This recipe is a simple, flavorful dish served at room temperature. Fantastic! This dish will refrigerate well and is just as yummy the next day for lunch as a cold pasta salad!

Number Of Ingredients 9

2 cups diced tomatoes
1 small onion, finely chopped
6 tablespoons olive oil
2 cloves crushed garlic
6 leaves fresh basil, torn
10 ounces fusilli pasta
3 tablespoons grated Parmesan cheese, or to taste
1 ½ cups crumbled feta cheese
salt and ground black pepper to taste

Steps:

  • Stir tomatoes, onion, olive oil, garlic, and basil together in a bowl.
  • Bring a large pot of lightly salted water to a boil. Cook fusilli in the boiling water, stirring occasionally, until cooked through but firm to the bite, 12 minutes. Drain.
  • Toss warm pasta with feta cheese and Parmesan cheese in a large bowl. Stir tomato mixture into pasta and season with salt and pepper.

1 package (14-1/2 ounces) protein-enriched rotini (about 3-1/2 cups uncooked)
2 medium ripe avocados, peeled and pitted
1 cup fresh spinach
1/4 cup loosely packed basil leaves
2 garlic cloves, halved
2 tablespoons lime juice
1/2 teaspoon kosher salt
1/4 teaspoon coarsely ground pepper
1/3 cup olive oil
1 cup assorted cherry tomatoes, halved
1/2 cup pine nuts
Optional: shredded Parmesan cheese, shredded mozzarella cheese and grated lime zest

Steps:

  • Cook rotini according to package directions for al dente. Meanwhile, place avocados, spinach, basil, garlic, lime juice, salt and pepper in a food processor; pulse until chopped. Continue processing while gradually adding oil in a steady stream., Drain rotini; transfer to a large bowl. Add avocado mixture and tomatoes; toss to coat. Top with pine nuts and toppings of your choice.

LINGUINE WITH TOMATOES AND TOFU



Linguine With Tomatoes And Tofu image

Number Of Ingredients 9

12 ounces linguine
Salt
3 to 4 medium-large ripe tomatoes, about 2 pounds
3 tablespoons extra-virgin olive oil
3 large cloves garlic, sliced very thin
2 tablespoons drained capers
8 ounces firm tofu, in 1/2-inch dice
1 teaspoon hot red pepper flakes, or to taste
1/4 cup finely slivered fresh basil leaves

Steps:

  • Bring a large pot of water to a boil for the linguine. Toss in a teaspoon of salt.
  • While water is coming to a boil, core tomatoes, cut in eighths and pulse in a food processor until finely chopped. Transfer the chopped tomatoes to a colander suspended over a bowl so excess liquid can drain.
  • When the water is boiling, add the linguine and stir.
  • Heat two tablespoons of the oil in a saucepan, add the garlic and cook over medium-low heat until lightly browned. Remove from the heat and put in a large bowl. Stir in the drained tomatoes and capers and fold in the tofu. Season to taste with salt and hot red pepper flakes. The seasonings should be fairly assertive so they will not fade once the pasta is mixed in. Set aside.
  • When the linguine has cooked about seven minutes and is al dente, drain it in a colander, toss it with the remaining tablespoon of oil and add it to the bowl with the tomatoes. Add the basil and fold all the ingredients together. Check seasonings and serve while still warm.
