1/3 cup heavy whipping cream
2 tablespoons butter
2 tablespoons sugar
4 ounces semisweet chocolate, chopped
1 jar (8 ounces) maraschino cherries with stems, well drained
COATING:
6 ounces semisweet chocolate, chopped
2 tablespoons shortening

Steps:

  • In a small saucepan, bring the cream, butter and sugar to a boil, stirring constantly. Remove from the heat; stir in chocolate until melted. Cover and refrigerate for at least 4 hours or until easy to handle. , Pat cherries with paper towels until very dry. Shape a teaspoonful of chocolate mixture around each cherry, forming a ball. Cover and refrigerate for 2-3 hours or until firm., In a microwave, melt chocolate and shortening; stir until smooth. Dip cherries until coated; allow excess to drip off. Place on waxed paper to set.

Combine the decadence of truffles with the sweet-tart appeal of chocolate-covered cherries for these treats.

8 oz. semisweet chocolate, chopped
4 oz. bittersweet chocolate, chopped
1/4 cup half-and-half
1 cup butter, softened
1 cup finely chopped dried red tart cherries
1/4 cup cherry-flavored brandy or liqueur
2 1/2 oz. white chocolate baking bar, finely grated
Cocoa, if desired
48 small (1-inch) paper or foil candy cups

Steps:

  • In medium saucepan, combine semisweet chocolate, bittersweet chocolate and half-and-half. Cook over low heat until chocolate is melted, stirring frequently. Remove from heat. Cool 10 minutes.
  • With wire whisk, beat butter, 1 tablespoon at a time, into chocolate until smooth and creamy. Beat in cherries and liqueur. Cover; refrigerate 1 1/2 hours, stirring twice, or until mixture is thick and can be molded.
  • Spread grated baking bar on sheet of waxed paper. Drop teaspoonfuls of chocolate mixture over grated baking bar; roll each to coat and shape into rough ball. For variety, roll some of the chocolate mixture in cocoa. Place truffles in candy cups. Refrigerate until serving time.

1 cup finely chopped dried cherries
1/4 cup cherry brandy
11 ounces 53% cacao dark baking chocolate, chopped
1/2 cup heavy whipping cream
1 teaspoon cherry extract
COATING:
4 ounces milk chocolate, chopped
4 ounces dark chocolate, chopped
Melted dark, milk and white chocolate and pearl dust

Steps:

  • In a small bowl, combine cherries and brandy; cover and let soak for 1 hour or until cherries are softened., Place dark chocolate in a small bowl. In a small saucepan, bring cream just to a boil. Pour over chocolate; whisk until smooth. Stir in extract and soaked cherries with liquid. Cool to room temperature, stirring occasionally. Refrigerate for 1 hour or until firm., Shape into 1-in. balls. Place on baking sheets; cover and refrigerate for at least 1 hour., In a microwave, melt milk chocolate; stir until smooth. Dip half of the balls into milk chocolate, allowing excess to drip off. Place on waxed paper; let stand until set., Melt dark chocolate; stir until smooth. Dip remaining balls into dark chocolate, allowing excess to drip off. Place on waxed paper; let stand until set. Drizzle with melted chocolate and decorate with pearl dust as desired. Store in an airtight container in the refrigerator.

MARASCHINO CHERRY AND ALMOND TRUFFLES

Chocolate truffles with the wow factor! A perfect Christmas gift? You will need a digital thermometer as the temperatures need to be very precise in this chocolatier's recipe.

Number Of Ingredients 8

24 maraschino cherries in syrup, strained and syrup reserved
350g/12oz almond paste or marzipan
500g/1lb 2oz dark chocolate, 250g/9oz broken into pieces, 250g/9oz very finely chopped
edible gold leaf or gold sparkle powder, to decorate
40g/1½oz golden syrup
50g/1¾oz syrup from the cherries (see above)
2 tsp lemon juice
200g/7oz dark chocolate, broken into pieces

Steps:

  • To make the cherry ganache, bring 50ml/2fl oz water, the golden syrup, cherry syrup and the lemon juice to a simmer in a saucepan.
  • Place the chocolate in a bowl, pour the syrup over and whisk well until very smooth and glossy. Leave to cool. Line a tray with baking paper.
  • Decant the ganache to a piping bag and pipe some into the centre of each cherry to fill the hole where the cherry stone had been. Place the cherries on the prepared tray and leave to set in the fridge for an hour.
  • To coat the cherries, divide the almond paste into 24 pieces, flatten each piece and wrap it around each cherry making sure that there are no cracks. The cherry should be fully coated. Leave the cherries to dry overnight uncovered at room temperature.
  • Melt the broken pieces of chocolate in a bowl over a pan of gently simmering water until it reaches 55C (make sure the water doesn't touch the bowl. Remove from the heat and add the finely chopped chocolate. Mix until smooth and glossy.
  • Check that the chocolate is less than 30C, then dip each cherry into the chocolate using a chocolate dipping fork, (or alternatively a normal kitchen fork) and tap off the excess.
  • Place on kitchen paper to set which should take only a couple of minutes.
  • Decorate each cherry with a piece of gold leaf or edible gold sparkle powder.
  • Eat the chocolate cherries within one month of making and store at cool room temperature. Keep away from direct heat and strong odours.

Trifle is very traditional British dessert, all about generosity and layers. It's the perfect chilled make-ahead dessert of fruit jelly, sponge cake covered with layers of custard and jelly, and topped with whipped cream.

One 10-ounce bag frozen pitted dark sweet cherries, thawed, not drained
2 teaspoons cornstarch mixed with 2 teaspoons water
1 teaspoon orange zest (save the rest of the orange for assembling the trifle)
One 3-ounce (85-gram) packet vegan raspberry jelly granules
2 to 2 1/2 cups boiling water
One 10-ounce bag frozen pitted dark sweet cherries, thawed and drained
2 cups vegan heavy cream
1 pound vanilla pound cake (I use a vegan cake mix)
Zest of the remaining orange
3 ounces (90 grams) dark chocolate, thinly sliced
32 ounces store-bought or homemade Vanilla Custard, recipe follows
2 tablespoons store-bought toasted flaked almonds
4 cups cashew milk
1/2 cup superfine sugar
2 teaspoons vanilla extract
1/8 teaspoon ground turmeric
1/2 cup cornstarch mixed with 2 tablespoons cashew milk

Steps:

  • For the cherry compote: Tip the cherries into a medium saucepan along with any juices, and bring to a gentle bubbling simmer over medium-high heat, about 2 minutes. Press down using a masher or fork. Stir in the cornstarch mixture and the orange zest. Simmer for about 3 minutes, then turn off the heat and leave to cool, about 10 minutes.
  • For the jelly: Put the jelly granules into a liquid measuring cup and top up with boiling water according to the packet's instructions. Stir until the granules dissolve.
  • Assembling the trifle: Pour half of the jelly into the bottom of a 2-quart (2-liter) trifle bowl. Scatter in half of the drained and thawed cherries. Leave to one side to set according to the directions of the packet of jelly granules. Set aside the remaining jelly.
  • Whip the heavy cream in the bowl of an electric mixer fitted with the whisk attachment until soft peaks form, and set to one side.
  • Once the jelly has firmed up, break the pound cake up into rough pieces and scatter half on top of the jelly. Grate over some orange zest and scatter over half of the chocolate pieces.
  • Spoon over half of the custard, starting at the edges and working your way into the center to ensure defined layers around the edge of the bowl.
  • Next pour over the cherry compote, again starting at the edges.
  • Stir the reserved jelly to break it up and spoon it on top of the compote layer.
  • Now add the rest of the cake and another grating of orange zest. Scatter over the remaining drained and thawed cherries, sprinkle over some of the remaining chocolate and then pour on the rest of the custard again, starting at the edges. Pile the whipped cream on top. Zest over the remaining orange, scatter the remaining chocolate and finish with the toasted almonds.
  • Add the cashew milk, sugar, vanilla extract and turmeric to a large saucepan and slowly heat over medium-low heat. Once hot, pour in the cornstarch slurry and stir continuously until thickened. Remove from the heat and set aside to cool. Chill in the fridge overnight.

36 vanilla creme-filled chocolate sandwich cookies, finely crushed
24 oz. BAKER'S White Chocolate, melted

Steps:

  • Soak cherries in brandy overnight. Drain well on paper towels.
