Here's an easy way to learn how to make a tuna melt: Use a muffin pan! It's a great way to make single-serving tuna melts for a crowd, and it'll minimize clean-up, too.

Nonstick cooking spray
12 slices honey oat or honey wheat bread, crusts removed
3 tablespoon butter, melted
2 6 ounce cans chunk white tuna (water pack), drained
3 tablespoon light mayonnaise or salad dressing
1 tablespoon honey mustard
4 ounce havarti cheese with dill, cut into small cubes
2 tablespoon finely chopped shallot (1 medium)
2 tablespoon snipped dried cranberries
Fresh dill sprigs (optional)

Steps:

  • Preheat oven to 375°F. Generously coat twelve 2 1/2-inch muffin cups with cooking spray; set aside. Lightly brush one side of bread slices with melted butter. Press bread slices, buttered sides up, into the prepared muffin cups.
  • In a small bowl combine tuna, mayonnaise, and honey mustard. Stir in cheese, shallot, and dried cranberries. Divide tuna mixture among bread-lined muffin cups.
  • Bake about 15 minutes or until filling is hot and bubbly. Remove tuna cups from muffin cups; let stand for 5 minutes before serving. If desired, garnish with fresh dill.

2 (6 ounce) cans albacore tuna, drained and flaked
1 cup seasoned bread crumbs, divided
1 egg, beaten
1/4 cup finely chopped green onion
1/4 cup finely chopped sweet red pepper
1/4 cup reduced-fat mayonnaise
1 tablespoon lemon juice
1/2 teaspoon garlic powder
1/8 teaspoon cayenne pepper
1 tablespoon butter

Steps:

  • In a large bowl, combine the tuna, 1/3 cup bread crumbs, egg, onions, red pepper, mayonnaise, lemon juice, garlic powder and cayenne.
  • Divide mixture into eight portions; shape into 2-inch balls.
  • Roll balls in remaining bread crumbs.
  • Flatten to 1/2 inch thickness.
  • In a large nonstick skillet, cook tuna cakes in butter for 3-4 minutes on each side or until golden brown.

This is a great change for fussy tuna eaters. Kids & grown-ups love them. You may want to make extra sauce which you'll find requests for. Also, grate extra cheese to microwave melt over muffins before adding sauce.

2 cups cooked rice, cooled (any variety, sticky white rice holds together better)
1 (170 g) can tuna in water
1 cup cheddar cheese, grated
1 tablespoon parsley
1 tablespoon fresh onion, depending on taste (or more)
1 teaspoon seasoning salt
2 tablespoons milk
2 eggs
1 tablespoon lemon juice
1/2 teaspoon seasoning salt
1/2 teaspoon parsley
1/4 cup melted butter or 1/4 cup margarine

Steps:

  • Mix first eight ingredients together and lightly press into a very well greased muffin tin.
  • Bake at 375 F for 15 minutes. Tops should just start to brown & bubble. Note - baking time will vary with size of muffin tins.
  • Let cool about 5 minutes to allow for easier removal from pans then turn out onto individual serving dishes.
  • Combine sauce ingredients and drizzle over top of muffins.

  • In a large bowl, combine the first 11 ingredients. Place 1/3 cup salmon mixture into each of 8 muffin cups coated with cooking spray. Bake at 425° for 10-15 minutes or until a thermometer reads 160°., Meanwhile, combine the sauce ingredients. Serve with salmon.

I am not partial to frying food but was craving a fish cake dinner so I devised this recipe to side step the oiliness.

Number Of Ingredients 11

1 1/2 lbs potatoes, peeled (raw weight)
1/3 lb tuna
1/3 cup water
1 bunch spring onion, finely chopped
1/4 cup mayonnaise
1/2 cup ricotta cheese
1/4 cup fish sauce
1/4 teaspoon Old Bay Seasoning
fresh ground black pepper, to taste
2 eggs, beaten
1/2 cup mozzarella cheese, grated

Steps:

  • Boil or microwave potatoes til soft and mash. Leave to cool til warm.
  • Boil tuna in the water til cooked through. Flake fish and add with the water to potatoes.
  • Add spring onion, mayonnaise, ricotta cheese, fish sauce, Old Bay and pepper and mix well together.
  • Mix in beaten eggs. This will make the mixture very soft.
  • Spoon into a greased muffin pan, filling to the top.
  • Spinkle mozzarella cheese on top with a light sprinkling of Old Bay.
  • Bake at 180C for 30 minutes.
  • Leave to cool in muffin pan for 10 minutes so that the fish cakes can firm up a bit.
