- Bring a large pot of water to a boil; add penne and cook, stirring occasionally, until tender yet firm to the bite, about 11 minutes. Drain pasta; return to pot.
- Place tuna in a skillet over low heat; season with onion powder and salt. Cook until lightly browned, about 5 minutes. Stir tuna into cooked pasta. Add Alfredo sauce; stir until combined. Garnish with grated Parmesan cheese.

SPINACH-ALFREDO TUNA CASSEROLE
This recipe was the result of a missed shopping trip. Kinda threw everything together one night and created a hit. It has become a staple at our family get-togethers. Even the children, especially my 3 year old son, absolutely love it. Using garlic Alfredo sauce adds a little extra flavor.

- 1. Bring a large pot of salted water to a boil. Cook pasta in boiling water until al dente', drain.
- 2. Preheat oven to 425 degrees.
- 3. In a large bowl, thoroughly mix: noodles, onion, 1 cup cheese, peas, tuna, Alfredo sauce, and spinach. Transfer to a 13 X 9 inch baking dish, and top with bread crumbs and remaining 1/2 cup cheese. Bake 15-20 min. in a preheated oven or until cheese is bubbly.
TUNA VEGGIE ALFREDO LASAGNA
This is a combo I came up with to please the very different tastes in my family. This is one combination of ingredients that everyone will eat.

Steps:
- Mix together alfredo sauce and wine.
- Briefly stir-saute all prepared vegetables in olive oil, except spinach, about two minutes over medium heat.
- In a large oiled loaf pan, pour 1/2 cup alfredo sauce mix.
- Top with two uncooked lasagna sheets, breaking the second to fit any uncovered sauce.
- Top with 1/3 tuna, 1/3 vegetables (pull spinach into small pieces), and 1//3 of each cheese.
- Pour 1/3 of remaining sauce on top.
- Repeat layers twice more, reserving the last 1/3 of cheeses for later.
- (You'll end with sauce).
- Cover the pan tightly with foil.
- Bake at 375 for 50 minutes, remove foil, top with remaining cheeses, reduce heat to 350, and bake for another 20 minutes, until top cheese is bubbling and starting to brown.
- Remove from oven and allow to sit for at least 10 minutes before serving.
- (15 minutes is better if you can stand it!).
- Slice crosswise in about two inches slabs and serve with your favorite green salad and good chewy bread.
- Be warned, this is very rich, but it's hard to stop eating.
- NOTE: Please try to use the albacore tuna in the foil pouch, if at all possible.
- The taste is noticably better than any canned albacore I've tried.
FETTUCCINE ALFREDO TUNA SKILLET
Steps:
- Melt butter in medium skillet over medium heat. Add green onion and red bell pepper. Cook for 3 minutes, stirring frequently. Add peas, tuna, water, milk, pasta and contents of seasoning packet and bring just to a boil. Reduce heat to low boil. Cook uncovered for 12 minutes, stirring frequently, until pasta is tender. Remove from heat and let stand 5 minutes for sauce to thicken before serving.
TUNA ALFREDO MACARONI
Delicious but nutritious!

- Cook macaroni according to package directions (for whole wheat usually boil 6-7 minutes) and strain.
- Pour back into pot over low heat and immediately add all ingredients in order listed! (this will ensure pasta doesn't stick together!) NOTE: I would add salt and pepper to taste after adding tomatoes so they blend better!
- That's it! Makes about 8 servings... you may change pasta shape to rotini or as you wish...ENJOY! This dish is as delicious as it is nutritious!
