MAMU'S CHUNKY TOMATO BASIL BISQUE SOUP
I experimented and utilized several versions to come up with this recipe. It is widely enjoyed by family and neighbors. I use only Muir Glen tomatoes because they are so rich and thick.

Steps:
- Saute the veggies in butter and olive oil combo until softened. Add tomato ingredients and spices. Simmer for 3 to 6 hours. Adjust thickness with more chicken broth or tomatoes.
- About 5-10 minutes before serving, add the cream and cream cheese.

INSTANT POT BACON TOMATO BISQUE SOUP RECIPE

Steps:
- Place butter, carrots, celery, minced onions and garlic into the instant pot and saute for 7-8 minutes.
- Add your diced tomatoes to the instant pot, as well as the chicken broth and spices.
- Add half the cream, stir, and let cook in the instant pot for 8 minutes.
- Once the pot comes to full pressure and completes the cook cycle, allow the Instant Pot to naturally release the pressure.
- Using an immersion blender, or food processor to puree the soup mixture to desired chunkiness. I like a medium puree.
- Add the remaining cream and stir in the bacon pieces.
- Top with green onions and sour cream if desired.

KETO TOMATO BISQUE SOUP
I absolutely love tomato bisque soup; it is one of my favorites! But I needed it to be keto friendly! So here is my version. I based this soup on the original recipe and video from Chef John called 'How to Make Tomato Bisque.'

Steps:
- Heat olive oil in a large pot over medium heat. Add onion, celery, garlic, and 1 pinch salt; cook and stir until onion is softened, 5 to 8 minutes. Add garlic; cook and stir until fragrant, about 1 minute.
- Pour chicken broth and crushed tomatoes into the pot with the onion mixture. Increase heat and bring to a simmer. Stir in paprika, cayenne pepper, and black pepper. Reduce heat to low; add shredded coconut. Simmer until vegetables are tender and soup is thickened, 35 to 45 minutes. Add sugar substitute.
- Remove soup from heat and blend in the pot using an immersion blender until smooth. Whisk in 1/2 cup heavy cream. Top each serving of soup with the remaining heavy cream and 1 teaspoon basil.

TOMATO BISQUE SOUP
Steps:
- Cut tomatoes into quarters. Toss in Olive Oil, garlic, shallots, basil, salt and pepper. Place on large baking sheet and roast @ 350 degrees for 45 minutes. In a soup pot add tomato paste and cook at medium-high heat until lightly brown. Deglaze with white wine. Add roasted tomatoes with juices, and heavy whipping cream. Cook at a simmer for 30 minutes, stirring frequently. Pour soup into blender and puree. Add chunks of butter slowly to incorporate. Pass pureed soup through fine mesh sieve. Finish by seasoning with salt and pepper to taste and garnishing with basil leaves.

- Sauté onion, dills, oregano in butter.
- Add flour, cook roux.
- Add tomatoes and (juice to equal stock amount) and stock.
- Salt & pepper.
- Bring to low boil.
- Reduce & simmer.
- Cook long enough to get rid of flour taste.
- Before serving, warm up the half & half and slowly add to hot mixture along with parsley and honey, low simmer (so it does not break to boil) and serve.

I love tomato soup and grilled cheese sandwiches...especially in the winter. Since my friend Eileen gave me this recipe, I no longer buy Campbell's Tomato soup because this is so much better!

- 1. Combine first 6 ingredients in large pan. Bring to a boil, then reduce heat and simmer, uncovered for 30 min.
- 2. In another medium pan melt butter and add the flour, blend and cook over medium heat. Stir constantly. Cook until bubbly. Add 4 cups of milk and bring to a simmer stirring constantly. Cook for 2 minutes then add to tomato mixture and blend and heat through. If you prefer this thinner, you could add more milk or a little half & half.
- 3. Serve with grilled cheese sandwiches or crackers. The consistence of this soup is so satisfying and filling.
ROASTED TOMATO BISQUE SOUP
We used sun-dried tomatoes and sun-dried tomato pasta sauce to play up the roasted plum tomatoes in this creamy bisque-style soup.

- Heat oven to 450°F.
- Combine all ingredients except half-and-half and pasta sauce; spread onto rimmed baking sheet sprayed with cooking spray.
- Bake 20 to 25 min. or until lightly browned.
- Blend 1 cup half-and-half and half the roasted tomato mixture in blender until smooth; pour into large saucepan. Repeat with remaining half-and-half and roasted tomato mixture.

COPYCAT PANERA TOMATO SOUP - TOMATO BISQUE SOUP
Copycat recipe for Panera Bread Creamy Tomato Soup

Steps:
- Put olive oil in a large stockpot over medium heat.
- Once hot, add onion, carrot, celery & garlic. Stir to coat with oil, then add salt, pepper, and pepper flakes(a pinch of each). Stir frequently until the veggies are lightly browned.
- Sprinkle the wheat flour over the veggies and stir to evenly coat.
- Pour in chicken stock and reseason with a pinch of salt, pepper, and pepper flakes.
- Add tomatoes, paste, leaves and sugar. Stir. Bring to a boil, then reduce to simmer and cover. Simmer for 15 minutes, then remove from burner and retrieve the bay leaves.
- Pour the mixture to a blender till 3/4 of the way full, and puree. Temporarily, pour puree into a bowl, while repeating the pureeing with remaining soup.
- Return all the soup to the pan and stir in the half & half. Turn burner on to medium, and cook for 5 minutes, stirring regularly.
- Give the tomato bisque a final seasoning, with salt & pepper and adding in the basil (to taste), Finally, stir in butter (and hot sauce, if you like) to taste.
- To Serve: Garnish with a dollop of sour cream, croutons, and fresh chopped parsley.
TOMATO BISQUE SOUP
This came from a cookbook called Riverside Cup of Tea. The recipes were prepared at a lovely restaurant which has since changed owners. My daughter worked as a waitress and my son worked in the kitchen at the restaurant under a very special lady who owned the restaurant and who taught her employees much about working in a restaurant with Christian values. We enjoy serving this at dinner parties as an appetizer and it is always enjoyed by all.
