LEFTOVER SALMON CAKES(OR TUNA, OR CRAB)
The cornbread gives this a Southern flair. You can use this base to make a variety of patties. = Salmon is my favorite, but I've made them with pretty much whatever I had on hand. Great for leftover salmon or even chicken. If you don't have leftover cornbread and don't want to make it, you can use breadcrumbs, or crushed crackers. You can also omit the potatoes if you don't have any.

Steps:
- Blend potatoes, mayo, horseradish sauce, hot sauce, and lemon juice together.
- Add salmon, dill, egg and bell pepper. Mix gently but well.
- Stir in breadcrumbs, adding more if needed to hold mixture together.
- Shape into patties.
- Fry each side 4-5 minutes or until browned.
- great on a bun or own it's own with a salad.

BAKED TUNA 'CRAB' CAKES
A delicious alternative to the original.

Steps:
- Preheat oven to 350 degrees F (175 degrees C). Line a baking sheet with aluminum foil, and spray with cooking spray.
- In a large bowl, thoroughly mix the tuna, bread crumbs, zucchini, green pepper, onion, green onions, garlic, jalapeno pepper, cottage cheese, sour cream, 2 eggs, lime juice, dried basil, pepper, and salt.
- Beat 2 eggs in a shallow bowl, and place the cornmeal on a plate.
- Scoop up about 1/4 cup of the tuna mixture, and gently form it into a compact patty. Dip both sides of each cake into beaten egg and then press into cornmeal, and place the cakes onto the prepared baking sheet. Spray the tops of the cakes with cooking oil spray.
- Bake in the preheated oven until the tops of the cakes are beginning to brown, about 20 minutes. Flip each cake, spray with cooking spray, and bake until the cakes are cooked through and lightly browned, about 20 more minutes.

TUNA "CRAB" CAKES
Steps:
- Combine all ingredients in large bowl. Mix well. Compress mix down with spoon or spatula
- Heat small amount of vegetable oil in skillet.
- Using an ice cream scooper or large spoon, deposit balls of tuna mix into skillet. Gentle press down into a patty. Brown on both sides.
