TOMATO JELL-O® SURPRISE



Tomato Jell-O® Surprise image

Stewed tomatoes never tasted so gooood. Add to a salad or use as a relish. You can serve with mayonnaise.

1 (14.5 ounce) can stewed tomatoes
1 (3 ounce) package lemon-flavored gelatin mix (such as Jell-O®)
½ teaspoon salt
1 tablespoon vinegar

Steps:

  • Pour tomatoes into a saucepan, saving the can to use as a mold. Bring to a boil over medium heat and stir lemon gelatin and salt into tomatoes until dissolved. Mix in vinegar. Pour the mixture into the empty tomato can and refrigerate until firmly set, at least 2 hours.
  • To serve, puncture a hole in the bottom of the can and dip can in warm water until the gelatin releases. Place onto a serving plate and cut in slices.

Great great aunt Jessie copied this one from a paper dated August 18, 1949. It sounds interesting and I may try it on a really hot day when cooking over a stove is not on my top ten "fun things to do" list.

6 tomatoes
3/4 cup cucumber, diced
1/2 cup cooked chicken, diced
1/4 cup nuts, chopped
1/4 cup mayonnaise
lettuce
parsley
cauliflower, buds

Steps:

  • Scald, peel and chill tomatoes.
  • Carefully scoop out the inside out of the tomatoes.
  • Remove the seeds from the pulp and chill all ingredients.
  • When ready to serve mix chicken, cucumber, tomato pulp and nuts with the mayo.
  • Add salt if needed.
  • Fill tomatoes and arrange on lettuce leaves.
  • Garnish with parsley and cauliflower buds.

1 large avocado, cut into cubes

  • Mix together juice, salt and olive oil; pour over top of veggies and stir.

CHERRY TOMATO SURPRISE

The surprise is the shrimp and cream cheese filling! This is a delicious appetizer! My own little creation ;)

75 medium size cherry tomatoes
THE FILLING
8 oz cream cheese, softened
1/2 c mayonnaise
1 bunch green onions, cut up to green, and cut very fine
2 can(s) shrimp

Steps:

  • 1. Prepare the cherry tomatoes. Wash well and dry. Make a straight cut to remove the stem end of the tomato. Then scoop out the seeds and pulp with the smallest spoon available. (I used a 1/8 tsp.)
  • 2. Turn all the tomatoes upside down, to let the juices drain. While the tomatoes are draining, prepare the filling.
  • 3. Mix cream cheese and mayonnaise together, until smooth. Add the green onions, mix well. Set aside.
  • 4. Drain the packing juice from the canned shrimp. Then soak the shrimp in ice water for 10 minutes. Pour off the water, and squeeze excess water from shrimp gently, and shred by hand.
  • 5. Add the shredded shrimp to the cream cheese mixture. Mix well.
  • 6. Generously fill each cherry tomato with the shrimp filling. Chill and serve! Enjoy!

When I read this recipe I knew I would like it. As it turns out, we ALL loved it (even my mother-in-law who is hard to impress!) The sweetness of the tomato and the creaminess of the cheeses is a perfect combination. You can bet I will be making these again!!

4 large tomatoes skin on sliced a little over an 1/2 inch thick
1/2 c ricotta cheese
1 c mozzarella cheese shredded
1/2 c parmesan cheese
1/4 c good mayonaise
salt and pepper to taste

Steps:

  • 1. PREHEAT OVEN TO 350 SLICE TOMATOES AND PLACE ON AN SPRAYED BAKING PAN(ONE WITH SIDES)SALT AND PEPPER TOMATOES TO TASTE. IN A BOWL MIX CHEESES AND MAYONAISE. PLACE ONE TEASPOON OF MIXTURE ON A SLICE OF TOMATOE. BAKE TILL BUBBLEY. AROUND 10 TO 15 MINUTES
  • 2. I USE THIS IN PLACE OF AN SALAD WHEN GRILLING STEAKS OR USE AS AN SIDE WITH A MEAL.
