SPINACH FETA TURKEY BURGERS



Spinach Feta Turkey Burgers image

Savory, rich turkey burgers that won't fall apart (IF you follow my instructions!).

Number Of Ingredients 13

1 bag baby spinach (6 ounces)
4 cloves roasted garlic (finely chopped)
1 teaspoon olive oil
1 pound 93% lean ground turkey
4 ounces crumbled feta cheese
1/2 teaspoon salt
black pepper to taste
4-6 hamburger buns (I like whole wheat here.)
extra olive oil for oiling the grates and brushing the buns before toasting.
mixed greens
mayonnaise
Dijon mustard
Roasted Garlic Whipped Feta

Steps:

  • Pour the teaspoon of olive oil in a heavy skillet with a tight fitting lid over high heat. When it is shimmery and hot add the roasted garlic to the pan and stir for about 10 seconds or until it's fragrant. Add the spinach all at once and flip it a couple of times with tongs. Turn the heat off, add the lid and let sit for 2 minutes. Remove the lid, flip a couple more times, add the lid and leave for 1 more minute. Use the tongs to gently transfer the spinach and garlic to a colander on a plate. Let it rest until room-temperature. Either chill in a tightly covered container in the refrigerator for up to 3 days or proceed to the next step.
  • Roughly chop the wilted spinach and garlic so you can more easily mix it through the ground turkey. Add it to a mixing bowl with the turkey, feta, salt, and pepper. Gently but thoroughly mix everything together until all of the ingredients are evenly distributed. Form into 4 to 6 burger patties that are at least 3/4 of an inch thick. Place the formed patties onto a parchment lined cookie sheet and let it rest in the freezer while you preheat your grill.
  • Preheat your grill to medium-high. Soak a wadded paper towel generously with olive oil and use tongs to rub it over the clean grill grates, heavily oiling them. Ease the burger patties onto the grill and do not move them for 6 minutes, leaving the cover of the grill open. After 6 minutes, flip the burgers just once and let them continue to cook for 8-10 minutes, or until the burgers release from the grill and the interior temperature of the thickest part of the burgers reaches 165°F. Transfer the burgers to a clean plate.
  • Brush each of the insides of the buns with olive oil and toast them directly on the grill just until they have grill marks. Use tongs or a spatula to transfer the buns to a clean plate or baking sheet.
  • Serve each burger on a bun topped as desired.

1 1/2 pounds ground dark meat turkey
1 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
1/3 cup feta cheese, crumbled (preferably goat's milk feta)
2 scallions, minced
1 cup Greek yogurt
1/2 cup grated English cucumber (about 1/4 small peeled cucumber)
1 tablespoon finely minced dill
1 clove garlic, minced or finely grated
1/2 lime, juiced
1 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
5 pita pockets or flatbreads
1 to 2 small avocados, thinly sliced
1 head butter lettuce, leaves separated

Steps:

  • For the turkey burgers: Preheat a grill or grill pan over medium-high heat until hot. Clean and oil the grates.
  • Place the turkey, salt, pepper, feta and scallions in a medium bowl. Mix with your hands until combined. Form into 5 football-shaped patties.
  • Grill the patties until the internal temperature reaches 165 degrees F, 5 to 6 minutes per side. Remove the patties to a plate.
  • While the turkey patties cook, make the tzatziki sauce: Stir together all of the ingredients in a small bowl. Taste and adjust for seasoning, if necessary. Refrigerate until ready to serve, up to 3 days.
  • Lightly grill the pitas, 1 to 2 minutes per side.
  • To assemble: Cut the grilled pita pockets in half. On each of the bottom halves, place 4 to 5 avocado slices, then a turkey patty. Dollop with a generous amount of the tzatziki. Top with a couple of the lettuce leaves. Close the burgers and serve warm.

"MIND BLOWING" TURKEY SANDWICH

1 pint grape tomatoes
2 tablespoons olive oil
1/4 teaspoon kosher salt
2 cloves garlic, smashed and peeled
2 sprigs fresh basil, torn
1/2 cup mayonnaise
1/4 cup whole-grain mustard
8 slices rye bread
8 small leaves butter lettuce
8 ounces thinly sliced roasted turkey breast
8 cornichon pickles

Steps:

  • For the tomatoes: Preheat the oven to 400 degrees F.
  • On a small rimmed baking sheet, spread the tomatoes, olive oil, salt, garlic and basil. Toss well to coat. Roast until the tomatoes are popped and beginning to brown, about 25 minutes. Allow to cool slightly.
  • For the spread: Mix together the mayonnaise and mustard in a small bowl.
  • For the sandwich: Lay out the bread and spread the mayonnaise-mustard mixture on each slice. Working 2 slices at a time, place 2 lettuce leaves on one slice and about 6 roasted tomatoes on the opposite slice. Ribbon 3 slices of turkey on the lettuce. Place the 2 halves together and secure with 2 toothpicks with a cornichon on each one. Continue with the remaining ingredients. Cut in half before serving.

1 teaspoon lemon zest
4 slices sourdough bread
1 large ripe tomato, thinly sliced

1/2 boneless turkey breast (1 3/4 pounds)
1 recipe Basic Marinade
1 sweet onion, cut in 1/4-inch-thick rounds
5 plum tomatoes, cut in 1/4-inch rounds
2 25-inch baguettes, halved lengthwise
1/4 cup extra-virgin olive oil
Coarse salt and freshly ground pepper
2 ounces Parmesan, sliced paper thin
1 cup fresh basil leaves
1 bunch watercress, tough stems discarded

Steps:

  • Remove tenderloin from turkey; cut tender in half lengthwise. Cut breast into 1/2-inch-thick medallions. Cut open two sides of a resealable plastic bag. Place 1 medallion in bag; pound to 1/4-inch thickness with a meat pounder. Transfer to a nonmetal container. Repeat with remaining turkey. Add marinade. Chill for 2 hours.
  • Heat a grill or grill pan. Brush onion, tomatoes, and bread with oil. Season onion and tomatoes with salt and pepper. Grill onion until browned and soft, about 2 minutes per side.
