TURKEY CACCIATORE SANDWICHES
Try this take on Italian cacciatore, sandwich-style, made with slow-cooked turkey. Serve hot, on a roll slathered in pesto and topped with mozzarella.

Steps:
- Spray 3 1/2- to 4-quart slow cooker with cooking spray. Place bell pepper and onion in cooker; top with turkey. Mix tomato sauce, vinegar and Italian seasoning in small bowl; pour over turkey and vegetables.
- Cover and cook on Low heat setting 7 to 8 hours.
- Place turkey on cutting board. Use 2 forks to cut or break up turkey into thin pieces; discard bones. Return turkey to cooker. To serve, spread cut sides of rolls with pesto. Fill with turkey mixture, using slotted spoon; top with cheese.

- Heat oil in the large skillet or heavy bottom pot. If using turkey breast, slice it in about 6 even pieces. If using thighs, de-bone them, remove the skin and slice in half. Tenderloin should be sliced in 4-6 pieces.
- Add flour to the flat plate. Dredge each turkey piece in flour, shake it a bit and place in the pot and brown on both sides, about 2 minutes per side. Turkey doesn't need to be cooked all the way.
- Remove turkey to the plate and add onions and bell pepper to the pot or skillet. Saute for 3 minutes, the add garlic and wine. Stir and deglaze the pot.
- Add tomatoes, mushrooms and seasonings. Let in simmer for 10 minutes, stirring.
- Add turkey back, olives and simmer for 10 minutes or until turkey i cooked through.

- Fry the onion and garlic in the oil until softened. Add the tomatoes and sugar, a little splash of vinegar and some seasoning, then simmer for 20 mins until really thick. Stir in the turkey and transfer to a baking dish. Heat oven to 220C/200C fan/gas 7.
- Tear over the mozzarella in chunks, then scatter over the breadcrumbs with a bit more ground pepper. Bake for 20 mins until turkey is piping hot through, and the top is golden and bubbling. Eat with mash, jackets, rice or pasta
