Turn your favorite vanilla ice cream into a Frozen Tropical Fruit Dessert with chopped pineapple, juicy maraschino cherries and KOOL-AID Drink Mix.

Steps:
- Line 9x5-inch loaf pan with foil, with ends of foil extending over sides of pan.
- Beat ice cream and soft drink mix in large bowl with mixer until blended. Stir in pineapple. Spoon into prepared pan.
- Freeze 4 hours or until firm. Use foil handles to lift dessert from pan to serving plate; discard foil. Top with cherries before serving.

STRAWBERRY TROPICAL FRUIT GELATIN DESSERT
I have been reviving the Jello desserts lately. I had forgotten how delicious these really are, so light, cool, and refreshing. I'll be posting more of these soon. I hope you enjoy this one!

Steps:
- 1. Bring 1/2 cup water to a boil, remove from heat. Add Jello and stir for about two minutes until dissolved. Pour into a blender or a food processor. Add cream cheese and mix on high until well blended.
- 2. Add ice water to Jello mixture and mix on high until well blended. Add tropical fruit and pulse a few times until fruit is in smaller pieces.
- 3. Pour into a Jello mold pan or and 8 X 8 casserole dish and refrigerate until firm. Cut into squares or spoon into a dessert dish and serve. You may add a dollop of whipped topping, if desired.

Steps:
- Heat oven to 400ºF.
- Spray tortillas lightly with cooking spray; sprinkle with cinnamon. Place in single layer on parchment-covered baking sheet. Bake 5 to 7 min. or until crisp. Cool.
- Grate enough lemon peel to measure 1 tsp. zest; reserve for later use. Squeeze 1 tsp. juice from lemon; toss with mangos, bananas and kiwi in medium bowl.
- Process cottage cheese, dry pudding mix, milk and reserved lemon zest in food processor until smooth. Spoon into separate medium bowl; gently stir in 1/2 cup COOL WHIP.
- Spread tortilla chips with pudding mixture just before serving; top with fruit salsa and remaining COOL WHIP.

- Drain off any excess liquid from store-bought fruit salad. In a large bowl toss together all of the fruit, sugar and the Grand Mariner. Serve mixed fruit with mint leaves as garnish.

TROPICAL FRUIT DESSERT WITH MANGO SAUCE
Steps:
- 1. Cut each pineapple in half lengthwise. (Leave the green tops on.) Using a serrated-edged knife, cut out the flesh, leaving a thin border all round. 2. Cut the flesh into small pieces. Discard any woody central core. Place it in a bowl with a lid. 3. Cut the passion fruit in half. Scoop the seeds into the bowl. 4. Peel and dice the pawpaw. Discard the black seeds. Add it to the bowl. 5. Cut the banana into l/2 in (1 cm) chunks. Toss in a little lime or lemon juice. Add to the bowl with the grapes. Toss gently and cover with the lid. Chill until ready to serve. 6. Peel the skin off the mango. Now cut all the mango flesh off the seed (pits). Add it into a blender or food processor. Add the sugar and rum. Run the machine until smooth. Add lime or lemon juice to taste. Pour into a small container with a lid. 7. To serve, pile the fruits back into the pineapple shells. Place on serving plates. Pour the mango sauce into six dishes. Using a fork, remove a piece of the fruit from the pineapple shell. Dip the fruit in the mango sauce before eating.
