Steps:

  • Bread: Use 3 slices of a good white sandwich bread (pain au lait or Pullman loaves are ideal). Be sure to toast it!
  • Lettuce: Bibb and Boston lettuce both have nice small, soft leaves that fit well on the sandwich; shredded iceberg can be unruly.
  • Tomatoes: Add 2 slices of tomato to each layer of a club; season with salt and pepper before you continue building the sandwich.
  • Turkey: Fresh roasted turkey is key. Rub a 2 1/4-pound skinless, boneless turkey breast with olive oil; sprinkle generously with Italian seasoning, salt and pepper. Roast 10 minutes at 425˚ F, then reduce to 350˚ F and roast until the internal temperature is 160˚ F, 15 to 20 minutes. Let cool, then slice.
  • Mayonnaise: Spread a thick layer of mayo on each slice of toasted bread.
  • Bacon: You'll want 3 slices per sandwich (1 1/2 slices in each layer). Halve the slices first, then cook in a skillet over medium heat until crisp.

2 pounds skinless, boneless turkey breast, cut into 2-inch cubes
1 tablespoon vegetable oil, plus more for the grill
1 teaspoon grated lemon zest
1 teaspoon paprika
Kosher salt and freshly ground pepper
12 slices bacon
1 cup mayonnaise
1/4 cup buttermilk
2 tablespoons fresh lemon juice
2 tablespoons chopped fresh parsley
Kosher salt and freshly ground pepper
Split French bread rolls, Little Gem lettuce and halved grape tomatoes, for serving

Steps:

  • Make the kebabs: Combine the turkey, vegetable oil, lemon zest, paprika and 1 teaspoon each salt and pepper in a large bowl; toss to coat.
  • Preheat a grill to medium. Thread the turkey onto six 12-inch skewers. Wrap 2 bacon slices around each skewer, overlapping slightly, to cover the turkey.
  • Brush the grill grates with vegetable oil. Grill the kebabs, turning often, until the turkey is cooked through and the bacon is crisp, about 25 minutes.
  • Meanwhile, make the dressing: Combine the mayonnaise, buttermilk, lemon juice and parsley in a small bowl; season with salt and pepper.
  • Serve the kebabs in rolls with lettuce and tomatoes; drizzle with the dressing.

12 slices microwave ready sliced bacon (recommended: Ready Crisp bacon)
3 hearts romaine lettuce
2 cups pea shoots, radish spouts or bean spouts
3 plum tomatoes, sliced
1/2 medium red onion, chopped
Salt and pepper
1 1/2 pounds rotisserie turkey breast or thick sliced deli roast turkey breast
2 ripe Hass avocados
1 lemon, zested and juiced
1 clove garlic
1 teaspoon salt
2 tablespoons red wine vinegar
1/3 cup extra-virgin olive oil
2 teaspoons hot sauce (recommended: Tabasco sauce), eyeball it

Steps:

  • Crisp the bacon in microwave according to package directions. Remove from microwave and chop. Of course, any bacon or turkey bacon which you have on hand may be substituted. These pre-rendered bacon products simply allow you to keep more heat out of the kitchen by giving you the option of a low-maintenance microwave preparation.
  • Chop romaine lettuce and arrange on large platter. Arrange a bed of pea shoots or sprouts on top of the lettuce then arrange the tomatoes and chopped red onion on top of that. Season the salad vegetables with salt and pepper, to your taste. Scatter chopped bacon onto salad.
  • Remove the rotisserie turkey from the bone with a sharp carving knife. Slice the rotisserie breast meat on an angle into strips. For thick cut turkey from the deli, julienne the meat into 1/2-inch strips. Arrange the sliced turkey down the center of the salad platter.
  • Cut all around the ripe avocados down to the pit. Twist and separate the halved fruit. Remove the pit with a spoon, then scoop the flesh with a spoon into your food processor bowl. Add the zest and juice of 1 lemon to the food processor. Chop garlic on your board and mash with 1 teaspoon salt to paste the garlic. Add garlic paste and the red wine vinegar to the food processor. Place lid on the food processor and turn it on. While the blade is spinning, stream in extra-virgin olive oil and add hot sauce. Stop processor, taste dressing and adjust seasonings. Pour dressing back and forth over the platter evenly when you are ready to serve this simple and so-cool salad meal.

We change the flavor of our chutney in this sandwich with the seasons, but peach chutney is one of our favorites. Use fresh, ripe local peaches. The chutney will keep refrigerated for several weeks and is also great served as a condiment with sharp cheeses. If ripe peaches are not available, an apple or cranberry chutney works in this sandwich as well.

1 1/2 pounds peeled chopped peaches
1 1/2 cups light brown sugar
1 cup cider vinegar
2 3/4 ounces dried pineapple, diced
2/3 cup diced yellow onion
2/3 cup diced yellow bell pepper
1 1/2 teaspoons fresh minced garlic
1/2 teaspoon ground cinnamon (preferably extra-fancy Vietnamese)
1/2 teaspoon dried red pepper flakes
1/2 teaspoon salt
1/4 cup diced crystallized ginger
1 jalapeno pepper, seeded and diced
1 large (about 14-inch) round crepe or flour tortilla
2 ounces grated mozzarella
2 1/2 ounces thinly sliced roast turkey breast
2 slices good thick-cut bacon, cooked and crumbled
1 large handful mixed greens
2 tablespoons Horseradish Aioli, recipe follows
2 cups mayonnaise
1/4 cup prepared horseradish

Steps:

  • For the peach chutney: Combine the peaches, brown sugar, vinegar, pineapples, onions, bell peppers, garlic, cinnamon, red pepper flakes, salt, crystallized ginger and jalapenos in a large saucepan and cook over medium-high heat, stirring frequently, until thickened and "jammy," about 45 minutes.
  • For the turkey club: Fold the crepe in half to form a half-moon shape and place on a hot griddle or large skillet over medium heat. Spread 3 tablespoons chutney evenly over the surface and sprinkle with the mozzarella (save the remaining chutney for another use). Top with the turkey and bacon and allow to rest on the hot griddle until the cheese is melty and the ingredients warmed. Top with the greens and drizzle with the aioli. Pull up one corner of the crepe and fold over to cover half of the sandwich, then roll over one more time in the same direction to enclose all the ingredients and form a cone-shaped sandwich. Press down lightly and allow to rest for another minute or so on the griddle until lightly crisped and warm. Flip and crisp the reverse side. Serve warm.
  • Stir together the mayonnaise and horseradish in a bowl.

TURKEY SALAD WITH WORCESTERSHIRE-CHUTNEY VINAIGRETTE

1 cup Major Grey's mango chutney
1/2 cup peanut oil
1/4 cup Worcestershire sauce
1/4 cup malt vinegar
1 1/2 10-ounce packages ready-to-use spinach, stems trimmed, leaves torninto bite-size pieces
1 12-ounce piece smoked turkey breast or 2 1/2 cups cooked turkey, cut into 1/2-inch cubes
1 1/3 cups crumbled Stilton cheese (about 5 1/2 ounces)
1 cup pine nuts, toasted

Steps:

  • Puree chutney, peanut oil, Worcestershire sauce and vinegar in blender until smooth. (Dressing can be prepared 2 days ahead. Cover and refrigerate.)
  • Combine spinach, turkey, cheese and pine nuts in large bowl. Pour enough dressing over to coat salad. Toss to blend. Season salad to taste with salt and pepper. Serve, passing remaining dressing separately.
