In another bowl, whisk together the coconut oil, brown sugar, eggs, yogurt and vanilla. Stir in the bananas. Fold the banana mixture into the dry mixture until just combined.

Remove from the pan and let cool completely on a rack.

TROPICAL PINEAPPLE BANANA BREAD

Tropical Pineapple Banana Bread image

Banana bread travels to the tropics with the addition of pineapple and macadamia nuts. Excellent with coffee in the morning or as a snack with a glass of milk in the afternoon. These loaves freeze well, too. Wrap tightly in plastic wrap, and wrap again in aluminum foil or a freezer bag.

GLUTEN FREE TROPICAL BANANA BREAD

Gluten Free Tropical Banana Bread image

A moist and delicious banana bread for those unable to eat wheat gluten. It's a variation on GinnyP's recipe #57225, which was pretty good, but lacked any type of flour. The coconut flour I've added in this version adds a little more depth to the flavor, as well as consistency in the batter. As with all gluten free breads, it's best when fresh, but by tightly wrapping the bread as soon as it cools, it stayed moist for several days.

Time 55m

Yield 1 loaf

Number Of Ingredients 14

2 bananas, slightly over-ripe
1 egg
3/4 cup dark brown sugar
1/4 cup canola oil
1/2 cup milk
1/2 teaspoon vanilla extract (I used my homemade gluten free vanilla, Homemade Vanilla)
1/2 cup potato starch
1/2 cup cornstarch
1/4 cup coconut flour
5 teaspoons baking powder
3/4 teaspoon xanthan gum
1/4 teaspoon baking soda
1 teaspoon ground coriander
1/4 teaspoon sea salt

Steps:

  • Preheat oven to 350°.
  • Spray 9x4 loaf pan with non-stick cooking spray.
  • In large bowl, with a hand mixer, mash bananas. Add egg, brown sugar, oil, milk and vanilla. Mix well.
  • In small bowl, sift together potato starch, cornstarch, coconut flour, baking powder, xanthan gum, baking soda, coriander and salt. (Sifting will better distribute the baking powder to avoid areas of bitterness.).
  • Pour batter into prepared loaf pan, smoothing as much as possible, to ensure a uniform top.
  • Bake for 40 minutes, or until toothpick inserted in center comes out clean.
  • Cool on wire rack for 5-10 minutes before removing from pan.
  • Slice and enjoy immediately. Wrap any leftovers tightly in plastic wrap to prevent drying out.

TROPICAL PINEAPPLE COCONUT BANANA BREAD RECIPE - (4.5/5)

Tropical Pineapple Coconut Banana Bread Recipe - (4.5/5) image

Provided by á-9063

Number Of Ingredients 13

1 stick of butter, melted and cooled
1/3 cup organic cane sugar
1/3 cup dark brown sugar
2 eggs
1 1/2 cups white flour
1/2 cup whole wheat flour
1 teaspoons salt
2 teaspoons baking powder
5 very ripe bananas, coarsely mashed
6 oz. canned crushed pineapple, drain liquid
5 oz. canned cream of coconut (not coconut milk - however I have used coconut milk when I couldn't find cream of coconut and I added a 1/4 tsp of vanilla)
1 teaspoon vanilla
1/2 cup of roughly chopped and toasted macadamia nuts

Steps:

  • Preheat oven to 350F. Grease a standard loaf pan. Toast the nuts in the oven for about 10 minutes. Cream butter, 2 of the mashed bananas and sugars in a large bowl. Mix in eggs. In a separate bowl, mix the remaining dry ingredients. Mash remaining bananas thoroughly in another bowl (3rd) and fold in pineapple, cream of coconut, and vanilla. Fold both banana mixtures from other two bowls slowly into dry ingredients - don't over mix! Fold in the nuts. Pour batter into the pan. Bake for about 55-60 minutes until a toothpick inserted into center of loaf comes out mostly clean, rotate pan a few times while baking (Cooking time may vary depending upon your oven... my oven is commercial grade and tends to cook faster than others... just keep an eye on it :-) Let the bread cool on a rack and turn out of the pan after about fifteen minutes. Let cool almost completely (approximately 45 minutes) before slicing. The bread will be very dense and moist.
