These are great when the weather is hot and you don't feel like cooking. You can also stuff smaller cherry tomatoes with this mixture also, for some tasty appetizers when you feel like entertaining!

1 lb lump crabmeat
1/3 stalk celery, chopped fine
mayonnaise, to taste
1 tablespoon Old Bay Seasoning
1/4 cup lemon juice
4 fresh tomatoes
romaine lettuce leaf

Steps:

  • Mix the first 5 ingredients together well. Chill for at least 1 hours.
  • Hollow out the 4 lg. fresh tomatoes. Fill with crab mixture.
  • Serve atop fresh lettuce leaves.

8 ripe beefsteak - type tomatoes
+ choose filling below
1 cup cooked orzo pasta
1/4 cup diced tomato, from scooped out tomatoes
2 cloves garlic, minced
1 ounce feta, crumbled
1 ounce kalamata olives, sliced
1/4 cup rough breadcrumbs
1 tsp. oregano
1 Tbsp olive oil
1 cup crab meat, picked over for shells
1/2 cup rough breadcrumbs
1 clove garlic, minced
1 tsp dried thyme
1 Tbsp olive oil
salt and pepper
additional olive oil for drizzling, optional

Steps:

  • Preheat oven to 375°F.
  • With a serrated knife, slice the top of the tomato off and discard. Do not cut too much off, just the very top! Using a spoon, scoop out the tomato and reserve pulp if using. Season the inside of tomatoes with salt and pepper
  • Combine all ingredients for filling. Whether you choose the crab filling, or the orzo filling, the process is the same. Stuff all 8 tomatoes, drizzle tops with olive oil if desired and bake for 20 - 25 minutes.

8 vine ripened tomatoes
2 cups liquid egg substitute, well-shaken
2 tablespoons fresh dill, finely chopped
2 tablespoons red onions, finely chopped
1/4 teaspoon salt
1/4 teaspoon black pepper
1 tablespoon non-hydrogenated margarine or 1 tablespoon butter
1/3 cup smoked salmon, chopped
1 tablespoon capers, chopped
1/2 cup goat cheese, crumbled

Steps:

  • Preheat broiler. Slice the top off of each tomato. Hollow out each tomato, leaving a firm shell; reserve. (Discard the caps and pulp or reserve for another purpose).
  • Whisk the liquid eggs with the dill, onion, salt and pepper until well combined. Melt the margarine in a large, non-stick skillet and set over MEDIUM HEAT. Pour the egg mixture into the skillet. Cook, without stirring, for 1 minute. Cook, stirring frequently, for 2-3 minutes or until eggs are fluffy and almost set; remove from heat. Gently stir in the salmon and capers.
  • Scoop an equal portion of the egg mixture evenly into each hollowed tomato; place on a rimmed baking sheet. Sprinkle each tomato evenly with goat cheese. Broil for 2 to 3 minutes or until cheese is browned. Garnish with additional smoked salmon and dill (if using).

1 1/2 teaspoons extra-virgin olive oil
4 ounces fresh goat cheese
1 teaspoon chopped fresh marjoram or oregano
Coarse salt and ground pepper

Steps:

  • Heat broiler. Place tomatoes, stem side up, on a rimmed baking sheet and brush with oil. Broil just until skins blister, 1 minute. In a small bowl, lightly mash goat cheese and stir in marjoram. Season with salt and pepper. With a paring knife, cut a small opening in the top of each tomato; stuff with 1 teaspoon goat-cheese mixture.

1 (10 ounce) can diced tomatoes with green chile peppers, partially drained
½ cup dry bread crumbs
⅔ cup shredded Cheddar cheese
¼ pound smoked sausage, cut into 1 inch pieces

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • Cut the tops off of the tomatoes and use a knife to cut around the inside, separating the flesh from the skin. Scoop out the flesh. Place the tomatoes in a small baking dish. In a small bowl combine the canned tomatoes with the bread crumbs, 1/3 cup of cheese and the sausage; mix well. Spoon the mixture into the tomato skins and top with the remaining 1/3 cup of cheese.
  • Bake in preheated oven for 15 minutes.

One 8-ounce container fresh lump crabmeat
3 tablespoons olive oil
2 tablespoons red wine vinegar
1 tablespoon Dijon mustard
1 teaspoon sugar
1/4 teaspoon coarsely ground black pepper
1 medium-size head Boston lettuce
1/4 pound mixed baby greens
4 medium-size tomatoes
6 large eggs
1 tablespoon dry sherry
1/2 teaspoon salt
2 tablespoons salad oil

Steps:

  • Pick over crabmeat to remove any pieces of shell or cartilage. Set aside. 2. In large bowl, with wire whisk or fork, beat olive oil, vinegar, mustard, sugar, and pepper until mixture is blended. Tear Boston lettuce into dressing; add baby greens. Gently toss greens with dressing. 3. With tomatoes stem-end down, cut each tomato into 5 or 6 wedges, being careful not to cut all the way through. Line 4 dinner plates with tossed greens. Place a tomato on each salad plate. Spread tomato wedges open like a flower. 4. In medium bowl, beat eggs, sherry, and salt until blended. Stir in crabmeat, but do not break up into too fine pieces. 5. In nonstick 10-inch skillet over high heat, heat salad oil until very hot. Pour in crab mixture and cook, stirring quickly and constantly, until eggs are set. Spoon crab mixture into tomatoes.
