How simple can this be...The first time we went to Tucanos and I had the Grilled Pineapple it was so Yummy I had to find the recipe and finally found it on line...It is like eating pineapple and cotton candy at the same time...It is sooo good I can eat it year round....I hope you enjoy this as much as we do...I don't have picture...

ONE HALF PINEAPPLE, CUT INTO LONG SPEARS
1 Tbsp butter
1/2 c brown sugar
1 tsp cinnamon
LEMON JUICE

Steps:

  • 1. Mix cinnamon and brown sugar in a shallow bowl. Heat up the grill to medium heat. Before putting the pineapple down on grill, roll the spears in brown sugar and cinnamon mixture. This will bring out the sweetness and instant caramelizing when they hit the grill.
  • 2. Heat the butter, brown sugar and cinnamon mixture in a pan, till hot and bubbly, brown sugar should be melted.
  • 3. Grill the pineapple spears over direct heat about 2-3 minutes per side, turn occasionally. Each time it turns, baste with glaze. When finished, place on platter and drizzle with remaining mixture of butter, brown sugar and cinnamon..or you may dip it in while eating them...

Favorite at a Brazilian steakhouse in Dallas. Not sure if this is the exact recipe they use but it tastes very close. Great side for kabobs and steak.

1 cup brown sugar
2 teaspoons ground cinnamon
1 pineapple - peeled, cored, and cut into 6 wedges

Steps:

  • Preheat an outdoor grill for medium-high heat and lightly oil the grate.
  • Whisk brown sugar and cinnamon together in a bowl. Pour sugar mixture into a large resealable plastic bag. Place pineapple wedges in bag and shake to coat each wedge.
  • Grill pineapple wedges on the preheated grill until heated through, 3 to 5 minutes per side.

These are SO easy and really good. The hot sauce gives it an extra kick and cuts the sweetness. They can help with patience while the rest of the grilled feast comes together, but be warned, they go quickly!

1 fresh pineapple - peeled, cored and cut into 1 inch rings
¼ teaspoon honey
3 tablespoons melted butter
1 dash hot pepper sauce
salt to taste

Steps:

  • Place pineapple in a large resealable plastic bag. Add honey, butter, hot pepper sauce, and salt. Seal bag, and shake to coat evenly. Marinate for at least 30 minutes, or preferably overnight.
  • Preheat an outdoor grill for high heat, and lightly oil grate.
  • Grill pineapple for 2 to 3 minutes per side, or until heated through and grill marks appear.

1/2 cup sweetened flaked coconut
1 (3 1/2-to 4-pounds) pineapple, peeled
1/2 cup packed dark brown sugar
1/4 cup dark rum
2 teaspoons curry powder (preferably Madras)
1 tablespoon fresh lime juice
Accompaniment: vanilla ice cream

Steps:

  • Toast coconut in a small heavy skillet over medium heat, stirring frequently, until golden-brown, about 5 minutes.
  • Cut pineapple crosswise into 8 slices (about 3/4 inch thick) and core slices. Stir together remaining ingredients in a shallow glass baking dish and add pineapple in 1 layer, turning to coat evenly. Marinate, turning occasionally, 30 minutes.
  • Prepare a gas grill for direct-heat cooking over medium-high heat; see Grilling Procedure .
  • Oil grill rack. Grill pineapple (reserve marinade), covered, turning once, until grill marks appear and pineapple is heated through, about 4 minutes. Serve pineapple with marinade and sprinkle with toasted coconut.

1 medium pineapple
1 tablespoon butter, melted
1 tablespoon packed brown sugar
1/8 teaspoon curry powder
1/2 cup nonfat vanilla yogurt
2 tablespoons toasted coconut

Steps:

  • Prepare pineapple by removing the tops and the skin.
  • Cut pineapple crosswise into six 3/4-inch-thick slices, remove the core.
  • Stir together melted butter, brown sugar and curry powder.
  • Grill pineapple slices on an uncovered grill directly over medium coals for 6 to 8 minutes or till heated through, turning once and brushing once or twice with butter mixture.
  • Combine yogurt and coconut. To serve, cut pineapple slices in half. Serve warm with yogurt.
