1/3 pound thinly sliced deli turkey

  • Spread two slices of bread with mayonnaise. Layer with turkey, tomato and cheese; top with remaining bread. Spread outsides of sandwiches with butter. On a hot griddle, grill sandwiches until golden brown, 3-4 minutes on each side.

4 teaspoons butter, room temperature, divided

Steps:

  • Cook bacon in large skillet over medium heat until crisp. Transfer to paper towels. Pour off fat from skillet; reserve skillet.
  • Mash mayonnaise and blue cheese in bowl to coarse puree; season with pepper. Place bread on work surface. Divide cheese mixture among bread slices, spreading evenly. Divide bacon, radicchio, and turkey between 2 bread slices. Top with remaining bread, cheese side down. Melt 2 teaspoons butter in reserved skillet over medium heat. Place sandwiches in skillet. 1/2 turkey breast, bone in, about 4 pounds
Olive oil
Salt and coarsely ground black pepper
12 slices bacon, cut 1/2-inch thick
4 ounces soft goat cheese
4 ounces prepared mayonnaise
1 tablespoon finely chopped fresh sage leaves
12 (1-inch) thick slices country white bread, grilled
2 green tomatoes, cut into 1/4-inch thick slices

Steps:

  • Preheat grill to high. Brush entire breast with oil and season well with salt and coarsely ground black pepper. Place the breast on the grill, skin-side down, and grill until golden brown and a crust has formed, about 4 to 5 minutes. Reduce the heat of the grill to medium, turn the breast over, close the cover of the grill and continue cooking until a meat thermometer inserted into the thickest part of the breast registers 165 degrees F, about 25 to 30 minutes. Remove the breast from the grill and let rest, loosely tented with foil, for 10 minutes. Slice the breast into 1/4-inch thick slices.

2 (1 1/2 ounce) uncured turkey hot dogs
2 slices whole grain bread
1 tablespoon butter, spread
2 sharp cheddar cheese, deli slices
hot sauce (sriracha)
Dijon mustard
1 teaspoon chopped fresh jalapeno

Steps:

  • Cook turkey hot dogs on medium heat on a greased skillet moving periodically until brown on all sides and heated through the center. Spread buttery spread on one side of bread.
  • Place bread, butter side down on a large skillet or griddle. Place a slice of cheese on each slice of bread. Heat until cheese is melted and bread is golden brown, about 1 minute. Remove from heat. Place hot dog in the center of each slice of bread bread. Garnish the hot dog with a drizzle of sriracha and mustard. Wrap bread around the hot dog and use a toothpick to secure the bread into place. Top with chopped jalapeno.
