GRILLED TUNA IN FLANK STEAK MARINADE

3 tablespoons reduced-sodium soy sauce
2 tablespoons lemon juice
2 tablespoons vegetable oil; more for brushing pan
1 garlic clove, minced
1/2 teaspoon sugar
1/2 teaspoon freshly ground black pepper
1/4 teaspoon salt
4 6-ounce tuna steaks, 3/4 to 1 inch thick (see note)

Steps:

  • In a large plastic bag combine soy sauce, lemon juice, 2 tablespoons vegetable oil, garlic, sugar, pepper and salt. Add tuna steaks, coating well with marinade. Seal bag, and refrigerate at least 30 minutes, and up to 2 hours.
  • Place a ridged grill pan over medium-high heat for about a minute. Brush pan with vegetable oil. Remove fish from marinade, discarding liquid, and add to pan. Cook to taste (3 minutes on each side for medium-rare). Serve immediately.

We frequently grill tuna steaks in summertime. I came up with this sweet marinade. It's also good for chicken or pork, but I like it best on fresh tuna steaks.

1 cup pineapple-orange juice
4 tablespoons light soy sauce
2 garlic cloves, minced
1 tablespoon sugar
2 teaspoons tarragon

Steps:

  • Whisk all ingredients together in a bowl. Marinate tuna steaks in a plastic bowl or bag for no more than 24 hours. Set aside some extra for basting while grilling.

1/4 cup Grapeseed oil
1/3 cup Soy Sauce
1 tablespoon Sesame Oil
1 tablespoon Hoisin Sauce or Fish Sauce
1/4 cup Fresh Lemon Juice
1 clove Garlic clove - crushed

Steps:

  • Combine all ingredients and whisk to combine.
  • Put tuna steaks in a ziplok bag that fits all and add marinade.
  • Marinate steaks in refrigerator for 1 hour per inch of thicknes (minimum) up to 2 hours.
  • Grill to desired doneness. Discard unused marinade.

1 cup soy sauce
1/2 cup fresh squeezed lemon juice
4 tbsp. extra virgin olive oil
sea salt
fresh ground pepper

Steps:

  • Combine all ingredients in a medium mixing bowl. Lay tuna steaks flat in a pyrex or alternative pan. Pour marinade over steaks about one half hour prior to throwing on the grill. Flip steaks or use spoon to put marinade all over steaks to ensure full exposure.
