2 quarts popped popcorn
1 cup peanuts
¾ cup sugar
¼ cup corn syrup
¼ cup cocoa powder
½ cup butter
1 teaspoon vanilla

Steps:

  • Preheat oven to 250 degrees F (120 degrees C). Oil a 10x15 inch baking pan with sides.
  • Place popcorn and peanuts into a large, metal bowl, and set aside. Stir together the sugar, corn syrup, cocoa powder, and butter in a saucepan over medium-high heat until it comes to a boil. Boil for 2 minutes. Stir in the vanilla, then pour over the popcorn. Stir until the popcorn is well coated. Spread the popcorn into the prepared pan.
  • Bake in preheated oven for 30 minutes, stirring several times.
  • Remove from the oven, and allow to cool to room temperature. Break into small clumps, and store in an airtight container.

1 can (14 oz) dulce de leche (caramelized sweetened condensed milk)
1 bag (12 oz) semisweet chocolate chips (2 cups)
1 teaspoon vanilla
2 cups caramel popcorn
25 caramels, unwrapped
2 tablespoons whipping cream
1/4 teaspoon kosher (coarse) salt
1 1/2 cups caramel popcorn

Steps:

  • Line bottom and sides of 8-inch square pan with foil, leaving edges of foil hanging over 2 sides of pan for easy removal later; spray foil with cooking spray.
  • In 2-quart saucepan, heat dulce de leche and chocolate chips over low heat, stirring constantly, until chocolate is melted and mixture is smooth (mixture will be very thick); remove from heat. Quickly stir in vanilla. Stir in 2 cups caramel popcorn. Spread in pan.
  • In medium microwavable bowl, microwave caramels and cream uncovered on High 2 minutes, stirring every 30 seconds, until melted and smooth. Very slowly pour caramel mixture over fudge layer, and gently spread to cover. Sprinkle with salt and 1 1/2 cups caramel popcorn; press gently so it sticks. Refrigerate until firm, about 2 hours. Cut into 1-inch squares (8 rows by 8 rows). Store covered in refrigerator.

1 teaspoon baking powder
1/2 teaspoon fine salt
1/4 teaspoon baking soda
1/4 teaspoon ground cloves
8 tablespoons unsalted butter (1 stick)
6 ounces bittersweet chocolate, finely chopped
2 large eggs
1 large yolk
1 cup firmly packed light brown sugar
2 teaspoons pure vanilla extract
6 ounces semisweet chocolate chips
6 ounces white chocolate chips

Steps:

  • Whisk the flour, baking powder, salt, baking soda, and cloves together in a medium bowl. Melt the butter in a saucepan over medium heat. Remove pan from the heat, add the bittersweet chocolate, then set aside until melted.
  • Whisk the eggs, brown sugar, and vanilla together in a medium bowl, then slowly whisk in chocolate. Stir in the flour mixture to make a loose dough. Don't overwork the dough. Fold in the chips. Cover with plastic wrap and refrigerate until firm, about 2 hours.
  • Preheat oven to 350 degrees F (or 325 if convection option is available).
  • Line a baking sheet with parchment paper. Form dough into balls, about 2 inches or 1 1/2 ounces each, and put on the prepared baking sheets, leaving a couple inches between the cookies. Bake until outside is crackly, but the center is still moist, about 13 to 15 minutes, or 12 in convection. Cool on a rack.

1 1/2 cups popcorn kernels
1 tablespoon vegetable oil
10 ounces white chocolate, chopped
1 stick (8 tablespoons) unsalted butter, cut into pieces
1 tablespoon pure vanilla extract
3/4 teaspoon fine salt
1/2 cup confectioners' sugar
1/2 cup multicolored sprinkles

Steps:

  • Put the popcorn kernels and oil in a large, wide pot, stir to coat, cover and heat over medium heat. Once you begin to hear the kernels pop, shake the pot until the popping subsides, about 8 minutes. Remove the pot from the heat, and transfer the popcorn to a large bowl.
  • Bring a couple inches of water to a high simmer in a large saucepan. Set into the saucepan a bowl that fits snugly without touching the water. Add the chocolate, butter, vanilla and salt, and heat, stirring occasionally, until all the chocolate and butter melts. (The fat from the chocolate and butter will separate, and that's OK.) Remove the bowl from the saucepan, and vigorously whisk in the sugar. The mixture should come together and be thick and creamy.
  • Pour the chocolate coating over the popcorn, add the sprinkles, then use your hands to toss the popcorn and evenly coat it with the white chocolate. Spread the popcorn out onto a baking sheet to let the coating set up, about 30 minute. (The popcorn can be stored in an airtight container at room temperature overnight.)

  • In a large bowl, combine the popcorn, pretzels and pecans. Drizzle with butter and toss; set aside. , In a microwave, melt white candy coating at 70% power for 1 minute; stir. Microwave at additional 10- to 20-second intervals, stirring until smooth. Drizzle over popcorn mixture; toss to coat. Spread on foil-lined baking sheets., In a microwave, melt milk chocolate coating; stir until smooth. Drizzle over popcorn mixture. Let stand in a cool place until chocolate is set. Store in an airtight container.
