2 chicken leg quarters (8 ounces each), skin removed
3 tablespoons ketchup
2 tablespoons orange juice
1 tablespoon brown sugar
1 tablespoon red wine vinegar
1 tablespoon olive oil
1 teaspoon minced fresh parsley
1/2 teaspoon Worcestershire sauce
1/4 teaspoon garlic salt
1/8 teaspoon pepper
2 teaspoons cornstarch
1 tablespoon cold water

Steps:

  • With a sharp knife, cut leg quarters at the joints if desired; place in a 1-1/2-qt. slow cooker. In a small bowl, combine the ketchup, orange juice, brown sugar, vinegar, oil, parsley, Worcestershire sauce, garlic salt and pepper; pour over chicken., Cover and cook on low until meat is tender, 3-4 hours., Remove chicken to a serving platter; keep warm. , Skim fat from cooking juices; transfer 1/2 cup to a small saucepan. Bring liquid to a boil. Combine cornstarch and water until smooth. Gradually stir into the pan. Bring to a boil; cook and stir until thickened, about 2 minutes. Serve with chicken. If desired, top with additional fresh parsley.

I couldn't find any recipes for a tropical bbq chicken that had all the ingredients I wanted to use so I made one myself. If you want a thicker sauce I would reduced the pineapple juice by 1/2 a cup or increase the flour by a tablespoon.

3/4 cup chopped onion
3 tablespoons butter
3 tablespoons flour
3 cups pineapple juice
1/4 cup soy sauce
2 teaspoons prepared mustard (I used spicy brown)
1/2 cup barbecue sauce, sauce (I used hunt's hickory brown sugar)
1 1/2 cups dark brown sugar (more or less depending on taste)
1 teaspoon chili powder (to taste can be more or less)
1 cup chicken broth
2 1/2 lbs chicken (pieces, breasts, bone in our bone out, with skin or without)

Steps:

  • Saute onion in butter for 5-10 minutes over medium heat.
  • Add flour and mix until a paste is formed.
  • Slowly stir in pineapple juice waiting for all juice to be absorbed before adding more.
  • Add soy sauce, mustard and bbq sauce and stir until dissolved.
  • Add brown sugar and chili and stir until dissolved.
  • Pour in chicken broth, stir and then add chicken. Cook on stove until slightly thickened.
  • Preheat over to 325 and cook with lid on for 1- 3 hours depending on how long you want the chicken to soak for.

1/2 cup barbecue sauce
4 boneless, skinless chicken breasts
1 teaspoon salt
1/2 teaspoon black pepper
1 (8-ounce) can sliced pineapple, drained
1 red bell pepper, cut into 1-inch chunks
2 scallions, sliced

Steps:

  • Preheat oven to 350 degrees F. Cut 4 (12-inch) squares of aluminum foil.
  • Place barbecue sauce in a shallow dish. Evenly sprinkle chicken breasts with salt and pepper, then dip in barbecue sauce, coating completely.
  • Place each breast in center of a piece of foil. Top evenly with pineapple slices, bell pepper, and scallions. Spoon any remaining barbecue sauce over vegetables. Wrap foil securely, leaving room for steam to circulate, and seal edges tightly. Place packets on a baking sheet.
  • Bake 20 minutes, or until chicken is no longer pink in center. Open packets carefully, as steam may be released.

1⁄4 cup molasses
1⁄8 to 1⁄4 teaspoon red pepper sauce
2 tablespoons cider vinegar
2 tablespoons orange juice
2 tablespoons Worcestershire sauce
3 whole bone-in chicken breasts, halved
2 teaspoons prepared Dijon mustard

Steps:

  • 1. Combine molasses, vinegar, Worcestershire sauce, mustard, pepper sauce and orange juice. 2. Arrange chicken in stoneware. Brush sauce over chicken. 3. Cover and cook on LOW 7 to 9 hours (HIGH: 3 to 5 hours).
