3 tablespoons extra virgin olive oil
1 (10 ounce) package matchstick carrots (cut using kitchen shears)
1 cup frozen bell pepper, chopped
1 large sweet onion, chopped
1 lb ground turkey breast
1/2 cup frozen peas
1 (15 ounce) can petite cut diced tomatoes
6 yukon gold potatoes, peeled and chopped
2 teaspoons Lawry's Seasoned Salt or 2 teaspoons other seasoning, mix
5 -10 dashes Tabasco sauce, to taste
1 (32 ounce) carton nonfat beef broth or 1 (32 ounce) carton beef stock
1/2 cup Worcestershire sauce

Steps:

  • Heat olive oil in large soup pot. Add turkey and seasoning salt. Cook until pink is gone.
  • Add carrots, bell peppers and onions. Cook, stirring until tender.
  • Add peas, tomatoes, beef broth and water to desired consistency (using the beef broth container as a maximum guide). Stir.
  • Add potatoes, Worcestershire sauce and Tabasco. Continue to cook until potatoes mash easily with a fork.
  • Reheats very well.

One of those so, so simple recipes to make before you head for work, especially on those cold days, and then come home to a great comfort meal. Sorry there is no picture, it didn't last long enough. So if anyone makes this and wants to contribute a picture, feel free to.

Number Of Ingredients 5

- 1 lb. turkey burger
- 1 large bag frozen broccoli or 1 fresh head cut up
- 1/2 cored cabbage, chunked
- 1-2 zucchini, sliced into chunks
- 4 c of vegetable, beef, or chicken stock

Steps:

  • Layer turkey burger, broccoli, cabbage, and zucchini into a slow-cooker (I used a 5.5 qt), no need to mix together.
  • Pour stock over the top of everything; season with salt and pepper or with any of your favorite seasonings.
  • Cook on high for 4 hours or on low for 6 hours.
