TURKEY AND EGG BREAKFAST CASSEROLE

With only 7 ingredients this egg bake is not only easy to prepare it's extremely versatile. This Egg Breakfast Casserole is a delicious way to start your day with wholesome ingredients such as egg, turkey, spinach, and sweet potato. Eating healthy for breakfast is simple and tasty with this healthy breakfast casserole.

1 tablespoon Coconut Oil (plus more for coating the dish)
1 lb Ground Turkey
1/2 teaspoon Paprika
1/2 teaspoon Garlic Powder
12 large Eggs
1 small Sweet Potato (peeled and sliced thin)
1 cup Baby Spinach

Steps:

  • Preheat the oven to 375℉ and grease a 9 x 9 baking dish with coconut oil and set aside.
  • Peel and slice the sweet potato, making sure to cut them 1/4-inch slices (any thicker and they won't be tender). Line the bottom of the greased baking dish with the sliced potatoes in a single layer, some overlap is okay.
  • Melt 1 tablespoon of coconut oil in a medium-sized skillet over medium heat add the ground turkey and season with additional spices if desired. Using a spatula break the meat apart and cook until browned, about 3 to 5 minutes. Drain and place on top of the sweet potato layer.
  • In a medium bowl beat the eggs with a whisk until combined. Add the paprika, garlic powder, and any additional salt and pepper if desired. Pour over the ground turkey layer.
  • Place the dish in the oven and cook for 30 minutes. Carefully slide the dish out, without removing it from the oven, and top with the spinach. Return to its position and continue cooking for 5 to 15 minutes until the center of the casserole is firm. I usually cook my casserole for 40 to 45 minutes in total.

I found this recipe posted on Facebook and change a bit to accommodate for a large crowd. There is many ways to make this a "quick dish" by using egg beaters and already cook sausage. Plus you could change the ingredients to make it less fat and healthier option.

1 can(s) buttermilk grand biscuits
1 lb pork sausage ground
8 eggs
3/4 c milk
1 c shredded mozzarella cheese
1 c shredded cheddar chesse
salt & pepper to taste

Steps:

  • 1. Preheat oven to 425 degrees. Grease a 9x13 pan and set to the side.
  • 2. Brown pork sausage and drain. While browning sausage, open biscuit can and place in baking dish. Mix together eggs and milk. Add Salt & Black pepper to taste to the egg mix.
  • 3. Put sausage over biscuits. Then pour egg mix over biscuits. Spread cheese over top evenly.
  • 4. Bake in Oven for 30 to 35 minutes. Let dish sit for 5 minutes before enjoying.

I got this recipe out of a Sargento Cheese recipe booklet that I got free in the mail. It's very good. The only thing I would recommend is cooking the bisucuits a little longer than called for.

1 (16 ounce) package frozen mixed vegetables, medley such as broccoli, cauliflower and carrots, thawed
2 tablespoons all-purpose flour
4 cups diced cooked turkey or 4 cups cooked chicken
1 (10 3/4 ounce) can condensed cream of mushroom soup or 1 (10 3/4 ounce) can cream of chicken soup, undiluted
1/2 teaspoon dried thyme
1/2 teaspoon fresh coarse ground black pepper
6 slices cheddar and colby cheese
1 (17 1/3 ounce) package refrigerated biscuits

Steps:

  • Toss vegetables with flour in a large bowl. Add turkey, soup, thyme and pepper; mix well.
  • Spread half of mixture into a 13x9 inch glass baking dish. Arrange cheese over mixture; top with remaining turkey mixture. Cover with foil. Bake in a 375° oven for 15 minutes.
  • Separate biscuits; cut each into quarters. Uncover casserole arrange biscuit dough evenly over top of casserole. Return to oven and bake 18 minutes more or until biscuits re deep golden-brown and sauce is bubbly.
  • Let stand 5 minutes or until sauce thickens.
