TRIPLE SEC SALMON
This is an original recipe by yours truely. The trple sec mixture can also be used as a marinade and then the fish can be grilled or fryed.

Steps:
- In a medium-sized bowl, mix together the triple sec, soy sauce, thyme, five spice, and garlic.
- Preheat the oven to 375. Prepare a large baking dish by thinly spreading the olive oil on the inside.
- Thinly slice the onion and peppers.
- Place the salmon fillets inside of the baking dish, arrange the onions and peppers on top of each fillet, and then season them with the salt and pepper.
- Pour the triple sec mixture over the top of the fillets.
- Cover and bake in the oven for 20-30 minutes, or until fish flakes easily with a fork.

TRIPLE CITRUS GLAZED GRILLED SALMON

- Glaze: Bring all of the ingredients to a boil in a medium-sized saucepan over medium heat, stirring to melt the preserves and to keep the mixture from burning. Reduce the heat to a simmer and let the glaze reduce until syrupy, about 15 to 20 minutes. Adjust the seasonings with salt and freshly cracked pepper, to taste.
- Salmon:
- Heat a grill to medium-high heat.
- Brush both sides of the fillets with olive oil just before grilling, then season with salt and pepper, to taste. Grill the salmon for about 4 minutes per side, brushing with the glaze during the final few minutes of cooking. Transfer the salmon to serving plates and brush them with the remaining glaze before serving.
TRIPLE SEC ORANGE CHICKEN

- 1. Mix the orange juice, soy sauce, rice vinegar, brown sugar, sesame oil, and sambal olek together and set aside. Place the oil in a large saucepan. Cook the chicken until no longer pink. Remove the chicken and set aside. Add the garlic and cook 30 seconds. Add the triple sec. Cook 1 minute.
- 2. Pour in the orange juice mixture. Bring to a boil. Mix the cornstarch with the water and whisk into the sauce and let it thicken.
- 3. Add the chicken back to the pan and cook 1 minute. Serve with rice and garnish with cilantro.
CRANBERRIES IN TRIPLE SEC
Whole cranberries pickled in an orange liquor. This is a very simple and easy. The hard part is not eating it until it is ready. The cranberries will lose their very tart taste after sitting for a few days.

Steps:
- Empty the cranberries in a large bowl and wash the cranberries in cold water.
- Drain and pick out the mushy cranberries. Some cranberries are springy but are still good depending on taste. Taste one or two to see if you want them.
- Pour the cranberries into the jar.
- Fill the jar to the top with Triple Sec. Hiram & Walker is good.
- Put lid on the jar and let it sit for at least 2 or 3 days.
- To serve, scoop cranberries out of liquor and put in serving dish. Or you can leave them in the liquor.
- Enjoy!
