TURKEY CHILI TACO SOUP

cooking spray
1.3 lbs 99% lean ground turkey
1 medium onion (chopped)
1 bell pepper (chopped)
10 oz can rotel tomatoes with green chilies
15 oz canned or frozen corn (drained)
15 oz no salt added kidney beans (drained)
8 oz tomato sauce
16 oz fat free refried beans
1 packet low-sodium taco seasoning (or use homemade)
2 1/2 cups less-sodium chicken broth

Steps:

  • Spray a large pot with cooking spray then brown the turkey over medium heat, breaking up with a wooden spoon as it cooks. When cooked through, add the onions and pepper and cook 2-3 minutes. Add tomatoes, corn, beans, tomato sauce, re-fried beans, taco seasoning and chicken broth. Bring to a boil, cover and simmer about 10-15 minutes.
  • Serve with your favorite toppings such as low fat sour cream, jalapeños, reduced fat cheese, chopped scallions, onions, or chopped fresh cilantro. Freeze leftovers in individual portions for future meals.

I have seen a couple of recipes for taco soup, but this is different. I received it from my ww leader. It is very much like a chili and is so easy. My family loves it and I love it topped with 1 tbsp low fat sour cream.

1 lb extra lean ground beef or 1 lb turkey
1 large onion, diced
2 (15 ounce) cans chili beans
1 (15 ounce) can zesty beans (I use S&W chili beans in a zesty sauce)
1 (15 ounce) can black beans, drained
1 (15 ounce) can corn, undrained
1 (15 ounce) can tomato sauce
1 1/2 cups water
1 (4 1/2 ounce) can chopped green chilies
1 (1 1/4 ounce) package taco seasoning
1 (1 ounce) envelope ranch dressing mix

Steps:

  • Brown meat and onion, drain and add remaining ingredients. Bring to a boil then reduce heat and simmer 30 minutes. 2 points per cup!

Ingredients:
1.3 lbs 99% lean ground turkey

16 oz fat free refried beans
1 packet taco seasoning (you can use 40& less sodium)
2 1/2 cups fat free low sodium chicken broth

  • In a large pot, brown turkey on medium heat, breaking up with a wooden spoon as it cooks. When cooked through, add onions and pepper and cook 2-3 minutes. Add tomatoes, corn, beans, tomato sauce, refried beans, taco seasoning and chicken broth. Bring to a boil and simmer about 10-15 minutes. Serve with a few baked tortilla chips and your favorite toppings such as low fat sour cream, jalapeños, reduced fat cheese, chopped scallions, onions, or chopped fresh cilantro. Freeze leftovers in individual portions for future meals.

This recipe was given to me by my Weight Watcher leader. It is fantastic and only 1 point per cup! I have never measured the number of servings so they are just a guess....but it makes a huge pot!

1 lb 97% fat free lean ground turkey
1 onion, chopped
3 garlic cloves (you can add more if you like)
1 1/2 cups celery, roughly chopped
1 (15 ounce) can tomato sauce
1 (4 ounce) can green chilies
1 (15 ounce) can stewed tomatoes
4 (16 ounce) cans black beans (mix and match ) or 4 (16 ounce) cans kidney beans (mix and match )
1 (1 ounce) packet taco seasoning
1 (1 ounce) packet hidden valley ranch dressing mix
2 teaspoons cumin
1 (16 ounce) bag frozen white corn
1/2 cup water

Steps:

  • Brown the turkey, adding onions, garlic and celery about half way through. One by one add the remaining ingredients. Do not drain anything just dump it in! Heat to boiling and simmer for 30 minutes.
  • This recipe is very flexible - you can add more celery, stewed tomatoes, taco or ranch seasoning and cumin if you'd like to. Sometimes I like to puree the beans before putting them in to make it thicker.
  • This freezes well and just gets better the longer it sits.
