1/2 cup reduced-sodium soy sauce
1/3 cup canola oil
1/4 cup water
2 tablespoons dried minced onion
2 tablespoons sesame seeds
1 tablespoon sugar
4 garlic cloves, minced
1 teaspoon ground ginger
3/4 teaspoon salt
1/8 teaspoon cayenne pepper
2 broiler/fryer chickens (3 to 4 pounds each), quartered

Steps:

  • In a small bowl, combine first 10 ingredients. Set aside 1/3 cup for basting; cover and refrigerate. Pour remaining marinade into a large resealable plastic bag. Add chicken; seal and turn to coat. Refrigerate 8 hours or overnight., Prepare grill for indirect heat, using a drip pan. Place chicken over drip pan; grill, covered, over indirect medium heat 45-60 minutes or until a thermometer reads 170°-175°, turning and basting frequently with reserved marinade during the last 20 minutes.

1/3 cup minced fresh cilantro
2 tablespoons lime juice

  • In a large resealable plastic bag, combine the first eight ingredients. Add shrimp; seal bag and turn to coat. Refrigerate 2 hours., Drain shrimp, discarding marinade. On each of 30 metal or soaked wooden appetizer skewers, thread one shrimp, one mango cube and one pineapple cube. Heat a grill pan over medium heat. In batches, cook kabobs 2-3 minutes on each side or until shrimp turn pink.

2 limes, juiced
1 tablespoon honey
1 tablespoon soy sauce
1 tablespoon olive oil
1 teaspoon minced garlic
½ teaspoon ground cumin
8 chicken thighs

Steps:

  • Stir lime juice, honey, soy sauce, olive oil, garlic, and cumin together in a bowl; pour into a resealable plastic bag, add chicken, coat chicken with the marinade, squeeze bag to remove excess air, and seal the bag. Marinate in the refrigerator 1 hour to overnight.
  • Preheat an outdoor grill for medium-high heat and lightly oil the grate.
  • Remove chicken thighs from the marinade and shake to remove excess moisture. Discard remaining marinade.
  • Cook the chicken thighs until no longer pink at the bone and the juices run clear, 6 to 8 minutes per side. An instant-read thermometer inserted near the bone should read 165 degrees F (74 degrees C).

1 (8 ounce) can crushed pineapple in juice, drained and juice reserved, divided
¾ cup water
½ cup unsweetened applesauce
3 eggs
1 teaspoon coconut extract
1 (15.25 ounce) package yellow cake mix
1 cup sweetened flaked coconut
1 (3.5 ounce) package instant coconut cream pudding mix
¾ cup dark brown sugar
⅓ cup heavy cream
¼ cup butter
¼ cup dark rum

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease and flour a fluted tube pan (such as Bundt®).
  • Mix bananas, pineapple juice, water, applesauce, eggs, and coconut extract with an electric mixer until well combined. Add cake mix, coconut, and pudding mix; mix on medium speed for 2 minutes. Pour batter into the prepared pan.
  • Bake in the preheated oven until a toothpick inserted into the center comes out clean, 45 to 50 minutes. Let cake cool in the pan.
  • Combine brown sugar, cream, and butter for the sauce in a saucepan. Bring to a boil. Add rum and crushed pineapple and boil, stirring occasionally, until it starts to thicken, 4 to 5 minutes. Set aside to cool down.
  • Poke holes all around the top of the cake still in the pan. Pour about 1/3 of the sauce over the cake with a spoon, trying not to get the pineapple during this stage. Place a serving plate on top of the cake pan and invert the cake, holding onto the pan and plate tightly. Pour remaining sauce and pineapples evenly over the cake. Let sit until cake has absorbed the sauce, about 30 minutes. Slice and serve.

1/2 pound bay scallops, trimmed of muscle
1/2 pound salmon fillet, cut in 1/2- inch pieces
1 red pepper, diced
3 scallions, sliced on diagonal
1 jalapeno, minced
1 cup lime juice, or enough to cover
1 tablespoon olive oil
2 tablespoons orange juice
1/4 cup chopped cilantro
1/2 mango, diced
1 pink grapefruit, cut in sections and diced, juice reserved
1 orange, cut in sections and diced, juice reserved
Salt and pepper

Steps:

  • Blanch the shrimp in boiling water until no longer translucent, 1 to 2 minutes. Drain and refresh in cold water. Cut into 1/2-inch pieces.
  • Combine the shrimp, scallops, salmon, red pepper, scallions, jalapeno, and lime juice in a large bowl. Refrigerate, covered, for 2 to 3 hours, stirring occasionally. Drain off most of the liquid.
  • Whisk together the olive oil, orange juice, and cilantro. Pour over fish and add diced mango, grapefruit, orange pieces, and their juices. Season with salt and pepper. Refrigerate until ready to serve.

1 teaspoon ginger
1 teaspoon paprika
1 tablespoon onion powder
2 tablespoons garlic salt
2 tablespoons Worcestershire sauce
1 cup ketchup
1/4 cup soy sauce
1 (20 ounce) can crushed pineapple in juice
1/4 cup brown sugar

Steps:

  • Preheat oven to 400*. Spray a 9x13 inch baking dish with cooking spray. Arrange chicken pieces on prepared baking dish.
  • In a small bowl, mix together ginger, paprika, onion powder and garlic salt. Add the Worcestershire sauce and mix well. Divide this mixture and brush half over the chicken pieces. Bake for 15 minutes. Turn chicken pieces and baste with remaining half of Worcestershire sauce mixture; bake for an additional 15 minutes.
  • In a medium bowl, combine ketchup, soy sauce, pineapple and brown sugar. Carefully spoon the pineapple mixture over baked chicken. Bake an additional 30 minutes. Serve hot.

2 red finger peppers or 1 jalape�o finely chopped (Season to taste; some like it HOT!)
4 key limes
1 15 oz. can black beans opened, rinsed and drained
1 medium red onion chopped
1 large or 2 small avocados
1 8 oz. container of jumbo crab meat rinsed and pulled apart (optional)
1 6-1/2 oz. can of sliced black olives
1-1/2 cups shredded iceberg or romaine lettuce
8 oz shredded cheese (queso blanco, cheddar or pepper jack)
1 8 oz. container sour cream
Chili lime taco chips (or any flavor)
6 12 oz. margarita glasses (you can also serve in a chip and dip bowl

Steps:

  • Stir together papaya, mango, cilantro, peppers and the juice from 2 key limes. Let flavors blend for about 10 minutes. Peel, seed and chop the avocado and toss with the juice from the other 2 limes. In a margarita glass or bowl, layer these ingredients in order � 2 tablespoons black beans, 2 tablespoons fruit salsa, 2 tablespoons avocado, Crab (if adding) 1 to 2 tablespoons in center of avocado layer, a sprinkling of onions to taste, a sprinkling of olives to taste, 1/4 cup lettuce, 2 to 3 tablespoons cheese, and a generous dollop of sour cream. TICKLED PINK TROPICAL ISLAND "ICED TEA"



Tickled Pink Tropical Island

Based on the classic Long Island Iced Tea cocktail, but with a tropical twist from the guava nectar! Pretty and pink, and not overly sweet. A splash of club soda adds a nice tickle, and keeps the drink from being dangerously potent. You can double the liquor and decrease the juices and soda amounts, to your individual preference. Serve in a tall glass garnished with fresh lime wedges, and add a pink straw for sipping. Very refreshing! P.S. This is also great made with Malibu rum! 2 purchased angel food cakes (10 to 12 ounces each)
2 containers (16 ounces each) vanilla frosting
1 teaspoon imitation banana extract
Yellow food coloring
1 ripe banana, mashed
2 cups sweetened flaked coconut
1 cup chocolate morsels or chopped chocolate, melted
1 tube store-bought green icing
1 cup fruit-shaped candies
Special Equipment: 1 palm tree decoration, aluminum foil

Steps:

  • Place 1 cake, wide side down, on a serving platter. Stir frosting and banana extract in a large bowl to blend. Stir in yellow food coloring, 1 drop at a time, until desired color is achieved. Transfer 1/2 cup of banana frosting to a medium bowl; stir in mashed banana. Spread mashed banana mixture over top of cake. Cut 1 (2-inch wide) wedge from second cake. Spread 1/4 cup of yellow frosting over cut ends of second cake. Bring cut ends of second cake together, pressing to adhere. Place second cake, wide side down, atop cake on platter. Tear cut cake wedge into cubes. Fill hole in center of cakes with cake cubes. Spread remaining yellow frosting evenly over top and sides of cake to coat completely. Sprinkle cake with coconut, pressing lightly to adhere.
  • Create an island "volcano" mold by shaping aluminum foil into a volcano shape, measuring 2 to 3 inches in diameter. Dip in melted chocolate and let cool and harden. Place the mold on top of the cake. Fill the center of the mold with green icing and smooth out. Place palm tree decoration inside the mold. Arrange fruit-shaped candy decoratively around the palm tree and base of cake.

This is a great Caribbean shrimp dish that I wanted to get on Zaar for the Caribbean. This recipe comes from Walter Scheib, former White House Chef. The warm fruit salsa is a perfect accompaniment & adds to the flavor of this wonderful dish.

2 ounces julienne tomatoes

Steps:

  • In a large bowl- combine all ingredients except shrimp & set aside.
  • Go ahead & preheat your grill to medium heat.
  • Toss shrimp in baste mix & grill on lightly oiled grill. Turning once, cook 4 minutes on each side.
  • Baste shrimp once more before serving.
  • Serve on top of warm fruit salsa.
  • Warm Fruit Salsa:.
  • In sauté pan over medium heat- sauté oil, onions, garlic and jalapeños for 2- 3 minutes.
  • Add fruit and tomatoes, cooking for 2 - 3 minutes, don't stir or over-mix as fruit will break up.
  • Add cumin, coriander, lime juice & hot sauce. Cook 1 - 2 minutes, the fruit should be warm, not mushy.
  • Add chopped cilantro when ready to serve.
  • Serve on top of warm fruit salsa.

8 cups Rice Chex™ cereal
1 cup shredded coconut, if desired
1 cup dried banana chips
1 package (7 oz) dried tropical three-fruit mix
1 jar (3 oz) macadamia nuts
3 tablespoons butter or margarine
1/4 cup packed brown sugar
1/4 cup frozen (thawed) pineapple or orange juice concentrate

Steps:

  • In large microwavable bowl, mix cereal, coconut, banana chips, tropical three-fruit mix and nuts.
  • In microwavable measuring cup, microwave butter uncovered on High about 30 seconds or until melted. Stir in brown sugar and pineapple juice concentrate. Microwave uncovered on High about 30 seconds or until hot. Stir; pour over cereal mixture, stirring until evenly coated.
  • Microwave uncovered on High 6 to 8 minutes, stirring every 2 minutes, until mixture just begins to brown. Spread on waxed paper or foil; cool about 15 minutes. Store in airtight container.

My recipe for a frosted carrot layer cake with tropical fruit and macadamias. You can also prepare these as cupcakes or a sheet cake if desired, following the baking guides below.

1 1/2 cups softened unsalted butter (plus more for pans)
2 cups raw coconut sugar crystals (Coconut Secret)
2 1/2 cups all-purpose flour (plus more for pans)
2 1/2 teaspoons baking powder
1 1/4 teaspoons baking soda
1 teaspoon salt (omit if using salted butter)
1 teaspoon allspice (or 1/3 tsp each cinnamon, cloves, nutmeg)
1/2 teaspoon ginger powder
4 large beaten eggs
1 (6 ounce) container pina colada yogurt (Yoplait)
1/4 cup natural coconut rum
1 teaspoon pure vanilla extract
2 1/4 cups grated peeled carrots
1 cup baker's angel flake coconut
1 pureed medium very ripe banana (reserve 2 tablespoons)
1 (8 ounce) can well-drained crushed pineapple (reserve juice)
1 cup roasted macadamia nuts (2/3 c chopped, 1/3 c ground)
24 ounces softened real cream cheese
1 cup unsalted butter
1 (16 ounce) package sifted confectioners' sugar
2 tablespoons pureed ripe bananas
1 tablespoon lime juice
2 teaspoons pineapple juice
1 1/2 teaspoons natural coconut rum (not coconut extract)
1/2 teaspoon pure vanilla extract
1 small pinch salt
1/3 cup ground macadamia nuts (sides, from divided portion above)
1/3 cup baker's angel flake coconut (or more, top of cake)
1 tablespoon fresh carrot (curls or shreds, top center of cake)
1/4 teaspoon finely grated fresh lime peel (flecks, top of cake)

Steps:

  • (BAKING NOTES: AVOID 9-INCH CAKE PANS WHICH HAVE LEFT AND RIGHT SIDE HANDLE TABS, MAKING IT IMPOSSIBLE TO FIT THREE 9-INCH PANS ON ONE BAKING RACK, WHICH IS RECOMMENDED FOR PROPER RISING AND EVEN BAKING. HERE IS A GUIDE FOR VARIATION BAKING TIMES AT 350°F: Two 8 x 1-1/2-inch round baking pans -- 35 to 40 minutes Two 9 x 1-1/2-inch round baking pans -- 30 to 35 minutes Two 8 x 8 x 2-inch baking pans -- 25 to 35 minutes Two 9 x 9 x 2-inch baking pans -- 25 to 35 minutes -- One 13 x 9 x 2-inch baking pan -- 30 to 35 minutes One 15 x 10 x 1-inch baking pan -- 25 to 30 minutes Cupcakes (half full of batter) -- 18 to 23 minutes). (STEP ONE): PLACE oven rack in center position; PREHEAT oven to 350°F; OIL three (9-inch) cake pans lightly; PRESS a sheet of parchment paper into the bottom of both cake pans: SCORE parchment paper around bottom perimeter of cake pan; CUT a circle from scored sheet; LINE the bottoms of cake pans with parchment paper cut-out; BUTTER top of parchment paper insert well; DUST the greased inserts lightly with flour; TAP out excess flour; SET prepared pans aside.
  • PULSE 1 cup pre-roasted macadamia nuts in a food processor and save 2/3 cup for the cake and set aside; COARSELY grind remaining 1/3 cup macadamia nuts in processor for the garnish, transfer to separate small bowl and set aside; PEEL enough fresh carrots to yield 2 1/4 cups grated; SHAVE a few 3-4 inch strips from carrots using a vegetable peeler and place into ice water for the garnish; FINELY grate the remaining carrots using a food processor grate to yield 2 1/4 cups (remove any large chunks that may get in), transfer grated carrots to a large bowl; ADD 1 cup Baker's Angel Flake coconut to carrots in bowl; PUREE one medium very ripe banana in food processor; ADD all but 2 tablespoons of banana puree to carrot mixture (reserving 2 tablespoons banana puree for the icing); RESERVE juice from one (8 ounce) can crushed pineapple; ADD well-drained crushed pineapple to carrot mixture in bowl; BLEND the carrot/coconut/banana/pineapple mixture well and set aside until needed; FOLLOW the link if candied carrot curls are desired, courtesy of The Cupcake Project (with thanks): http://www.cupcakeproject.com/2010/04/candied-carrot-curls-unique-carrot.html.
  • MIX the following dry ingredients together in a separate medium bowl: 2 1/2 cups all-purpose flour, 2 1/2 teaspoons baking powder, 1 1/4 teaspoons baking soda, 1 teaspoon salt (omit if using salted butter), 1 teaspoon ground allspice (or 1/3 tsp each cinnamon, cloves, nutmeg), and 1/2 teaspoon ginger powder; SET aside.
  • CREAM 1 1/2 cups (3 sticks) unsalted butter in a large mixing bowl using an electric stand mixer until light and fluffy; ADD 2 cups Coconut Secret brand Raw Coconut Crystals gradually to the creamed butter and beat well; CRACK 4 eggs into a separate container and remove any shell fragments; LIGHTLY beat eggs without adding to mixture.
  • ALTERNATELY beat in the dry flour mixture and pour beaten egg mixture in one fourth increments on medium-low speed, until all of the flour mixture is used and all egg has been beaten into mixture; STOP mixer; ADD one 6 ounce container Yoplait pina colada yogurt, 1/4 cup natural coconut rum and 1 teaspoon pure vanilla extract; MIX on lowest speed; SLOWLY add the carrot/coconut/banana/pineapple mixture while beating on medium speed (without over-mixing); RAISE standing mixer top and scrape attachment and bowl sides; REMOVE bowl from stand; FOLD in 2/3 cup coarsely chopped roasted macadamia nuts.
  • DIVIDE batter equally into the 3 prepared pans; DROP each cake pan levelly onto countertop 3 times to disperse air pockets; PLACE cakes into oven; SET timer for 30 minutes; BAKE until timer sounds; TEST center(s) of cake(s) with a wooden toothpick or cake tester until it comes out clean (bake for an additional 5 minutes and test again); REMOVE baked cakes from oven; LEAVE the cakes in pans to rest and cool for 10 minutes; CAREFULLY invert and transfer cakes from pans onto cooling racks, peeling away parchment paper; ALLOW cakes to cool completely; ZEST one fresh lime to yield 1/4 teaspoon and set aside; SQUEEZE juice from lime to yield 2 teaspoons for the icing.
  • INTO a small cup using a fork to blend, mix 2 tablespoons banana puree, 1 tablespoon lime juice, 2 teaspoons reserved pineapple juice, 1 1/2 teaspoons natural coconut rum, and 1/2 teaspoon pure vanilla extract; SET mixture aside; INTO a large mixing bowl add 12 ounces softened real cream cheese and 1 stick softened butter over; BEAT until creamy; SCRAPE the mixture of banana, juices, rum and extract into the mixing bowl; BEGIN beating; SIFT in the powdered sugar while beating constantly until smooth; SLOWLY pour in the reserved blend the ISLAND ICING until smooth and creamy.
  • PLACE one cake layer top-side up on cake plate or cake stand; SPREAD about 2/3 cup of the ISLAND ICING on the first layer of cake; PLACE the second cake layer top-side down evenly over first; REPEAT procedures to the third layer top-side up again; FROST the sides of the cake first with the ISLAND ICING; COVER the top layer of cake loosely with plastic wrap; TOSS 1/3 cup ground macadamia nuts along the sides of the cake; REMOVE wrap from unfrosted top cake layer.
  • FROST the top of the cake with the remaining ISLAND ICING, decorating in swirls (Note: Any leftover icing freezes well if stored in an airtight container then defrosted in refrigerator); SPRINKLE the top of the cake with 1/3 cup flaked coconut; GARNISH top with 1 tablespoon finely grated fresh carrot and a few flecks of fresh lime zest; REFRIGERATE for an hour to set icing before serving.
  • CUT servings and place onto plates; TEMPER cake servings to room temperature, covered loosely with plastic wrap (OR) WARM cake uncovered in a microwave defrost setting just long enough to soften cake and temper frosting; SERVE and enjoy!

6 skinless chicken breast halves
1 c tropical terriyaki marinade with pineapple
4 c romaine lettuce leaves
1 c chopped red cabbage
6 oz pineapple chunks, fresh
2 large granny smith apples diced in small chuncks
PICO DE GALLO
1 pt baby cherry tomatoes
1 diced red onion
2 tsp chopped fresh jalapeno pepper
pinch of pink topical sea salt
COMBINE ALL INGREDIENTS IN A SMALL BOWL COVER AND CHILL
HONEY LIME DRESSING
1/4 c dijon mustard
1/4 c honey
1 1/2 Tbsp organic cane sugar
1 1/2 Tbsp organic apple cider vinegar
1 1/2 tsp organic lime juice
1 Tbsp organic pineapple juice
COMBINE ALL INGREDIENTS IN A SMALL BOWL COVER AND CHILL

Steps:

  • 1. Marinate the chicken for at lease 6 hours. then cook chicken breast on grill 6 minutes per side. or until done.
  • 2. Combine lettuce and cabbage together and divide in your serving salad plates. put the pico de gallo over the lettuce.
  • 3. Put pineapples and apples over pic de gallo, then add dice chicken, then add your home made Honey Lilme Dressing.serve with small tortilla chips. Enjoy!!!!

500 g pasta (for example spaghetti)
1/4 teaspoon ground black pepper
1/4 teaspoon cayenne pepper
1/4 teaspoon garlic powder
1/4 teaspoon paprika
3/4 teaspoon salt
2 tablespoons margarine or 2 tablespoons vegetal oil
1 tablespoon garlic, minced
1 tablespoon ginger, minced
2 tablespoons coconut flakes
300 -500 g shrimp
2 tablespoons cilantro, fresh chopped
1 lime, juice of
2 -4 tablespoons coconut milk (optional)

Steps:

  • Make the seasoning blend by combining all the spices and the salt (first 5 ingredients for the sauce) in a small bowl.
  • Prepare the other ingredients.
  • Bring a big pot of salted water to boil and add pasta when ready.
  • In the meantime prepare your shrimps.
  • Add margarine or vegetal oil to the pan (medium heat).
  • Stir in garlic and ginger and coconut flakes.
  • When it begins to change the color add the shrimps.
  • Change to maximum heat.
  • Sprinkle the entire seasoning blend over the shrimp, and give it all a good stir.
  • Saute the shrimp for 5 to 6 minutes or until they begin to brown.
  • Be sure to cook both sides of all the shrimp.
  • Check the pasta and if necessary drain before the sauce is ready (adding some oil to prevent sticking).
  • Cut the lime in half and squeeze the first half into the pan over the shrimp.
  • Add cilantro (reserve some leaves for decoration).
  • Add 2 tablespoon coconut milk if you prefer it wheat.
  • Stir and serve.
  • Squeeze the second half lime over the pasta in the plate.
  • Decorate with coconut milk and the reserved cilantro leaves.
