TROUT BAKED IN CREAM
Here's a quick and delicious way to serve trout. It's definitely one of our family's favorites.

Steps:
- Place trout in a greased 13-in. x 9-in. baking dish. Sprinkle with lemon juice, dill, salt and pepper. Pour cream over all. Sprinkle with bread crumbs. Bake, uncovered, at 350° for 11-15 minutes or until fish flakes easily with a fork.

SMOKED TROUT WITH CUCUMBER-WATERCRESS CREAM
Steps:
- Place cucumber, chopped watercress, whipping cream and lime juice in blender. Puree until smooth. Transfer to bowl; stir in sour cream, lime peel and 1/4 teaspoon hot pepper sauce. Season with salt, pepper and more hot sauce, if desired. (Can be made 6 hours ahead. Cover; chill.) Divide trout among 6 plates. Spoon cucumber sauce alongside. Garnish with watercress sprigs and serve.
