THREE-BEAN BAKED BEANS
I got this recipe from an aunt and made a couple of changes to suit our tastes. With ground beef and bacon mixed in, these satisfying beans are a big hit at backyard barbecues and church picnics. I'm always asked to bring my special beans. -Julie Currington, Gahanna, Ohio

- Preheat oven to 350°. In a large skillet, cook and crumble beef with bacon and onion over medium heat until beef is no longer pink; drain., Stir in sugars, ketchup, barbecue sauce, molasses, mustard, chili powder and salt until blended. Stir in beans. Transfer to a greased 2-1/2-qt. baking dish. Bake, covered, until beans reach desired thickness, about 1 hour. , Freeze option: Freeze cooled bean mixture in freezer containers. To use, partially thaw in refrigerator overnight. Heat through in a saucepan, stirring occasionally and adding a little water if necessary.

BAKED BEANS WITH BACON

- Preheat the oven to 375 degrees F. Cook the pancetta and about two-thirds of the bacon in a large skillet over medium heat, stirring occasionally, until crisp, about 10 minutes. Transfer the bacon and pancetta to a bowl using a slotted spoon. Reserve the drippings in the skillet.
- Add the onion to the skillet and cook, stirring occasionally, until soft and golden, about 8 minutes. Add the ginger, garlic and chili powder and cook, stirring, 1 minute. Add the tomatoes and their juice, the molasses, Worcestershire sauce, vinegar, mustard powder, 1/2 teaspoon salt, and pepper to taste. Increase the heat to medium high, bring to a simmer and cook until slightly thickened, about 5 minutes. Add the pinto beans, then add the navy beans and their liquid and return to a simmer. Stir in the pancetta-bacon mixture. Transfer to a 2-quart baking dish.
- Pulse the buns with the remaining uncooked bacon in a food processor until finely ground. Sprinkle the crumbs evenly over the bean mixture. Cover and bake 45 minutes, then uncover and bake until the crumbs are golden brown, about 20 more minutes.

- Cook 4 chopped slices turkey bacon, 1 chopped onion, 3 chopped garlic cloves and 2 teaspoons thyme in vegetable oil in a large skillet, stirring, 5 minutes. Add two 15-ounce cans great Northern beans (drained and rinsed), 1 1/2 cups water, 1/2 cup ketchup, 1/3 cup maple syrup, 2 tablespoons yellow mustard, 1 tablespoon apple cider vinegar and 1/2 teaspoon pepper. Simmer over medium-low heat until thickened, about 20 minutes.

- 1. Let's get started---in a Dutch oven, cook bacon over medium heat until crisp. Remove to paper towels with a slotted spoon; drain, RESERVING 1 tablespoon drippings. Add onion to drippings; cook and stir over medium heat until tender.
- 2. Next, stir in the remaining ingredients; return bacon to pan. Transfer to a GREASED 2-qt. baking dish. Cover and bake at 325-degrees for 30-35 minutes or until thoroughly heated through. UNCOVER and bake until desired consistency. I usually bake mine for an additional 15-20 minutes. Psst---this bean bake is REALLY,REALLY GOOD. Try it and tell me what you think!!!
