Times were tough for my newly divorced mom in the 70's. I remember eating creamed tuna on toast with a green salad on the side at least weekly. It was one of my favorite meals, and I had no idea we were eating it out of necessity. Times aren't so tough now, but I still make this about once a month. It's great when you're in a hurry, or have limited supplies on hand. My kids love it too!

2 tablespoons butter
2 tablespoons all-purpose flour
1 ½ cups milk
1 (5 ounce) can chunk light tuna in water, drained and flaked
salt and ground black pepper to taste
4 slices bread, toasted, or to taste

Steps:

  • Melt butter in a small saucepan over medium heat. Stir flour into melted butter until smooth and slowly stream milk into the mixture while whisking continually. Bring mixture to a simmer and cook until thickened, about 5 minutes.
  • Reduce heat to medium-low. Stir tuna into the milk mixture; season with salt and pepper. Cook until tuna is warmed, 2 to 3 minutes.
  • Ladle tuna mixture over toasted bread to serve.

1 cup frozen peas (or to taste)

Steps:

  • Thaw frozen peas in a collendar.
  • Melt the margarine in a saucepan.
  • Add the flour and blend.
  • Add the milk, stirring constantly to prevent clumping and stir until creamy.
  • Add the tuna, peas, salt and pepper and warm through.

This was usually what she would throw together. Its quick and easy and most kids love it if they like tuna! Even my husband and my son enjoy this one!

1 can(s) chunk light tuna (the firm chunk kind)
1 can(s) cream of mushroom soup
2 to 3 handfuls of baby peas
dash(es) pepper

Steps:

  • 1. In a sauce pan combine the cream of mushroom soup, dash of pepper and peas. Heat on low setting so not to scald and burn.
  • 2. If the mixture seems too thick you can add a dash of milk, but you want a thick mixture and not runny. Break up your tuna adding it to the creamed mixture. Heat to a low simmer bubble.
  • 3. Serve over buttered toast.

1 1/2 c milk
1 can(s) tuna, drained

  • 1. Melt margarine or butter in a skillet over medium to low heat (don't burn the butter). Add flour and brown to make a light roux.
  • 2. Stir in the milk to make a gravy, stirring to keep from sticking until it reaches desired thickness.

up to 12 thin slices French bread (depending on how many you want to make in one go)
410g can cannellini beans , drained and rinsed
150g can tuna in olive oil, drained and oil reserved
handful parsley leaves, roughly chopped
1-2 tomatoes , sliced (depending on how many you're making)
1 small red onion , finely sliced
olive oil for drizzling

Steps:

  • Toast as many slices of French bread as you need. Meanwhile, lightly mash the beans. Pour 2 tbsp of tuna oil over the beans, then flake in the tuna. Gently mix in the parsley, and season to taste.
  • When the toast is ready, drizzle it with a bit of the tuna oil. Top the toast with a slice of tomato and top the tomato with a spoonful of bean mix. Scatter over the sliced onion. (Any extra bean mix will keep in the fridge for up to 2 days.) Drizzle the toasts with a little more oil (use olive oil if you run out of tuna oil) and serve.

Here's what you do: stir together some canned tuna, garlic, lemon juice, red onion, black olives, capers and fresh parsley, then spread it on buttered toast. Top it off with a round of ripe tomato or slivers of avocado and another slice of toast. That's it. If you want to make it into a dip, toss the mixture into a food processor with a few tablespoons of softened butter and a bit more olive oil. Purée until smooth and creamy and serve with carrots, fennel, bell pepper and seeded crackers. If you have a tin of sardines taunting you from inside your cabinet, we bet this recipe would work equally well with those.

200g can tuna , whatever type you've got in the cupboard
½ a bunch of spring onions , finely chopped
4 tbsp mayonnaise
3thick slices of granary or wholemeal bread
50g cheddar , coarsely grated
generous pinch of paprika

Steps:

  • Preheat the grill on its highest setting. Drain the tuna, flake it into a bowl and mix with the spring onions and mayonnaise. Season with salt and plenty of freshly ground black pepper.
  • Toast the bread under the grill until it's nicely browned on both sides, then spread the tuna mixture on top, right up to the edges of the toast. Scatter over the cheese and put back under the grill until the cheese is bubbling.
  • Slice in half, sprinkle with paprika and tuck in.
