8 c. low-sodium vegetable or chicken broth
1 1-pound bag frozen peas and carrots
10 oz. fresh cheese tortellini
1/2 c. heavy cream
Kosher salt and black pepper, to taste
Shaved parmesan cheese and croutons, for topping
Olive oil, for drizzling

Steps:

  • Bring the broth to a gentle boil in a medium pot over medium-high heat.
  • Add the frozen vegetables to the pot and return to a gentle boil.
  • Add the tortellini and cook until almost tender, 3 to 5 minutes.
  • Add the heavy cream and cook for another 2 minutes. Taste and adjust the seasoning with salt and pepper. Ladle into bowls and top with shaved parmesan and croutons. Drizzle with olive oil.

3/4 pound Italian turkey sausage links, casings removed
1 medium onion, chopped
6 garlic cloves, minced
2 cans (14-1/2 ounces each) reduced-sodium chicken broth
1-3/4 cups water
1 can (14-1/2 ounces) diced tomatoes, undrained
1 package (9 ounces) refrigerated cheese tortellini
1 package (6 ounces) fresh baby spinach, coarsely chopped
2-1/4 teaspoons minced fresh basil or 3/4 teaspoon dried basil
1/4 teaspoon pepper
Dash crushed red pepper flakes
Shredded Parmesan cheese, optional

Steps:

  • Crumble sausage into a Dutch oven; add onion. Cook and stir over medium heat until meat is no longer pink. Add garlic; cook 1 minute longer. Stir in the broth, water and tomatoes. Bring to a boil., Add tortellini; return to a boil. Cook for 5-8 minutes or until almost tender, stirring occasionally. Reduce heat; add the spinach, basil, pepper and pepper flakes. Cook 2-3 minutes longer or until spinach is wilted and tortellini are tender. Serve with cheese if desired.Freeze option: Place individual portions of cooled soup in freezer containers and freeze. To use, partially thaw in refrigerator overnight. Heat through in a saucepan, stirring occasionally; add broth if necessary.

1 can diced tomato (or peeled, diced fresh)

2 medium carrots, chopped
1 bay leaf
2 tablespoons fresh basil
1 teaspoon fresh parsley
2 tablespoons fresh oregano

2 teaspoons good quality olive oil

2 tablespoons unsalted butter
1 small yellow onion, diced
4 cloves garlic, minced
¼ teaspoon red pepper flakes
½ teaspoon kosher salt
¼ teaspoon freshly ground black pepper
½ cup dry white wine
4 cups vegetable broth
1 can crushed tomato
1 McCormick® dried bay leaf
1 package cheese tortellini
1 container baby spinach
¼ cup heavy cream
½ cup freshly grated parmesan cheese, for garnish
¼ cup fresh basil leaves, for garnish

Steps:

  • Melt the olive oil and butter together in a Dutch oven over medium heat. Add the onion, garlic, red pepper flakes, salt, and pepper. Cook, stirring occasionally, until the onions are translucent and the garlic is fragrant, about 5 minutes.
  • Add the white wine and cook for another 2 minutes, scraping up any browned bits from the bottom of the pot with a wooden spoon, until the wine is reduced by at least half.
