2 tablespoons mayonnaise
4 ounces sliced or shaved deli turkey
4 slices Provolone cheese ((or your favorite sliced cheese))
Green leaf lettuce
2 slices fresh tomatoes
Salt and pepper to taste

Steps:

  • Lay out all ingredients. Spread mayonnaise on bread slices and layer one slice with sliced turkey, Swiss cheese, lettuce, tomato, salt and pepper, and any other additional toppings.

8 ounces cream cheese, softened
2 tablespoons fresh chives, chopped
4 individual french bread rolls, split
4 lettuce leaves
8 (1 ounce) turkey slices, cooked
1 medium ripe tomatoes, sliced 1/4in
1 medium green pepper, sliced into 1/4in rings
4 swiss cheese, slices

Steps:

  • in small bowl stir together cream cheese and chives.
  • spread on roll halves.
  • to assemble each sandwich, layer bottom half of roll with lettuce leaf, 2 slices turkey, tomato, green pepper and 1 slice cheese.
  • top with remaining roll.

1/2 lb cooked skinless boneless turkey breast
1/2 cup mayonnaise (preferably homemade)
1 tablespoon caviar, preferably black
2 teaspoons chili sauce or 2 teaspoons ketchup
2 teaspoons cognac
1 tablespoon finely chopped chives
8 slices rye bread (toasted, if desired)

Steps:

  • Cut the turkey breast across the grain into very thin slices.
  • Blend the mayonnaise with the caviar, chili sauce or ketchup, Cognac and chives.
  • Spread the caviar mayonnaise on each of four slices of bread and arrange one-fourth of the turkey meat on top.
  • Smear one side of each of the remaining four slices of bread with the mayonnaise mixture and add the slices, smeared side down over the sandwiches.

2 tablespoons salsa
2 green onions, chopped
8 slices sourdough bread
½ pound deli-sliced turkey
4 slices pepperjack cheese
4 tablespoons butter

Steps:

  • Mix the mayonnaise, salsa, and green onions in a small bowl. Spread the seasoned mayonnaise evenly on each slice of bread. Layer the turkey and cheese on 4 of the slices. Top with remaining bread to make 4 sandwiches.

¾ cup chopped red onion
1 tablespoon dried thyme
½ cup mayonnaise
¼ cup coarse-grain brown mustard
8 slices country style French Bread
6 tablespoons butter, softened
1 pound thinly sliced roast turkey
8 slices tomato
8 slices Swiss cheese

Steps:

  • In a small bowl, stir together the red onion, thyme, mayonnaise and mustard. Spread some of this mixture onto one side of each slice of bread. Spread butter onto the other side of the slices of bread.
  • Heat a large skillet over medium heat. Place 4 slices of the bread into the skillet with the butter side down. On each slice of bread, layer 1/4 of the sliced turkey, then 2 slices of tomato, and top with 2 slices of Swiss cheese. Place remaining slices of bread over the top with the butter side up. 1 tablespoon finely chopped chives
8 thin slices rye bread, toasted if desired

Steps:

  • Cut the turkey breast across the grain into very thin slices.
  • Blend the mayonnaise with the caviar, chili sauce or tomato ketchup, Cognac and chives. Spread the caviar mayonnaise on each of four slices of bread and arrange one fourth of the turkey meat on top. Smear one side of each of the remaining four slices of bread with the mayonnaise mixture and add the slices, smeared side down over the sandwiches.
