TRIPLE-BERRY CRISP
Warm mixed berries topped with crispy oats makes a delicious fruit dessert!

Steps:
- Heat oven to 375°. Grease bottom and sides of square baking dish, 8x8x2 inches, with shortening. Mix granulated sugar and cornstarch in 3-quart saucepan. Add berries and lemon juice; toss until evenly coated. Heat to boiling over medium-low heat. Boil 3 to 4 minutes, stirring frequently, until thickened. Spoon berry mixture into baking dish.
- Mix brown sugar, flour, oats, cinnamon and salt in large bowl. Cut in butter, using pastry blender or crisscrossing 2 knives, until mixture looks like coarse crumbs; sprinkle over berries.
- Bake about 30 minutes or until topping is golden brown. Cool at least 20 minutes. Serve warm with whipping cream.

- Heat oven to 375°F. In ungreased 8-inch square (2-quart) glass baking dish, mix frozen berries, sugar and flour until fruit is coated.
- Bake uncovered 20 minutes. Stir fruit mixture. Sprinkle with granola.
- Bake 15 to 20 minutes longer or until light golden brown and bubbly. Let stand 5 to 10 minutes before serving. Serve warm with ice cream.

This is very versatile. It has a double crisp where 1/2 of the crisp goes on the bottom. If you are not a fan of this or your bottom layer is to soggy then just make it a single layer. Any berry combination should work fine and I've heard it used with peaches as well. If you love nuts but your family doesn't, try what I do and eat yours with pecan or maplenut icecream YUM! Also it works for fresh or frozen berries.

- Preheat oven to 350.
- Mix the berries, 5 t white sugar, lemon juice, and 2 T flour in a large bowl and set aside.
- Mix remaining flour, oats, brown sugar, and cinnamon and then cut in butter till crumbly. Then add nuts if desired.
- Sprinkle 1/2 of this mixture in a 9 by 13 and bake for about 15 minutes.
- Remove from oven and distribute berry mixture evenly over the crust. Sprinkle on remaining crumbles and bake for about another 30 minutes or till bubbly.

- Preheat oven to 325. Spray a 10" deep dish pie plate. Line a cookie sheet with foil, for possible run over in your oven. Set aside. In a large bowl, add cream cheese and beat until smooth and creamy. Add sugar, flour, eggs and vanilla, and beat for 3 minutes. Spread evenly into your prepared pie plate. Bake for 30 minutes or until no longer jiggly in middle. Raise oven temperature to 350.
- In a medium bowl, add berries, 1/3 c sugar and lemon juice. Tossing to coat, set aside while you prepare topping. In a medium bowl, whisk together flour, brown sugar, cinnamon, ginger and salt. Cut in butter using a pastry blender, fork or your fingers* work as well. Add in pecans if using.
- It will seem like there is no way all those berries will fit on this cheesecake, but they do! Place berries evenly over cheesecake layer, sprinkle topping evenly over berry layer. Place your foil lined sheet on bottom rack to catch any possible run over, then your cheesecake crisp on rack centered above foiled lined sheet, bake for 30-40 minutes or until topping is golden and juices are bubbling around the edges.
- Helpful Tips: You can use frozen fruit for this, but allow extra baking time and there may be more juices. *If using your fingers to blend butter into topping, work fast, as the heat from your fingers will melt the butter and you'll end up with a dough verses a crumb.
