1 package (9 ounces) refrigerated cheese tortellini
2 cans (10-3/4 ounces each) reduced-sodium condensed tomato soup, undiluted
2 cups vegetable broth
2 cups 2% milk
2 cups half-and-half cream
1/2 cup chopped oil-packed sun-dried tomatoes
1 teaspoon onion powder
1 teaspoon garlic powder
1 teaspoon dried basil
1/2 teaspoon salt
1/2 cup shredded Parmesan cheese
Additional shredded Parmesan cheese, optional

Steps:

  • Cook tortellini according to package directions., Meanwhile, in a Dutch oven, combine the soup, broth, milk, cream, tomatoes and seasonings. Heat through, stirring frequently. Drain tortellini; carefully add to soup. Stir in cheese. Sprinkle each serving with additional cheese if desired.

1 package smoked sausage, sliced and halved
1 lb frozen cheese tortellini
4 cups chicken broth
1 can tomato and green chiles
1 ½ cups spinach, chopped
1 tablespoon olive oil
1 clove garlic, minced
¼ cup onion, minced
½ teaspoon paprika
¼ teaspoon ground cayenne pepper
1 tablespoon dried cilantro
1 teaspoon salt
¼ teaspoon black pepper
parmesan cheese, grated, optional

Steps:

  • In a large pot, saute garlic in olive oil. add smoked sausage, minced onion, paprika, and cayenne pepper to pot and cook on medium heat for 10 minutes.
  • Stir in diced tomatoes and green chiles to the mixture. Then, add chicken broth.

1-3/4 cups beef broth

1/3 cup dry red wine or additional beef broth
1/3 cup tomato sauce
1/4 cup tomato paste

2 tablespoons minced fresh parsley

1 medium onion, chopped
6 garlic cloves, minced
2 cans (14-1/2 ounces each) reduced-sodium chicken broth
1-3/4 cups water
1 can (14-1/2 ounces) diced tomatoes, undrained
1 package (9 ounces) refrigerated cheese tortellini
1 package (6 ounces) fresh baby spinach, coarsely chopped
2-1/4 teaspoons minced fresh basil or 3/4 teaspoon dried basil
1/4 teaspoon pepper
Dash crushed red pepper flakes
Shredded Parmesan cheese, optional

1 tablespoon olive oil
2 tablespoons unsalted butter
1 small yellow onion, diced
4 cloves garlic, minced
¼ teaspoon red pepper flakes
½ teaspoon kosher salt
¼ teaspoon freshly ground black pepper
½ cup dry white wine
4 cups vegetable broth
1 can crushed tomato
1 McCormick® dried bay leaf
1 package cheese tortellini
1 container baby spinach
¼ cup heavy cream
½ cup freshly grated parmesan cheese, for garnish
¼ cup fresh basil leaves, for garnish

Steps:

  • Melt the olive oil and butter together in a Dutch oven over medium heat. Add the onion, garlic, red pepper flakes, salt, and pepper. Cook, stirring occasionally, until the onions are translucent and the garlic is fragrant, about 5 minutes.
  • Add the white wine and cook for another 2 minutes, scraping up any browned bits from the bottom of the pot with a wooden spoon, until the wine is reduced by at least half.
  • Add the vegetable broth, crushed tomatoes, and bay leaf. Bring to a boil, then reduce the heat to low and simmer for 10 minutes.
  • Add the tortellini and spinach and simmer for another 5-6 minutes, until the tortellini are cooked through and the spinach has wilted.
  • Remove the bay leaf, then stir in the heavy cream.
  • Ladle the soup into bowls and garnish with the Parmesan cheese and basil.
