Turkey spiced with spices and chiles is enrobed in a creamy egg mixture. This turkey egg bake is perfect for holiday brunches.

1 lb ground turkey (you can use sausage or beef, if you prefer)
1/2 onion (chopped for 1/2 cup)
1 tbsp Taco Seasoning Mix
2 tbsp green chiles (chopped)
1 cup pepper jack cheese (shredded)
6 egg (beaten)
1 cup whipping cream
toppings for the egg bake (such as sour cream, Greek yogurt, and salsa, for serving)

Steps:

  • Preheat the oven to 400°. Grease a 9x13-inch baking dish.
  • In a large skillet over medium high heat, brown the turkey and onion, about 5 to 7 minutes. Season with the taco seasoning mix. Spread in the prepared pan.
  • Sprinkle the chiles over the meat.
  • Sprinkle the cheese over the chiles.
  • In a large mixing bowl, combine the eggs and cream. Pour that over the layers in the pan.
  • Bake for 25 minutes or until puffy and browned in spots.

This is an ideal breakfast or brunch to assemble up to a day ahead and bake off in the morning. Healthy cooking doesn't always mean using low-fat products. The full-fat Cheddar and Parmesan together are so satisfying in this easy casserole that a little goes a long way, and they're a terrific complement to lean turkey sausage and spinach.

8 ounces spicy or sweet turkey sausage links, casings removed, meat crumbled
2 scallions, sliced
6 large eggs and 6 large egg whites
1 3/4 cups 1-percent milk
Kosher salt and freshly ground black pepper
One 9-ounce package frozen chopped spinach, thawed and drained of excess liquid
3/4 cup shredded Cheddar
1/2 cup grated Parmesan
1/2 whole wheat baguette, cut into 3/4-inch cubes (about 4 cups)
Cooking spray

Steps:

  • Heat a large nonstick skillet over medium heat. Add the turkey and scallions and cook, stirring to break up any large chunks, until browned and cooked through, about 10 minutes. Remove from heat and let cool slightly.
  • Whisk the eggs, egg whites, milk and 1/2 teaspoon each salt and pepper in a large bowl until combined. Add the cooked sausage, spinach, cheeses and bread and toss to distribute the ingredients evenly.
  • Spray a 3-quart casserole dish with cooking spray. Spread the egg mixture evenly in the dish. Cover and refrigerate for at least 6 hours or preferably overnight.
  • Preheat the oven to 350 degrees F. Bake the casserole, uncovered, until set and lightly browned on top, about 30 minutes.

12 ounces Canadian bacon, chopped
6 English muffins, split and cut into 1-inch pieces
8 large eggs
2 cups 2% milk
1 teaspoon onion powder
1/4 teaspoon paprika
HOLLANDAISE SAUCE:
4 large egg yolks
1/2 cup heavy whipping cream
2 tablespoons lemon juice
1 teaspoon Dijon mustard
1/2 cup butter, melted

Steps:

  • Place half of the Canadian bacon in a greased 3-qt. or 13x9-in. baking dish; top with English muffins and remaining bacon. In a large bowl, whisk eggs, milk and onion powder; pour over top. Refrigerate, covered, overnight., Preheat oven to 375°. Remove casserole from refrigerator while oven heats. Sprinkle top with paprika. Bake, covered, 35 minutes. Uncover; bake 10-15 minutes longer or until a knife inserted in the center comes out clean., In top of a double boiler or a metal bowl over simmering water, whisk egg yolks, cream, lemon juice and mustard until blended; cook until mixture is just thick enough to coat a metal spoon and temperature reaches 160°, whisking constantly. Reduce heat to very low. Very slowly drizzle in warm melted butter, whisking constantly. Serve immediately with casserole.

1-1/2 cups fat-free milk
1 can (10-3/4 ounces) reduced-fat reduced-sodium condensed cream of chicken soup, undiluted
1 carton (8 ounces) egg substitute
1/4 cup reduced-fat sour cream
1/2 teaspoon pepper
1/4 teaspoon poultry seasoning
1/8 teaspoon salt
2-1/2 cups cubed cooked turkey breast
1 package (16 ounces) frozen chopped broccoli, thawed and drained
2 cups seasoned stuffing cubes
1 cup shredded reduced-fat cheddar cheese, divided
