Trout Stuffed With Couscous, Almonds and Herbs image

4 tablespoons olive oil
1 small onion, finely chopped
2 garlic cloves, crushed
2/3 cup couscous
1 1/4 cups fish stock (or vegetable stock or clam juice)
1 tablespoon chopped parsley
1 tablespoon chopped mint
4 (12 ounce) trout, whole, cleaned, heads removed and boned
salt and pepper
1/2 cup almonds, sliced

Steps:

  • Heat 2 tablespoons of the oil in a frying pan, add the onion and fry until softened, adding the garlic toward the end.
  • Stir in the couscous, fish or vegetable stock, parsley and mint.
  • Bring to a boil, then remove the pan from the heat and leave for 10-15 minutes, or until the liquid has been absorbed.
  • Preheat oven to 400°F
  • Season the trout with salt and pepper and fill the cavity of each with one-fourth of the couscous mixture.
  • Lay the fish in a greased shallow baking dish.
  • Mix the remaining oil with the almonds and spoon over the fish.
  • Bake for 15-20 minutes, or until the fish flakes when tested with a fork.

Trout with almonds & red peppers image

Try trout instead of salmon - it's quick and easy to cook, and this recipe is full of sunshine flavours

1 large red pepper , deseeded and chopped
2 large tomatoes , roughly chopped, or handful cherry tomatoes, halved
1 garlic clove , chopped
1 tbsp olive oil , plus a little extra
1 tbsp balsamic vinegar
2 trout fillets, about 140g each
2 tbsp flaked almonds
lemon wedges and rocket salad, to serve

Steps:

  • Heat oven to 190C/fan 170C/gas 5. Tip the pepper, tomatoes, garlic, oil and vinegar into a roasting tin, then toss them together. Roast for 20 mins, then make a space in the roasting tin for the trout fillets, scattering with the almonds and a little salt and pepper.
  • Return to the oven for a further 10-15 mins, until the fish is cooked and the almonds lightly toasted. Serve with lemon wedges for squeezing over and a rocket salad on the side.

150ml hot vegetable stock
50g couscous
1 tbsp pine nuts , lightly toasted
2 tbsp chopped parsley
zest and juice 1 lemon
olive oil , for greasing
4 boneless trout fillets

Steps:

  • Pour the stock over the couscous in a bowl, cover with cling film and leave until the couscous has soaked up the liquid. Stir the toasted pine nuts into the couscous along with parsley, lemon zest and juice. Add salt and pepper to taste.
  • Heat oven to 200C/180C fan/gas 6. Lightly oil 2 sheets of foil. Season the trout, then make 2 'sandwiches' of 2 fillets with the couscous in the middle. Repeat with the rest of the trout and the couscous. Wrap the 'sandwiches' individually in foil, then bake for 15-20 mins. Serve with potatoes and salad.

salt and black pepper
3 tablespoons fresh parsley, chopped
2 tablespoons green onions, minced
2 teaspoons fresh sage, minced
2 teaspoons fresh chives, chopped
1 teaspoon fresh rosemary, minced
1 teaspoon fresh thyme, minced
1 garlic clove, minced
1/4 cup unsalted butter
lemon wedge

Steps:

  • Sprinkle the trout with salt and black pepper to taste.
  • Combine parsley and the next 6 ingredients in a small bowl and stir.

red onion , halved and sliced
425ml hot chicken stock (from a cube is fine)
pinch saffron strands, optional
1 fat red chilli , sliced
500g couscous
2 x 20 packs coriander , leaves only
50g toasted whole almond
handful dates , roughly chopped (we used medjool dates)
juice ½ lemon

Steps:

  • Heat some oil in a roasting tray and then add the onions and fry for about 5 mins until just softened. While you're frying, add the saffron strands to the stock if using, so the flavour and colour infuses. (If you are making the Fragrant chicken too (see 'Goes well with') use the same pan to add flavour to this dish and leave the juices in there, but you can tip out some of the chicken fat if you like).
  • Tip the chilli into the tray, fry for 1 min more, then take off the heat. Add the couscous and stock, then cover with cling film for 10 mins. Once the couscous has absorbed all the stock, quickly chop the coriander (if you chop it too soon it will start to wilt), then fork it through the couscous with the almonds, dates and lemon juice and serve straight away. To serve cold, leave to cool, then add the chopped coriander just before eating.

Panfried Trout with Almonds and Parsley image

Sauteed almonds make a zesty topping for panfried trout. For a light, quick supper, serve the fish with baby lettuce leaves and lemon wedges.

4 trout fillets
3/4 teaspoon coarse salt
Freshly ground pepper
1 tablespoon plus 1 teaspoon olive oil
3 ounces whole shelled almonds, coarsely chopped
1 cup loosely packed flat parsley leaves, coarsely chopped
Finely grated zest plus freshly squeezed juice of 2 lemons
Nonstick cooking spray

Steps:

  • Lightly coat a large skillet with cooking spray. Place over medium-high heat. Sprinkle the trout with the salt, and season with pepper; gently place 2 fillets in skillet, skin sides up. Reduce heat to medium, and cook until undersides are golden brown, 4 to 5 minutes. Carefully flip fish, using two spatulas if necessary. Cook until fish is slightly flaky in center when poked with a fork, about 2 minutes more. Transfer fish to a platter; keep warm. Wipe out skillet, and repeat with remaining 2 fillets.
  • Wipe out skillet; add oil and almonds. Cook over medium heat, stirring, until almonds start to turn golden, about 1 minute. Remove from heat, and immediately add parsley and lemon zest; stir to combine. Stir in lemon juice; as soon as it starts to bubble, pour sauce over fish. Serve immediately.
