Dinner has never been easier than with this updated classic tuna casserole. Full of pantry staples, the dish comes together quickly. Make the casserole sauce, pour it over your favorite noodles, top it with cheese, and bake it off for a new weeknight staple.

1 nonstick cooking spray, for greasing
3 tablespoons unsalted butter
1 small yellow onion, diced
6 cloves garlic, minced
3 tablespoons all purpose flour
2 teaspoons italian seasoning
2 teaspoons kosher salt
2 cups chicken broth
1 cup whole milk
2 cups peas, canned, drained
1 cup carrot, drained
4 cans tuna, packed in water, drained
12 oz egg noodles, cooked according to package instructions and drained
3 cups shredded cheddar cheese, divided
1 cup butter crackers, crumbled
¼ cup grated parmesan cheese
1 tablespoon olive oil

Steps:

  • Preheat the oven to 400°F (200°C). Lightly grease a 9 x 13-inch (22 x 33cm) baking dish with nonstick spray.
  • Melt the butter in a large saucepan over medium heat. Add the onion and sauté until softened and very fragrant, about 5 minutes. Stir in the garlic, flour, Italian seasoning, and salt and cook for another minute, until thickened.
  • Slowly pour in the chicken broth and milk and stir to combine. Bring to a simmer, stirring constantly. Once the mixture has thickened, 10-12 minutes, stir in the peas, carrots, and tuna.
  • Spread the cooked egg noodles in the prepared baking dish.
  • Pour the sauce over pasta in the pan and stir to combine. Add 2 cups of cheddar cheese and stir to incorporate. Spread the casserole in an even layer, then sprinkle the remaining cup of cheese on top.
  • In a small bowl, use a fork to mix together the cracker crumbs, Parmesan, and olive oil. Sprinkle over the casserole.
  • Bake the casserole for 15-20 minutes, or until the top is lightly browned and bubbling.
  • Serve warm.

1 (16 ounce) package medium seashell pasta
1 tablespoon vegetable oil
1 (10.75 ounce) can condensed cream of mushroom soup
1 (15 ounce) can mixed vegetables, drained
1 (5 ounce) can tuna, drained
2 cups shredded Cheddar cheese
salt and pepper to taste

Steps:

  • Bring a large pot of lightly salted water to a boil. Add 1 tablespoon oil to the water to prevent sticking. Add pasta and cook for 8 to 10 minutes or until al dente; drain. Preheat oven to 350 degrees F (175 degrees C).
  • In a 2 quart saucepan over medium heat, combine the cream of mushroom soup, mixed vegetables, canned tuna, and 1 cup of the cheddar cheese. Gently fold pasta into the soup mixture and mix thoroughly. Pour pasta and soup mixture into a 11x7 inch baking dish. Sprinkle remaining cup of cheese on top.
  • Bake in a preheated oven until cheese is melted and bubbly.

This is from my mother's Betty Crocker Recipe Card Library from the 70's. I've been enjoying it for 3 decades! It's so delicious, and not as hard as the recipe is lengthy. It makes even a novice cook look pretty darn impressive!

1 egg
2 (6 ounce) cans tuna, drained
1/2 cup chopped onion
1/2 cup shredded sharp cheddar cheese
1/4 cup dried parsley
1 teaspoon celery salt
1/8 teaspoon black pepper
2 cups Bisquick
1/2 cup water
1/4 cup butter
1/4 cup Bisquick
1/8 teaspoon salt
1/8 teaspoon pepper
2 cups milk
1 cup shredded cheddar cheese

Steps:

  • Filling: Beat egg slightly; set aside 2 T egg.
  • Stir tuna, onion, cheese, parsley, celery salt, and pepper into remaining egg.
  • (You can do this part ahead and keep in refrigerator until ready to use.) Dough: Stir baking mix& water to a soft dough.
  • Knead 5 times on a floured cloth covered board.
  • (I just do this on a floured surface.) Roll out into a rectangle.
  • Spread with filling.
  • Roll up to make a long roll.
  • Place sealed edge down on greased baking sheet.
  • (I make a circle or a half-circle.) With scissors, make cuts 2/3 deep at 1"-2" intervals.
  • (I slightly turn each piece to show filling.) Brush top with reserved egg.
  • Bake at 375F for 25-30 minutes.
  • Meanwhile, make cheese sauce.
  • Cheese Sauce: Melt butter over low heat.
  • Blend in baking mix, salt, and pepper.
  • Cook over low heat, stirring, until smooth and bubbly.
  • Remove from heat.
  • Stir in milk.
  • Heat to boiling, stirring constantly.
  • Boil and stir one minute.
  • Stir in cheese until melted.
  • (I rarely bring this to a boil. I just make sure it's nice and hot, bringing the heat up slowly. Maybe it's my own quirk, but I don't scorch the milk that way. I slice the tuna ring and serve the slices and pass the cheese sauce. This is so yummy!).

With tuna casserole, bechamel eliminates the need for a canned cream soup... its thick, creamy texture clings to the pasta and adds tremendous flavor overall. The amount used in this recipe keeps the entire casserole light but still filling.

½ (16 ounce) package penne pasta
5 tablespoons salted butter, divided
3 tablespoons all-purpose flour
2 ½ cups cold milk
2 tablespoons dried minced onion
2 bay leaves
⅛ teaspoon cayenne pepper
½ teaspoon salt, divided
2 (6 ounce) cans tuna in water, drained
1 ½ cups frozen peas
1 ½ cups grated Colby-Jack cheese
½ teaspoon freshly ground black pepper
4 slices bread, cut into 1/2-inch pieces
¼ cup grated Parmesan cheese

Steps:

  • Bring a large pot of lightly salted water to a boil. Add penne and cook, stirring occasionally, for 2 minutes less than directed on the package, about 9 minutes. Drain penne, reserving 1 cup pasta water, rinse, and set aside.
  • Preheat the oven to 375 degrees F (190 degrees C). Lightly grease a 9x13-inch casserole dish.
  • Melt 3 tablespoons butter in a large, shallow saute pan. Stir in flour and continue stirring until golden, about 3 minutes. Gradually whisk in milk. Add minced onion, bay leaves, and cayenne pepper. Continue cooking until bechamel sauce thickens, 10 to 15 minutes. Season with 1/4 teaspoon salt.
  • Place the cooked pasta into a large bowl. Add bechamel sauce and mix well. Crumble the drained tuna over the pasta. Add peas and Colby-Jack cheese; mix. Thin the mixture with 2 to 4 tablespoons of the reserved pasta water. Season with pepper and remaining salt. Transfer to the prepared casserole dish.
  • Melt remaining 2 tablespoons butter. Add bread cubes; mix well until bread is completely coated. Stir in Parmesan cheese. Top casserole with this bread mixture and cover tightly with aluminum foil.
  • Bake in the preheated oven for 30 minutes. Remove foil and continue baking until top is browned and golden, about 10 minutes more.
