1 pound beef stew meat, cut into 1-inch cubes
1 pound fresh baby carrots
2 medium potatoes, cut into chunks
2 medium onions, cut into wedges
1 cup drained diced tomatoes
1 cup beef broth
1 celery rib, cut into 1/2-inch pieces
2 tablespoons quick-cooking tapioca
1 teaspoon Worcestershire sauce
1/4 teaspoon salt
1/4 teaspoon pepper

Steps:

  • In a 3-qt. slow cooker, combine all ingredients. , Cover and cook on low for 8-10 hours or until meat and vegetables are tender.

TRADITIONAL HUNGARIAN BEEF GOULASH STEW

This recipe is the original way that my father showed me how to prepare Hungarian beef goulash and it is a beautiful dish. Accompanied with rice or potato, it is a complete meal with all flavoursome taste of Hungarian cooking.

Number Of Ingredients 8

800 g diced beef
2 tablespoons oil
3 onions, diced finely
1 tablespoon sweet Hungarian paprika
3 tomatoes, diced finely
1/2 red capsicum, diced finely
1/2 cup red wine
salt

Steps:

  • Heat oil in a deep frypan and cook onions on a medium heat until soft and translucent. Remove from heat and allow to cool slightly.
  • Add paprika to onion and stir through.
  • Add diced meat to mixture and coat and marinade the mixture whilst you prepare the tomato and capsicum. Make sure you keep the juice from the tomato to add to the dish.
  • Stir in the tomato and capsicum and return to a medium/high heat and allow to cook for a few minutes on this heat before reducing the heat to medium/low. Cover with a lid for this to cook.
  • After 15 minutes, add the wine and salt, stir and simmer for 1 hour at least with a cover/lid, stirring occasionally.
  • NOTE: do not brown the meat before adding to the onions -- it must marinade and cook with the vegetables so the juices create a nice flavorsome gravy.
  • Serve with mashed potato or boiled rice and a simple side salad of lettuce and vinegar.

I got this recipe off of an Irish tourism website. I've made it several times and every time it is a huge hit. The cider and Guinness combo is what makes it unique. It's excellent by itself or served with a little champ and soda bread.

2 1/2 lbs beef stew meat
2 large onions
6 medium carrots
2 tablespoons flour
1/2 cup dry cider
1 cup Guinness stout
1 parsley sprig
fat or beef dripping

Steps:

  • Cut the beef into chunks and dice the onions and carrots.
  • Toss the beef in the flour and fry quickly in hot fat.
  • Remove the beef and fry the onions until transparent.
  • Return the beef and add the carrots and the liquids. (Now is a good time to drink the extra Guinness and cider) :).
  • Bring just to the boil. Reduce the heat and bring to a very gentle simmer.
  • Cover closely, and cook for 1.5 to 2 hours.
  • Check that the dish does not dry out. Add more water if necessary.
  • Garnish with a little chopped parsley.

2 tbsp (30 ml) olive or vegetable oil
2 lb (1 kg) stewing beef cubes
¼ cup (50 ml) all-purpose flour
2 garlic cloves, minced
1 large onion, cut lengthwise into eighths
1 cup (250 ml) beef stock
28 oz (796 ml) can diced plum tomatoes
2 tbsp (30 ml) each worcestershire sauce and balsamic vinegar
1 tsp (5 ml) dried thyme (or 4-5 sprigs of fresh thyme)
1 bay leaf
½ tsp (2 ml) each salt and pepper
2 carrots, cut into 1-inch (2.5 cm) chunks
½ lb (250 g) scrubbed mini potatoes, quartered
just a pinch ;-) chopped fresh parsley

Steps:

  • 1. 1. Heat oil in Dutch oven or stockpot over medium-high heat until sizzling hot. Brown meat in 4 batches. Set beef aside; sprinkle with flour.
  • 2. 2. Add garlic and onion to pot; cook 3 to 4 minutes until just softened, adding more oil if necessary. Stir in broth, scraping up browned bits from the bottom. Add reserved beef, tomatoes, Worcestershire sauce, vinegar, thyme, salt, pepper and bay leaf. Bring to a simmer.
  • 3. 3. Simmer covered, on stove-top or in 325°F (160°C) oven for 1 hour until beef is fork tender. Add vegetables; cook 30 to 40 minutes or until vegetables are tender. Remove and discard bay leaf. Garnish each serving with some chopped parsley.
  • 4. • Slow-cooker Version: After Step 2, transfer mixture with carrots and potatoes to 24-cup (6 L) slow-cooker. Cook, covered, on LOW for 8 hours.
  • 5. • Beef Stew Provençial Version: Add 8 oz (250 g) button mushrooms when cooking garlic and onions. Substitute dry red wine for stock. Use thyme (as above) or substitute herbes de Provençe for thyme. Instead of potatoes and carrots, use 2 cups (500 mL) cut green beans and 1/2 cup (125 mL) black olives (pitted and halved).

TRADITIONAL CROCK POT BEEF STEW

This recipe came with our crock pot instructions 15 years ago and it's been well used. We love coming home from skiing to a pot of stew. Another serving addition to this recipe that comes from my husband's grandparents, is to serve up the stew in a bowl and top with a scoop of cottage cheese and then sprinkle with seasoned salt. It sounds funny but is so.....tasty, I recommend you try it that way if you like cottage cheese. If you want the stew a bit thicker you can leave the lid off the last 1/2 hour or so and turn the heat up to high.

  • Add the frozen peas during the last hour of cooking.
  • Stir thoroughly before serving.
