1 tbsp Dijon mustard
1 tbsp Fresh parsley
1/2 tsp Paprika
3 5-oz. can Tuna ((drained; I used a combination of chunk light and solid white albacore))
1/4 cup Celery ((finely chopped))
2 tbsp Pickles ((finely chopped))
2 tbsp White onion ((minced))
4 large Hard boiled eggs ((diced))
Sea salt ((to taste))
Black pepper ((to taste))

Steps:

  • In a medium bowl, use a fork to whisk together the mayo, mustard, parsley, and paprika, until smooth.
  • Add the tuna, celery, pickles, and onions. Stir together, breaking apart any large pieces of tuna.
  • Fold in the diced eggs.

½ cup light creamy salad dressing (such as Miracle Whip Light®)
3 hard-boiled eggs, chopped
1 stalk celery, diced
2 tablespoons sweet pickle relish

1 dash Worcestershire sauce

2 can(s) tuna, canned (7 oz.)
4 eggs, hard boiled
2 Tbsp mayonnaise
2 Tbsp sweet relish
1 Tbsp mustard, spicy brown
dash salt, paprika (if desired)
8 slice of your choice of bread

  • 1. Boil Eggs until they are hard-boiled. *Rule of thumb- once water is boiling 9 minutes of a continuous boil produces a perfect hard-boiled egg.
  • 2. While the eggs are boiling prepare the tuna with the mayo, mustard, relish and seasoning in a large bowl and set aside
  • 3. slice the egg vertical and mix into the tuna to complete the salad.

DH asks me to make this once a week and I don't oblige because it's a great lunch or snack for him when I'm not home or don't feel like cooking. I'll either serve it cold to him on fresh wheat bread, or if I have time I will use Sourdough bread, add a slice of cheese, and make him a tuna melt. I prefer not to use a bunch of mayo or miracle whip, I don't like it to overpower the tuna.

Two 5-ounce cans albacore tuna, drained well
4 hard-boiled eggs, chopped
1 celery stalk, chopped (about 1/3 cup)
1/3 cup chopped dill pickles
1/4 cup chopped pickled jalapeños
3 scallions, trimmed and roughly chopped
1/2 cup mayonnaise
1 tablespoon Dijon mustard
1/2 teaspoon smoked paprika
Kosher salt and freshly ground black pepper
4 slices sourdough bread
2 vine tomatoes, sliced
4 slices pepper jack cheese

Steps:

  • Heat the broiler to high and line a rimmed baking sheet with aluminum foil.
  • Add the tuna, chopped eggs, celery, dill pickles, pickled jalapeños and scallions to a mixing bowl. Mix to incorporate and to break up any large chunks of tuna. Set aside.
  • Add the mayonnaise, mustard and smoked paprika to a small bowl. Whisk to combine. Add the mayonnaise mixture to the tuna mixture and use a rubber spatula to mix until evenly combined. Season to taste.
  • Arrange the bread on the foil-lined baking sheet. Divide the tuna mixture evenly among the slices of bread. Top the tuna with a few slices of tomato. Sprinkle the tomato with salt and pepper. Top the tomatoes with the pepper jack cheese.
  • Transfer the baking sheet to the broiler and broil until the cheese is bubbling and melted, 1 to 2 minutes.
  • Transfer the sandwiches to a cutting board, then slice in half and serve immediately.

This is the recipe I use for my family and its always a hit. I use an equal amount of finely chopped hard boiled egg added to a can of tuna (I prefer the albacore tuna). For those who don't care for a strongish fish flavor in their tuna salad, this'll do it for you. It truely is awesome. Enjoy!

6 ounces tuna, water packed
1 hard-boiled egg, finely chopped
3 tablespoons red onions, fineley chopped
4 -5 tablespoons mayonnaise (moisten to suite your taste)
1 teaspoon celery seeds (to taste) or 1 teaspoon celery salt (to taste)
1 -2 tablespoon mustard (to taste)

Steps:

  • Drain tuna and place in a small mixing bowl.
  • Finely chop boiled eggs and add to tuna.
  • Finely chop red onion (or onion of your choice) and add to tuna and egg.
  • Using a fork or masher, combine these ingredients well.
  • Add celery seed or celery salt.
  • Add Mayo (or Miracle Whip).
  • Add mustard.
  • Mix everything well. Go easy on the seasoning and dressing. You can always add more to suit your taste.
