RIBBON FINGER SANDWICHES (AKA TEA SANDWICHES)



Ribbon Finger Sandwiches (AKA Tea Sandwiches) image

These are so dainty and are perfect for little tea parties (or showers, birthdays.. etc..) plus, they are SUPER easy to make.

2 loaves white bread (I like to find the largest size I can find, or 36 large slices)
1 pound sliced deli ham
1/2 cup mayonnaise
12 ounces Cheez Whiz ((the spreadable kind in the glass jar))

Steps:

  • Lay out 3 rows of 12 slices of bread.
  • In a food processor, process ham (in batches if needed) until ham is well chopped. Place ham in a medium-sized bowl and stir in mayonnaise until smooth and well combined.
  • On 12 slices of bread, spread about 2 Tbsp. of Cheez Whiz (like you would peanut butter).
  • On another 12 slices, spread the ham mixture.
  • Top the cheese slice of bread with the ham spread slice, then top with the plain slice of bread. Repeat with all bread slices.
  • Using a sharp knife, gently cut away the crust from each "sandwich". Cut each square in half and then half once again in the same direction (making long rectangles as seen in the picture).
  • Place finger sandwiches (trying not to overlap) in large Ziploc bags and refrigerate until ready to serve (up to a day ahead of time-- *see above note).

10 thin slices white bread
10 thin slices whole wheat bread
10 thin slices pumpernickel bread
Butter or margarine
1 large cucumber, peeled, thinly sliced
1 package (3 oz) cream cheese, softened
1/4 cup chopped fresh watercress, finely chopped
1 1/2 cups finely chopped cooked ham
1/4 cup finely chopped fresh parsley
3 tablespoons mayonnaise or salad dressing
1 tablespoon Dijon mustard
Edible flowers, fresh dill weed, radish slices, if desired

Steps:

  • Cut breads into shapes with 2- to 3-inch cookie cutters (or remove crusts from breads and cut each slice into triangles or squares).
  • Spread butter over white bread shapes; top each with cucumber. In small bowl, mix cream cheese and watercress until well blended. Spread over pumpernickel bread shapes. In another small bowl, mix ham, parsley, mayonnaise and mustard until well blended. Spread over whole wheat bread shapes.
  • Arrange sandwiches on serving platter. Garnish with edible flowers, fresh dill weed or radish slices. Store in refrigerator.

4 slices whole grain bread (can use whole grain crackers, if desired)
softened butter, for spreading
1 tablespoon fresh salad burnet, leaves (read *Note)
1/2 cup cream cheese, softened
salt, to taste
black pepper, to taste

Steps:

  • Spread the butter on each slice of bread.
  • *Note: due to salad burnet's delicate nature, it is not necessary or really possible to mince the leaves. Add them whole to the cream cheese.
  • In a small bowl combine the salad burnet and cream cheese. Add salt and pepper, to taste. Mix well.
  • Spread the cream cheese mixture on two slices of bread. Place other slices on top and cut sandwiches in half or quarters.

2 cans light tuna in water (5 ounces each), well drained
1 celery rib, finely chopped
1/4 cup finely chopped red onion
2 tablespoons minced fresh parsley
1 tablespoon lemon juice
1/2 cup diced dill pickle, divided
4 large eggs, beaten
2 cups shredded extra sharp cheddar cheese
8 slices tomato

  • Preheat waffle maker. In a large bowl, whisk mayonnaise and cream cheese until smooth. Add tuna, celery, onion, parsley, lemon juice, and 2 tablespoons of chopped pickles. Set aside. , In a separate bowl, whisk eggs. In the preheated waffle maker sprinkle 1/2 cup cheese and half the remaining pickles. Pour half the egg mixture over the cheese. Top with 1/2 cup of cheese. Close lid and bake according to manufacturer's directions until golden brown, 4-5 minutes.
